Well the @bbqindc is over and we did good, im always happy to take hardware home.This was our fist time here and it was hot as hell for 2 days!!!! There were alot of good teams and it was fun to see them all, we will definitely do it again next year. Stinco de cordeiro defumado é bom demais. A carne de cordeiro combina muito com defumação, é sucesso garantido . No caso do stinco, seu processo é relativamente simples, passamos o rub de cordeiro, defumamos por mais ou menos 3 horas a 120°C, e depois embalamos até bater 96°C a 98°C, lembrando que essa temperatura é para servir ele bem macio quase desmanchando. Na hora de embalar eu tenho um truque que faz toda a diferença, eu embalo ele com suco de limão espremido na hora. Quem já comeu sabe, o sabor do limão fica perfeito com o sabor do cordeiro e do rub. Pode fazer, não vai se arrepender. Você já fez carne de cordeiro defumada? Conta aí.
