Happy Thanksgiving! Didn’t want to make a turkey for 20 during the smaller gatherings, so changed it up this year to Cornish Game Hens. Rubbed the hens with a garlic, nutmeg, all spice, and thyme paste. Gave them a little seat to crisp the skin. Stuffed them with celery and onion. Cooked them in the smoker for about an hour until they were ready. Served up with green beans, mashed potatoes with gravy from the drippings (rue made with rice flour, due to kiddos wheat allergy - came out great), honey glazed ham, and sweet potato casserole.
