In a large bowl, cream together the softened butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Stir in the vanilla extract.
Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.
Pour the batter into the prepared cake pan and bake for 25-30 minutes or until the center springs back when lightly touched, or when a matchstick inserted into the center comes out clean.

INGREDIENTI 4 uova 400 gr di yogurt bianco senza lattosio 80 gr di zucchero 80 gr di farina di riso Scorza di un limone Zucchero a velo . PROCEDIMENTO Dividiamo i tuorli dagli albumi e montiamo gli albumi a neve con le fruste elettriche. In una ciotola capiente montiamo con lo sbattitore elettrico i tuorli d'uovo con lo zucchero, per almeno 5 minuti, fino ad ottenere un composto chiaro e spumoso. Aggiungiamo ai tuorli montati lo yogurt senza lattosio, la farina di riso, la scorza di limone grattugiata e, con lo sbattitore alla velocità minima, lavoriamo fino ad amalgamare tutti gli ingredienti. Incorporiamo gli albumi montati a neve al composto di tuorli e yogurt, aiutandoci con una spatola, con movimenti dal basso verso l'alto fino ad ottenere un impasto ben amalgamato. Trasferiamo l'impasto in una tortiera, la mia ha diametro di 18 cm, rivestita da carta forno o in alternativa ben oliata e infarinata. Cuociamo la torta in forno statico preriscaldato a 180° per 35 minuti.
