I don’t know if I will survive this.
Xiao Qing meets with her father and he thinks she’s Furong (Xiao Qing’s mother). He hugs her and promises to never leave her again. But Xiao Qing pushes him away and tells him he has no right to call her mother’s name. There’s no time for this Xiao Qing. You have to save Suzhen. He then tells her she has no place in this palace. She promises this is the last time she ever comes to see and steal the artefact.
Okay I am so stressed out that I have to pause the episode every thirty seconds. I am so afraid that something bad will happen. I need a happy ending. I don’t care if it’s not satisfactory. I just want a happy ending.
Seeing Suzhen having so much trouble fighting Fahai... no... Xu Xian... I hope he doesn’t lose it to the demon.
THANK GOD XIAO QING CAME. But... what? It’s not helping at all. That thing she brought is just going to flood everything. That’s of no use...
Fahai tells Suzhen that Xu Xian became one with the inner demon and that this is choice, why won’t she respect his choice. Fahai begs her, she can even kill her after if she wants,  but That’s Xu Xian’s choice.
Omg. Suzhen, don’t you think about Jiaorong and Gongfu? Do you want them to die too?
the immortals come to punish the demons and Xu Xian, to protect Suzhen says it’s him. He’s the one causing trouble. No. I can’t. This is torture. He gets struck by lightning. Suzhen rushes to him, she also gets struck by lightning and she begs for forgiveness, hadn’t she fallen in love with him and tried to be with him, he wouldn’t be hurt like this. But he says his biggest happiness in this life was  to meet her.
Okay... so it looks like they are both going to die together, which would be really sad, but at least an ending in which they would be together and I would like that. However, just then, she’s about to give birth. Wow. That’s a little early. Anyways, seeing that the baby is an immortal going down for a mortal trial, the other immortals leave. And it seems that because he was struck by lightning, Xu xian’s okay? Well, all of this is weird.
Then Xiao Qing’s father come and wants to punish Suzhen. But Xiao Qing is like, no! If you want to kill somebody, kill me instead. She cuts her wrist. Suzhen rushes. And Then. Wow. Guanyin herself comes again. She pushes the water away with spraying little bubbles. Suzhen acknowledges her wrongdoings and is willing to pay with her life. But then, Xu  Xian won’t, he says he’ll take the punishment for her, in this life and in the next too.
Wow. It ends being Xiao Qing’s dad asking for punishment seeing the love between Suzhen and Xu Xian. What the hell? how weird is this? Can we know if Xu Xian and Suzhen can stay together? I don’t really about the rest. I need that stress off my chest and there’s like... 26 minutes left to the episode. I can’t stand it for that long.
Okay, so Suzhen is sent to read the rites inside Leifeng pagoda and she won’t be able to go out. Xu Xian runs after her but he can’t be with her.
Xiao Qing’s dad wants to take her back with him. Xiao Qing though blames herself that Suzhen and Xu Xian are forced to be apart. She promised to go cultivate with Guanyin until the Leifeng pagoda falls down. Then, she will come back.
I am so heart broken. Honestly. They never truly got to be together. And now Xu Xian is leaving his baby behind in Jiaorong’s care. I mean, I understand he’s all sad and all, but shouldn’t he at least take care of the baby? That’s what Suzhen would want...
Anyways, years goes by and Shilin is a really filial son. On his birthday, his cousin Bilian comes to send him some noodles, but he only thinks of his mother being alone.
Wow. Suzhen and Xu Xian’s son. As he hears that Suzhen is stuck in Leifeng Pagoda until the tower falls down and the West Lake dries up, he decides to go destroy the tower and empty the West Lake by himself. Such a filial son. When Jiaorong tries to stop him, he says that’s like the story of Yu Gong who wanted to move a mountain and even if it seemed impossible at first, he succeeded.  For those who don’t know, it’s a Chinese idiom which means that when there’s a will,  there’s a way. People were thinking that Yu Gong was stupid for trying to move the mountain, but he did it anyways. Bilian offers to help and then many town’s people also decide to give him a hand because they remember how Suzhen and Xu Xian helped them so much.
Wow. So Bilian and Shilin are in love? They are cousin... I am a little uncomfortable with that... Anyways, Shilin studies to pass the imperial exams. And he manages to. He holds the ceremony near the West Lake and asks for his mother to come out. Then a dragon comes out and sucks the water of the lake. It’s Xiao Qing. The tower slowly falls down. Suzhen finally comes out.
And when Xu Xian comes back, she’s right there waiting for him at the pier. And they hold hands. And the end.
This is... Well, the ending seems a little bit rushed, but I am happy with it knowing that they can  resume their life together. Thanks to their son. I just wish they had a little more happy moments together.
And I must say... the last episodes were just so stressful for me. It tired me out so much. I am going to miss this drama, I really liked Xu Xian and Xiao Qing, but I am glad I am done with it. Too much stress for me TT Too much heartbreak too. People get close to dying way too often. I am glad I spent the time though to watch this! Thanks for reading!

