Obviously ancestral hunter-gatherers weren't doing much baking. Yesterday, June 14th was my birthday, as you all know it was also Flag Day here in the U.S.A.  Growing up my Mother always made me a Flag cake and Flag cupcakes for school and my birthday parties.  It was great and always brings a smile to my face thinking about all the time and effort she put in to making my day special.  Of course in the 1970’s and 1980’s when my mom was making cakes the ingredients were heavy chocolate or vanilla cake with thick and sugary butter cream frosting.  Don’t get me wrong, it was absolutely delicious and a kids dream!  Now when I make cakes in the summer for my kids, I make them a little lighter and utilize fresh whipped cream and seasonal berries….

Flag Cake 1970’s

I haven’t made an actual “Flag Cake”, but my daughter’s birthday is in July so I do make a light cake usually a Jello cake and utilize summer berries such as strawberries, blueberries and raspberries.  Rather than frosting, I’ll make real whipped cream lightly sweetened (you need white sugar to make a good bday cake. There’s no avoiding it).  Sometimes I’ll make a powdered sugar glaze with lemon and lime juice.  It depends on the flavor I’m going for.  

 Jello Cake

Prepare cake batter and bake as directed on package for 13×9-inch pan. Cool cake in pan 15 min. …  Poke holes in the cake with a fork. Using a box cake is fine, but if you have a good cake recipe, homeade is always better. (That’s just my opinion)

Add boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved. Stir in cold water; pour over cake. …

 Refrigerate at least 1 hour.

Frost with real whipped cream or cool whip.

Decorate with fresh berries or fruit of choice.

I’ve gotten great feedback from not only my children, but their friends too.  They love the fresh fruit with the whipped cream.  When I’ve made cupcakes, a lot of the kids will actually lick the cream & fruit off the top and barely finish the cake.  Go figure.  Once I started noticing that, I always make sure I have a huge bowl of fruit salad with fresh whip cream on the side.  The kids tend to go for that as their seconds.  

It has been a really long time since I’ve had an actual cake, let alone a flag cake, on my birthday.  Not because everyone forgets, but because those are my wishes.  Cake is not a must have for me.  My husband and son are experimenting this weekend and making me a beet pie.  I can’t wait.  That’s right up my alley in the treat department.  The fact that my family is healthy and happy, I couldn’t ask for a better birthday present.
