गुंडरुक सूप की उत्पत्ति नेपाल में हुई है लेकिन सिक्किम के मुख्य खाद्य पदार्थों में से एक है। गुंडुक सूप एक किण्वित सब्जी का सूप है ज��� सरसों, गोभी या मूली के पत्तों से बनाया जाता है। सिक्किम के लोग इस व्यंजन को मिट्टी के बर्तन में बनाते हैं। सूप रौगे से भरपूर होता है और शरीर के चयापचय को बनाए रखने में मदद करता है।

सिंकी सूप

सिंकी सूप सिक्किम का एक पारंपरिक व्यंजन है, जो गुंडरुक सूप के समान ही है, लेकिन मूली के टपरूट से ही बनाया जाता है। मूली की इन जड़ों को काट कर भूसे से ढके छेद में डाल दिया जाता है। इसके बाद बैक्टीरिया अपनी क्रिया करने के लिए लगभग एक महीने तक वनस्पति और मिट्टी से ढके रहते हैं। फिर इसे धूप में सुखाया जाता है और एक साल तक स्टोर और सूप में इस्तेमाल करने के लिए रखा जा सकता है। इसे अचार के रूप में भी लगा सकते हैं और परांठे के साथ खा सकते हैं.
