"And do not gamble," Stannis ordered.
"I do not," Davos said. And then, conscientiously, "Not in company, since I joined your service, my lord; though at home we are rather freer with games of sticks and small coins. I would rather my sons knew the way of dicing from me, so they should not learn it at the edge of a charlatan's dirk."
Stannis frowned, passing judgement. Davos would have to tell this to Marya: she found it very amusing how Stannis liked to dispense high notions of conduct, for all she had still not quite forgiven him for Davos' lovely strong fingers.
"I suppose that is better, if they are like to be near such vices," he conceded, a little grudgingly. "Well I wish I could say they shall be pages and squires, perhaps, and have no need for a clear head; but pages are as terrible as any mason's son for gaming, and often more reckless, for having more money to spend. See that they are sensible lads, Davos, and they shall do you credit, if only be comparison."
Faint praise that was, but Davos knew what he meant by it. Three years with three long seasons in the Red Keep, managing his lord's household; he was starting to understand.
It had been foolishness to think poverty was enough to guess at the indifference of the highborn.
None of them cared for justice - not as Stannis did. They cared less, even, for their smallfolk; and paid no mind to the small ruffians in the port, the small hungry ship-boys very like the one Davos had been.
"Trust no one to be capable or interested in being capable to do their work, be sure they shall be greedy, and keep away from any excess."
His tone made it clear he did not grasp why this simple matter should prove so impossible a standard to his peers, and thought very little of them for it.
Davos hid a smile in the corner of his beard. His new lord was quick to sense any slight, and imagine many others; he did not trust mirth, when mirth came to stand by his side to keep him company during long balls.
Or at least to leave the festivities with him, when the feasting went on too long. The endless courses of sweetcakes and merenges decorated with the sweetest fruits from the Seven Kingdoms and Essos had soured Davos' own appetite.
He had eaten at similar tables, in the cabins of pirates, the worst thieves of the sea. This was no different. He had no tooth sweet enough for it now; his head ached behind his eyes when he ate too much indulgence, his body little used to it.
They left the stifling heat of the great hall to walk the battlements when the last round cheese wheels and small, rich wines and liquors were still being served.
Which was just as well: Davos had an urge, very unworthy, of squirreling away a slice or three, or a small jar of jam. He had to remind himself his sons ate well, now; that Marya grew rounder and redder and full of laughter, and not only ruled well their pantry, but shared their plenty with neighbors and dependents.
Quietly, in the privacy of his heart, Davos was quite determined that he should expect trust, and no derision, from one person at least.
A lofty goal, but as he was come to an unexpected windrush of good fortune, he thought he might have some luck in this endeavour, too.
Davos and his lord spoke long of honor and justice, these being the things dearest to Stannis' heart; moreover, Davos found it a matter of much interest.
His rise to knighthood, never expected, could not have been a stranger course for a smuggler. In those first years at Dragonstone, he went through his new duties and new life feeling keenly as a cabin-boy boy on his first voyage again - finding his feet when the swells of court life rose, keeping his head down and doing his best with the tasks given to him.
Always with a wary ear out, always certain of his disposability, his smallness to the engines of politics.
It rankled, more than he thought it would; for in his way he had been a man of some importance, ruler of his own crew, and well-respected, ship won with effort and cunning, while knights donned armour costing a spring's worth of ten families' work in the fields.
At least he had a new, good and stalwart captain to lead him through troubled waters. Davos grew ever more grateful for it, the more he came to know of the foibles of the kingdom's nobles.
"Honorable conduct is very simple, smuggler," Stannis told him. He turned his half-empty glass of lemon water between his palms - his wrists, narrow still, caught the silver light, too stark under his skin to be comfortable to look at long.
Davos did like to look at him, though. A fine sort of discomfort; he knew how to keep his feet and his head. So perhaps he was a gambling man still, in his way; though as honest a one as he could make himself become.
"And as you already do keep it, learning the ways of court shall be easier," Stannis added, in that stilted, stiff way, that was not a compliment in him but might have been in another man.
"I shall do my best, lord," Davos agreed. "If only by comparison."
Davos thought of him in the light of that moon, often, in years to follow, though he did not always know this was what he was thinking of in particular. The long cheeks framed by long lines, the dark curls starting to thin already - the young man with his unhappy mouth twitching, for a moment.

