First grill of the season: salmon and asparagus. And my first-ever attempt at Hollandaise sauce, which will get filed under #dobetternexttime. After comparing a bunch of recipes, I chose one with no double-boiler that promised to be easy. It was easy enough, and I did succeed in the emulsion without making scrambled eggs, but it wasn’t as thick as it should be. After dinner, I tried taking the sauce remaining in the mixing bowl, putting it over some simmering water and whisking. It thickened up nicely and I didn’t break the emulsion. This is what is called a "fail". Also known as a a "pinterest fail". BUT that is why it's called a "trial run". Problem 1: buttercream decided to just...die. Problem 2: Layer holding the flowers is WAY too big in both height and diameter. Problem 3: Moisture from the dead buttercream came through the ribbon...boo. Problem 4: Because the amount of space between each layer, the bottom one needs to be one size bigger. Luckily, I know exactly how to fix all these problems for the next run. I posted this because we all fail sometimes, but that's not going to stop me.