I kept hoping (early on in the show) that Ruyi would get some character development. Possibly after that emotionally traumatic event that happens in the beginning. BUT NO. SHE’S STILL THE SAME SELFISH IMMATURE B*TCH THAT CAN THINK OF NOTHING BUT HANWEN, AND HOW HE HAS TO BE HER MAN.

Time for Archer/post Clocktower Shirou headcanon!
At one point, either during one of his vacations at the Clock Tower or soon after he left, Shirou went to China to study Jingluo.  It is a concept of traditional Chinese medicine that studies the paths throughout the “Qi” energy flows, known as “Od” among the western mages. It is slightly different from the mana , as it is around the life-force itself. With this knowledge, Shirou is able to use the structural analysis aspect of his magecraft on the human body far more efficiently.

Archer displayed this knowledge during the UBW route when assisting Shirou with his magic circuits and when knocking Rin out during the kidnapping. Archer Alter also displays this knowledge during the Se.Ra.Ph. event.

He also picked a few other knowledge, like a few Bajiquan techniques to be used in conjunction with his Projections or if momentarily disarmed for some reason; and Gongfu Cha techniques for preparing the perfect tea, along with techniques like the gaiwan (also known as zhong). Shirou also studied a few concept of Chinese aesthetics, Zen, Confucianism and Taoism, understanding better the concepts of Chinese blacksmiths such as Gan Jiang and Mo Ye.
Another instance in which Archer displays his knowledge on Jingluo and Bajiquan is when he faces Li Shuwen in Fate/Extra, his training on the later allowed him to dodge enough a surprise attack in the Arena that could have been fatal, along with his own Mind’s Eye. And thanks to his knowledge on the former he could tell the exact effect it was having on his magic circuits.

Gongfu Cha or Chinese Tea Ceremony

In the western tea community you don’t very often hear of gongfu brewing. Often in western tea this type of brewing in practiced by purists or traditional tea drinkers. But what is gongfu brewing?
Gongfu brewing is one of the oldest methods of preparing high quality loose leaf teas. It is believed to have originated in China around the 18th century. Where exactly it began has been up for debate by scholars for some time. Some believe it originated in the Fujian province of China while others believe it originated in Guangdong, China.
This method of brewing is an art form that many tea masters have studied for years to perfect. The goal with gongfu cha is to extract the best and purest flavor possible. This method of brewing not only allows you to properly taste the full essence of the tea but also to taste it over a number of infusion. This allows you to get a sense of how the flavor of the tea changes over each infusion. One of the biggest differences between western brewing and gongfu brewing lies in the amount of tea used. Western brewing goes by the rule of using less tea, and steeping it longer over a single infusion. Gongfu on the other hand goes by the rule of using more tea, steeping for only a few seconds, and steeping again over numerous infusion.
As with any kind of brewing, water quality and temperature play a major key roll in extracting the best flavor of your tea. When using this brewing method, you should avoid using highly filtered waters or distilled waters, as these types of water produce a flat brew. Locally sourced or bottle spring water is preferred as it is said that the minerals of the water aid in producing a better brew.
Water temperature is also a major factor in gongfu brewing as using too high of a temperature can harm delicate teas and therefore produce a bitter brew. At the same time using too low of a temperature can also cause a weak tasting brew. See my recent Tea Newbie blog regarding water temperatures as an aid.
The other thing you will find in gongfu brewing is several additional tools not commonly found in western brewing. Along with this the brewing vessel and cups used are of much smaller size. I will be making blogs in the coming days about the reason for the difference in size as well as all the tools used in gongfu cha and the purpose they serve.

