โข 250g plain flour
โข 70g icing sugar, plus about 2 tbsp for dusting
โข 8g vanilla sugar, or 8g caster sugar plus 1 tsp vanilla extract
โข 1 tsp lemon zest
โข 150g butter, cut into cubes
โข 2 egg yolks
โข 100g redcurrant jelly (or raspberry jam)

STEP 1
For the shortcrust pastry, sift the flour and icing sugar into a mixing bowl. Add the vanilla sugar, lemon zest and a pinch of salt. Rub the butter into the flour mixture until it is incorporated and then mix in egg yolks. Knead everything into a compact smooth dough. Wrap the dough and chill it for 1 hour.
STEP 2
Remove the dough from the fridge and bring it to room temperature for 10 minutes. Form the dough into a long roll and divide it into 60 equal portions. Form a small ball from each portion and place it on a baking sheet covered with baking parchment (you will need two or more sheets). Press a dip (for the jam) into each ball with the handle of a wooden spoon.
STEP 3
Heat the oven to 200C/fan 180C/gas 6. Heat the jelly or jam in a saucepan until it melts. Use a spoon to fill the dips in the dough balls.
STEP 4
Bake for 12-15 minutes, then allow to cool completely. Finally, dust the cookies with some icing sugar.

Like all good things, summer (and all its barbecues and beach days) must come to an end. Going back to school is all early alarm clocks, homework and routine and I feel like the summer past in a blink of an eye.
We've sorted out the new school shoes - bought from clarks of course, bags and uniforms all good to go.

Ever wonder why June is pride month? This history lessons starts with the Stonewall Riots.
The story unfolds in the late 1960s, a time when LGBTQ+ individuals faced rampant discrimination and social stigma. In the midst of these challenging circumstances, a sanctuary emergedโa place called the Stonewall Inn in New York Cityโs Greenwich Village. This bar became a refuge for queer individuals, offering a sense of belonging in a world that often denied them their true selves.
In the early hours of June 28, 1969, a monumental event unfolded. Fueled by a shared desire for liberation and justice, the patrons of the Stonewall Inn fought back against a police raid, refusing to be silenced any longer. The ensuing days of protest, known as the Stonewall Riots, marked a turning point in the LGBTQ+ rights movement.
Pride Rises from the Ashes: In the wake of the Stonewall Riots, LGBTQ+ communities across the United States felt a renewed sense of resilience and determination. The following year, on the anniversary of the riots, the first Pride parades were organized in various cities.
These parades served as a poignant reminder of the power of unity and a testament to the unwavering spirit of the LGBTQ+ community.
In 1978, the iconic rainbow flag, designed by artist Gilbert Baker, unfurled its vibrant hues at the San Francisco Pride parade.
This flag became a universal symbol of Pride, representing the beautiful diversity within the LGBTQ+ community and the compassion that binds us all together.
The beautiful thing about the LGBTQ+ community is its rich diversity. Itโs important to keep in mind that not everyone within the LGBTQ+ community will identify with all the terms we commonly associate with it.
Each personโs journey is different, and we should respect and honor their self-identified pronouns and identities.
Create inclusive space where everyone feels seen, heard, and respected for who they truly are. Letโs celebrate the uniqueness of each individual and use the terms they prefer, spreading pride month memes, love, compassion and understanding along the way.

Some people are d*ck heads. Some people act like d*ck heads. There are d*ck heads everywhere.
Begin with acceptance. I donโt mean condoning their behavior or being somebodyโs doormat. Acceptance here means acknowledging that this sort of thing happens in our world. People act unfairly. Drivers do ignorant things. Co-workers upset us. Some parents are judgey. Much of the struggle that gets us stuck after these encounters is our insistence that weย canโt believeย they did that. Release this resistance when you notice it. Try saying instead, "Sometimes people are like that.โ
Most of the time when weโre caught off guard by d*ck heads, we later think of a perfectly devastating comeback that we feel sure would have put the other person in their place. However, our fantasies about how things could have gone probably arenโt realistic.
In my experience, obnoxious people are incredibly skilled at deflecting comebacks and turning them back on their source. They probably have a lot more practice than you do at being a d*ckhead, so theyโre better at it. Itโs fun to imagine having the last word, but most likely we wouldnโt have the satisfaction we imagine. For this reason, we can let go of regret and accept that weโre just not that skilled at being unkind.
Being treated badly can lead to a sort of โmeta-irritationโ -- being upset about being upset. We might know itโs pointless to keep dwelling on the incident but we keep replaying it. The more we try to force ourselves to stop thinking about it, the more it intrudes on our awareness.
Rather than fighting what the mind is doing, shift your perspective. No matter what youโre thinking or feeling, take a half-step back and observe it. Notice what experience youโre having -- the physical sensations in your body, the effects on your breathing, the thoughts going through your mind. Watch the anger and rumination, rather than completely identifying with them.
You might believe implicitly that other people determine your happiness: If they treat you well, you feel content; if they donโt, you feel upset. But in truth, othersโ behavior is only ever about them, and our well-being doesnโt have to depend on what they do.

To mark the fact we are now on the 2nd December (ew) here's a flash back Friday of our first Christmas as a family of 4!
Not sure how willing the kids would be this year to wear matching pyjamas and go to a crib service together - my now tweenager may burn up a church with her scowls of disdain at being around people singing ๐
Since this photo, the past 5 years we've all changed so much but also stayed the same in many ways. First up, all 5 years older (ew) and secondly, still together, still making it through. Survived Lockdowns together, we've all each had coronavirus and made it through, Trix has started Secondary School, Winnie started Primary school this year, there's more but it's early morning and I'm 100% sure no one can be bothered to read my rants at 8am on a Friday morning when all everyone wants to do is make it through the day and get to their jammies and hot coco - unless you're one of those social humans and you're going to get dressed up tonight, hit the down and down those margaritas ๐น
To summarise though - my kids laugh at me for my love of photographs and videos but for me, time moves so fast, we grow so fast and sometimes all we've got is those nostalgic passing moments. The times we were going through it, oh my days newborn a newborn baby and 2 other kids as a single parent is HARD, literally some days I questioned (still question) if I'm up for this mammoth task - but I look back on this photo and it's one of my happiest memories (I sound so clichรฉ)

Carefully separate the Easter egg in half along the seam. (Use a knife dipped into a bowl of hot water to cut through the seam rather than slicing, as it may break the chocolate.)

Tip the digestive biscuits into a bowl or food bag and bash to crumbs with the end of a rolling pin. Stir in the melted butter until the mixture resembles damp sand. Spoon this into the Easter egg halves and pack down gently using the back of the spoon. Chill until needed.

Mix the mascarpone, soft cheese, icing sugar, chocolate spread and cocoa together in a medium bowl with a wooden spoon until smooth. In a separate bowl, beat the double cream to soft peaks using an electric whisk. Gently fold the whipped cream into the mascarpone mixture, then carefully spoon the cheesecake filling over the chilled biscuit bases in the Easter eggs. Gently level the surfaces with a palette knife or spatula, then chill for at least 2 hrs or overnight until firm and set.
You may be left with extra cheesecake filling, depending on the size of your Easter eggs โ this can be spooned into glasses over extra digestive crumbs for another treat.

Scatter the set cheesecake-filled eggs with mini chocolate eggs or other Easter treats, then drizzle with caramel or melted chocolate to serve.