davos seaworth - he's not a man that adjusts that well (imo) but there's nothing about him that screams "can only exist in a vaguely medieval context"
quentyn martell - he's just so sweet, someone's gonna bump him on the street and not apologize and it's gonna cause a meltdown but it's okay because doran and oberyn are throwing a rager with good music and good food and he'll be fine when he just has some carbs

If any of the remaining starklings got any more parental figures/mentors, who could you see, for example I could see Howland Reed whenever he's introduced stepping into a fatherly role and/or mentor to bran considering already has a connection with the reeds
I also can see Howard Reed acting like a mentor to Bran! He's the one who send his children to Winterfell to be associated with him. Besides, as Ned's companion I'm sure he will appreciate all the parallels Bran shares with his father.
And while Jon is much older than Bran and doesn't really need a parental figure, I can see Howard Reed being fond of him. Not only he's Lyanna's son but also Howard spend a large amount of time with infant Jon when they were traveling from Dorne to the North.
If Brynden Tully survives ( which I hope he does) I can see him being protective of Cat's children. Among them, I'm most interested on his potential relationship with Arya. Blackfish seems to appreciate Catelyn's smarts and boldness and those are traits Arya also has. Can you imagine Blackfish teaching Arya how to use her sword properly?
Davos Seaworth is on a mission to find the youngest Stark, Rickon. Given Davos kind nature and the fact that he's a caring dad himself, I can see him growing a bond with the young orphan Rickon.
Not a parental figure because she's too young but once Brienne finds the Stark sisters I could see her acting like an older sister. Trying to protect them not only because she promised their mother but also because she can see herself on these younger girls who had to face the horrors of the world so early in their lives.
The day any of the Mormont ladies meet Arya Stark, they are gonna to adopt her to their family. Arya would have a great time on the Bear island and the Mormont ladies would love to have her there.

Like, the equivalent of bragging that she really knows how to dig a ditch or something?
Dig a ditch is going a bit far, but the fact that Lord Burrell thinks it’s something to brag about is kind of a sign of how the Borrells, by nature of the location of their lands, are effectively closer to (still prosperous, let’s not go crazy here) smallfolk than they would be on the mainland. It’s almost a bit nouveau riche, in that he’s bragging about something that people of his class are supposed to know not to talk about.
It reminds me a bit of Lynesse Hightower being out of synch with Bear Island’s culture - I imagine that, in a fiefdom like Bear Island, being a good cook would be considered a good thing for a noblewoman, because getting skilled staff is difficult and good food makes a big difference on a stormy winter night, whereas the rules are different in Oldtown.

Arya Stark is speaking with Ser Davos Seaworth. Her hair is loose, only twisted back from her face. It is the colour of walnut, and it curls at the ends unexpectedly. For a moment, he imagines her wanting to dance with him. But all he can picture is her spinning with a spear in her hand.
“You’d believe anything.”
“I heard she killed the Hound and Queen Cersei," says the Lady at their side, who seems to be entirely curved, the swell of her breasts threatening to spill over her gown.
The younger Lady nods vigorously, “I heard she means to kill our new Lord and make herself the Storm Queen.”
“I heard …” says the older one.

Well, for a start, while it is true that noblewomen would not be expected to perform most of the physical labour related to cooking, they were absolutely expected to know enough about food preparation to set and approve menus (especially if there were important visitors), to keep track of food stores, and to generally make sure everyone in the castle is properly fed.
In the case of Lord Borrell, he could absolutely find pride in his granddaughter being a great cook, given that he’s located in Sisterton and she would be working with limited resources. I think he could have bragged about that to Ned Stark and it wouldn’t have been embarrassing. Probably most of the northern lords and a number from the Vale, I imagine.

