Sakura, or more commonly called Cherry blossoms is the national flower of Japan. When I see pictures of the trees bearing these flowers in full bloom, it makes me wanna go to Japan right away. Zucchini Avocado Zoodles w/Pesto

When I bought a spiralizer last year, I looked at a variety of options, ranging from $9 for a handheld model that seemed flimsy, to something over $150, the size of a Mini Cooper. That appears to be a fine option if your spiralized dishes need to feed 700 people. And, you also have room in your kitchen for a Mini Cooper :)

If your noodle game is a bit more low-key, I’ll suggest what I bought: The Gefu Spirelli, for $19.99. Given that I wasn’t sure if I’d even like my vegetables parading as noodles, this seemed a good starter option. And it is.

In my previous post, I made zucchini noodles with classic marinara. Also super tasty. But I really wanted to explore new ways to enjoy zucchini noodles. I’m a pesto fan. So I decided to add some of my favorite things, for a new take on pesto.

Classic Pesto is a simple, quick dish. Part of what makes it so delicious is its simplicity: Strong, harmonious flavors don’t need a major assist, in the spice dept. This recipe stays true to that, and you can make it in under 20 minutes. So on those nights when you get home at 8 pm and want to cook, but don’t want to be eating dinner at 10:30, it’s a great solution.

Also, AVOCADOS. Can they ever go wrong? Definitely not in this. Trust. Here’s what you need:

• 2-3 large zucchini • 2 ripe avocados • 1.5 tbsp olive oil • 1 ¼ cups fresh basil leaves • 3-4 cloves garlic: Depends on how garlic-ky you like it. Adapt accordingly! • ¼ cup of marcona almonds: You can use pine nuts, as with classic pesto? But Spanish/Marcona almonds have a rich flavor that works well, too. I used Trader Joe’s Marcona almonds with truffled sea salt. Recommend! • 2 tbsp fresh lemon juice • ¼ cup olive oil • Fresh cracked pepper • Sea salt, to taste: If you use the truffled sea salt Marcona almonds suggested, or any that are salted, taste this before adding more salt. Not a big salt fan myself, so a little shake was just enough, along with the saltiness from the nuts. • Fresh, shaved Parmesan cheese

Use your spiralizer to make the zucchini ribbons. You can eat these raw, but I personally like them slightly steamed. They’re more noodle-like. But if you’re a raw food fan, they’re just as tasty cold, too!

If you want to steam them, the quickest way is add them to a microwave safe bowl and cook on 50% power for 1minute. Then test them, to see if they need more time. As with actual noodles, err on the side of undercooking. You can always add time, but you can’t take it back. And there’s nothing’s worse than mushy, overcooked veggies or noodles!

Add avocados, garlic, nuts, basil, lemon juice and pepper to a mini-prep or food processor, pulse until combined, and creamy. Add olive oil, pulse again.

Put your zucchini noodles in a bowl and toss them with the pesto mixture. Season with pepper, if necessary. Add a little shaved parm. Take a picture. Seriously, is this not the most photogenic dish? :)
