This scene reminds me of the 2x09 "you're not alone syd" moment. Really, everything reminds me of the table moment. But when he tells Sydney she's not alone, it's a feeling that's followed Carmy since season 1.
And it seems that Carmy and Claire's relationship was written to capture the feeling of being with someone yet still feeling alone, and this feeling is all too familiar to Carmy.
In episode 2x09, Carmy recognized that familiar feeling in Sydney. He maybe realized that he had made her feel lonely in the last few months, and now he could see that loneliness written all over her that he needs to heal it, reassure her, captures her worries and make it his own.

It's like acceptance, desire, and deep connection just washes all over them!

I got a brain rot and it's a Syd and Pete Paralell in 1x04 Dogs
Jimmy and Richie label Pete a Narc.
In the next scene, Syd corrects Tina on how to prep the potatoes Tina mumbles, judgemental.
Syd gives Tina positive feedback on the potatoes
Pete praises Carmy.
Pete and Sydney are outsiders to the Berzattos- I'll consider Tina a Berzatto at this point. They're not jaded and give honest words of encouragement.
This new way of being affects Carmy and Tina. Carmy does not yell at Pete, he does not look at him with disdain, he even laughs at an awkward joke. This tells us Carmy is changing and he's more open to someone like Pete- someone who seems functional (sydney).
Tina is the opposite, she challenges Sydney at the beginning but by the end of the episode- despite Tina's behavior Syd still gives Tina praise and this results in TIna getting emotional because like Carmy Tina is finally seen.
Oh, and this is what it is- Sydney and Pete really see people, they see the good in Carmy and remind him of who he is, and they give him kindness and reassurance.
This is a quick rant but that's how I see the episode- not sure if this was intentional by Storer.

If yall watch “The Bear” properly yall would understand this post..”The Bear” is bigger than a cheesy make believe relationship between the two main characters.
In all reality Carmy was not ready to open up a restaurant. Carmy is not healed from his New York trauma or Mickey’s death. Carmy have not decided anything in his life and Sydney came in his life and took over. Carmy would never tell her “No” he heard how hurt she was from losing her catering business. So Carmy thought opening up a restaurant with Sydney would be good but it’s not! That’s why he was locked in the freezer on his opening night. Carmy is not ready he does not know how to balance work, love, family & friends! Carmy cut his family out of his life for 5 yrs as he got better in the kitchen he don’t know how to give ppl equal time in his life. Sydney put her own anxieties and failures on Carmy. Carmy needs therapy as does Sydney also. They are using each other as clutches and it will never work. They are not secretly in love either. They are two adults who are using cooking to mask the anxieties in their lives.
Carmy think if he does good in the restaurant business that would repair what he lost when Mickey died. But it won’t and Sydney is not a good CDC or #2. She is selfish and she forces Carmy to do what she wants! Carmy was always saying “I’m sorry” to Sydney and he doesn’t be at fault half the time. Smh I want Carmy to heal from his childhood drama and his anxieties. He deserves the world others put the trauma in him.
But Sydney and Carmy need therapy if they’re going to stay working together. Adding romantic love will destroy them cause their minds are not strong.