I imagine they would respect each other and work well as colleagues but they wouldn't be friends. Rodrik is (for lack of a better word) a nerd whereas Davos is more street-smart and practical.

Other than Stannis Baratheon and maybe various Starks, are there any nobles in particular who would likewise value Davos Seaworth’s brand of council?
Well, the thing about aristocrats is that as George Carlin once said "It's a big club and you ain't in it." They tend to look down on new members of the aristocracy as many think of Littlefinger when imagining nouveau riche houses, ambitious climbers trying to worm their way in. Nevermind that the lords themselves do this trying to marry up and secure positions at court.
Of course, that didn't stop Jaehaerys I from naming Barth Hand despite not just being common-born but not even ennobled. There are lords who can overlook birth for merit as Stannis did, and while I imagine Davos and Jon Snow getting along famously, whether other lords would value Davos depends on him no longer being attached to Stannis, since Davos isn't leaving him anytime soon. So I would imagine Stannis would have to be dead for Davos to seek new employment.
Jon Connington having worked with various bastards, exiles, former outlaws, foreigners and commoners in the Golden Company, would consider Davos for his experience as a naval commander, diplomat and Hand if he overlooked Davos having served the Baratheons since Robert's Rebellion. However, Connington wants to "end the Usurper's line for good and all" while Davos smuggled the Usurper's son to safety, and I imagine that the issue of killing kids would be a point of contention like it was with Stannis. Worse, if Aegon sided with Davos, or Davos earned his esteem, it would earn resentment from Connington.
Doran Martell who has a Norvoshi commoner Hotah as the captain of his guard might would likely value Davos's brand of council.
Jaime Lannister post-losing his hand would listen to his council, as would Tyrion but I doubt Davos would ever find himself working with anyone bearing the name Lannister.
I'm sure there are other lords I haven't mentioned who would value Davos's council.

Do you have any headcannons for the design and layout of the Seaworth keep on Cape Wrath?
Not until writing this, but let’s see what we can infer on this episode of Medieval Home and Gardening: Cape Wrath Edition.
The keep on Cape Wrath is described as small by both Davos and Cressen; however, the lands are called “choice”, there’s a forest with red deer to hunt. That’s possibly part of the Rainwood. However, as a man whose skill is sailing, and who taught his sons to sail, it’s very likely the keep is on the coast, possibly the southern coast/north coast of the Sea of Dorne (Stannis at least mentions passing Cape Wrath while sailing on the way to the Broken Arm of Dorne); of course, that area has traditionally been a naval battleground and is heavily fortified, as pirates from the Stepstones and Dornish raiders came to battle the Storm Kings.
A small keep surrounded by a forest with red deer, traditionally used as defense against invaders? That sounds like the coastal version of Queenscrown (Medieval Home and Gardening writeup here): a stout, functional tower built on either one of the red crags of Shipbreaker Bay (if situated more on the mountainous West Coast of the Cape) or on a high point of the coastal plain (if on the southern coast, which seems to be where the choicest lands are). It probably has the same low lintel and entryway with murder holes above it, as well as access to the roof where signal fires which would be lit in case of imminent invasion. The biggest difference from Queenscrown is of course ready access to the sea (and if I’m right about it being located on the south coast, likely access to roads connecting it to the fishing villages on the plain); the nearby sea/surrounding land would have to be calm enough for several galleons (Davos’ and his eldest sons) to dock safely, but there could be a secret water-way under the castle guarded by a portcullis/murder holes ala Storm’s End (though that might be too elaborate for what I imagine is a simple watchtower left abandoned in a time of relative peace until Stannis saw fit to grant it to Davos). The sea would definitely play a part in its defense/the way it’s built. A model for the layout might be the inner bailey of Corfe Castle, built on a hill on a peninsula near a forest in Southern England, which played a defensive role during several wars.
