INGREDIENTS 8 oz. bacon 12 mushrooms 2 tbsp butter 9 oz. (1¼ cups) cream cheese 3 tbsp fresh chives, finely chopped 1 tsp paprika powder salt and pepper
INSTRUCTIONS 1. Preheat the oven to 400°F (200°C). Grease a medium-sized baking dish with butter. 2 Start by frying the bacon until really crispy. Let cool and crush into crumbs. Save the bacon fat. Remove the mushroom stems and chop them finely. Sauté in the bacon fat, adding butter if needed. 3. Place the mushrooms in the greased baking dish. In a bowl, mix the crumbled bacon with the fried, chopped mushroom stems and the remaining ingredients. Add some of the mixes to each mushroom. 4. Bake for 25-30 minutes or until the mushrooms turn golden brown.

INGREDIENTS
2 tbsp sour cream
1 tbsp mayonnaise
1 tsp Dijon mustard
2 tsp fresh chives or dried chives (save some for garnish)
5 oz. zucchini, diced
1½ oz. (62⁄3 tbsp) celery stalks, diced
salt and ground black pepper
INSTRUCTIONS
1.Mix together all ingredients except for the roast beef in a bowl. Season with salt and pepper to taste.
2.Sprinkle with some chives on top as a garnish before serving.
Tip
If you have extra ingredients, like zucchini or celery, chop them up and freeze them for future recipes, like soups, stews, or omelets.
