Idk if I solidified this but Ed is still of sound mind he just isn't very verbally communicative (partially due to getting kicked in the head by prey too many times) and his processing is still a bit slow. If he focuses REALLY hard enough he can speak, however he tends to get ahead of himself and his brain and mouth don't synch up very well so even then he'll only focus on getting a few words out but even then it more often than not comes out garbled or incoherent. Which is why he usually just foregoes speech.
