what do they mean in journey to the west when they refer to 'unicorns'? Cause i'm pretty sure they don't mean what I picture when I hear the word unicorns.

Oh they mean Kirin which is like a dragon horse. Similar to unicorns so not too far off the idea of “horse with a horn.” Most likely just a translation choice to help connect to a more Western concept.
