its always really cool how i have health problems that affect my ability to work but in order to get those fixed i need to work to afford doctors appoints. but i cant work. becasue i need to go to the doctor

#this isnt like a Current Happening rn #well. like. well #the reasons i need to go to the doctor isnt affecting my ability to work rn at least #but im forever thinking about when i got covid and had a like 105degree feaver and in order not to get written up from work i had to #get a doctors note. and the doctors appointment for that cost an entire paychecks worth of money #just to miss. one day of work #<-like at the time i was only making 50dollars/week #but. still. #its a really cool system we have going where basically once every 2 months i have to accept taht im probably going to die from aliments #because i cant afford to go to the doctor #or i can afford 1 doctors visit but they dont take me seriously so i cant afford any more #really cool world we live in

Nonostante abbia finito anche stasera alle otto e mezza passate (sempre la presentazione che mi assorbe da qualche giorno...) almeno la cena non è stata un pensiero: il mio caro maritino ci ha portato un assortimento di assaggi vegan che sono stati molto apprezzati da tutta la famiglia! 🥑🥒🧅🍠🥜

I cuccioli sono crollati abbastanza in fretta (le ore piccole di ieri sera e i 20km in bici con la nonna hanno fatto effetto!) per cui mi sono dedicata ai 2kg di 🍓🍓🍓 comprate ieri l'altro e che già davano segni di cedimento!! 🙈

Non ero pronta ad adattare la solita ricetta a questa quantità e sfortunatamente mi sono ritrovata a corto di limoni 🍋!! E quindi di pectina naturale.. per ovviare ho aggiunto una mela 🍏

È stata l'occasione di provare lo zucchero integrale di cocco, sí proprio 🥥, ed è stata una piacevole scoperta il suo inebriante profumo.

Comunque, la prima fase della marmellata è conclusa speriamo che sia buona anche in questa versione .

Le proporzioni e gli ingredienti che uso sono questi:

🍓 1kg di fragole (o mirtilli o lamponi)

🍭 300/350g di zucchero

🍋 Il succo di un limone intero

Ovviamente si possono dimezzare le quantità e verranno circa due vasetti di marmellata.

Fragole e limone hanno già naturalmente un alto contenuto di pectina, per cui non è necessario aggiungere quella delle bustine.

Possibilmente è meglio lasciare per qualche ora la frutta tagliata a pezzetti a macerare con lo zucchero e il succo di limone, prima di procedere alla cottura; se si va di fretta si può tranquillamente saltare questo passaggio.

Si mette tutto sul fuoco e si lascia sobbollire (circa 40/50 minuti di cottura); quando si raggiungono i 105gradi C si spegne (se non si ha il termometro, ci si regola guardando la superficie, quando fa delle bollicine piccole piccole abbiamo raggiunto quella temperatura).

Volendo si lascia raffreddare e il giorno dopo si riporta a ebollizione e si invasa direttamente (in vasetti di vetro rigorosamente sterilizzati al momento, ancora bollenti sarà assicurato il sottovuoto), altrimenti si procede direttamente a invasare.

Correttamente chiusi ermeticamente e conservati al buio (basta avvolgerli nell'alluminio) si conservano a lungo, dopo 6 mesi è il momento migliore per gustare la nostra marmellata fatta in casa!!!! Almeno, così mi hanno detto.... Le mie non sono mai durate più di una settimana!!!!

Today is again midnight...

I worked again till 8,30 pm but luckily my sweet husband brought home a nice vegan dinner, very much appreciated by the whole family 🥑🥒🍠🥜

Kids went to bed relatively early so It was the good time to tackle those 2kg of strawberries blinking from the fridge since two days already.

I didn't have enough lemons 🍋, so I've added one apple, which naturally contains pectin like lemon.

The recipe I use is very simile and all natural:

🍓 1kg of strawberries (or blueberries or raspberries)

🍭 300/350g sugar

🍋 The juice of one lemon

By halving the quantities you will produce 2 jars.

Possibly it's better to leave the fruit (chopped in small pieces) macerate for a few hours, if you want to do faster you can cook them straight away.

Once you reach the 105degrees C (It will take approx. 40/50 Min) you can take out from the fire and either put directly in the jars (remind to sterilize them), or let It cool down, put in the fridge and boil again up to 105 C the day after.

Tightly closed the jam l'asta many months, they day it's perfect after 6 months... I don't know, mine usually last less than a week!!!!
