I believe the reason why ZoLu is so appealing in Zoro's POV is 'cause he just doesn't seem like the guy who would do all that for a person. This is inspired by what Mihawk said about him—but we're paraphrasing (in 3rd person).

It isn't typical for a man like Zoro to throw away his life and his dreams for another.

What's significant about Zoro bowing to Mihawk, is that it is, in a way, a stripping of his pride as someone who sees Mihawk as his rival and final goal, to become the greatest swordsman. But then, there he was, BEGGING the man to teach him, because he wants to be stronger for his captain.

This makes me think that out of all the characters in one piece, it's Mihawk who's truly aware of the extent to Zoro's devotion and loyalty to Luffy. It's why even the male hets can't deny his out-of-this-world dedication to his captain. He is in love with him. It doesn't matter what kind, a random person can take a look at how Zoro treats Luffy and that would be their immediate conclusion.