Night Wanderer (夜旅人) - Upcoming Chinese Drama

"Night Wanderer" is a fantasy love drama that travels through time and space, based on the novel with the same name by author Zhao Xizhi. On the summer night of Shanghai in 2021, Zong Ying, a forensic expert, bumped into an unexpected visitor named Sheng Qing Rang at home. He said that he was also the owner of the apartment No. 699. He came to modern times every night from 1937, and then went back to his era in the early morning. Zong Ying, who has always been rational, thought it was nonsense, but when Sheng Qing Rang disappeared in front of her, she had to begin to accept this fact. From the accident at the beginning to the initiative later, with Zong Ying and Sheng Qing Rang going back and forth between two eras, the two people with emotional restraint gradually changed from friends to confidants and finally lovers in the storm of self and family, peace and war. 
However, with the outbreak of the Battle of Shanghai, Sheng Qing Rang’s future is overshadowed by death, and staying together has become an unattainable luxury. Zong Ying was not afraid of life and death, and was determined to face the doomed history with Sheng Qing Rang. In the flames of war, two people who do not belong to the same time and space become the most important footnotes in each other's lives.

What makes this drama interesting is they play through the unique setting of two time and space that can communicate in both directions (Republic of China era and modern era), so that two people who have been forgotten by love are tightly intertwined. Under the dual-line parallel narrative rhythm, Sheng Qing Rang and Zong Ying's mutual redemptive love is romantically presented in the long river of years. A lot of the places that appeared in the original novel actually exist in real life and the place is still exist until nowadays such as the apartment No. 699.

What's princess Iron fan the goddess of?? I wanna know her origins. From her childhood to how she met Ox king.
She’s known as both Iron Fan Goddess and Goddess of HuoYan Shan (translates basically to Fire Flame Mountain? there’s probably a better translation but I’m going off my own knowledge)! 
She’s not so much a goddess as in a “proper” celestial one, but rather she’s made the villagers living near HuoYan Shan yield to her and offer her food and stuff like a goddess. Unfortunately, not much is known about Iron Fan Princess ): All that’s really known is that she married Bull Demon King and is Red Boy’s mom. It’s mentioned that she achieved immortality but doesn’t really go into specifics. Most people assume she’s a demon or spirit who cultivated Daoism, like Wukong!
But… If you wanna know my personal interpretation, I’ll put headcanons *fingerguns* under the cut cuz I don’t wanna clog up anyone’s dash.
Inherited the Bajiao Fan from her mother
Wanna say her mom was a really powerful immortal who was gifted the Bajiao Fan by some god
But then her mom screwed up somehow (minor? major? i dunno Heaven wanted to stab Wujing everyday cuz he broke a lamp) and Heaven was like, “oof now when you have a child, they’ll be a demon”
Has had formal combat training focusing on swords, also has hella strong nei li (inner strength) and gongfu
Was classmates with Bull Demon, studied and cultivated Daoism under the same sifu together
Probably was also a strong, powerful, and respected force among demons, Wu Cheng’en was just blinded by Confucianism and that’s the tea :/
She’s probably already established herself as the Goddess of HuoYan Shan before even meeting Wukong
Going off that, she probably met Wukong with Bull Demon, when Wukong swore brotherhood and alliances with the other demon kings
SHE, WUKONG, AND BULL DEMON WERE AN UNSTOPPABLE TRIO
Because I love friend group dynamics and also angst for later on:
Those three were the closest out of the demon squad
They sparred together and wraught havoc upon villages 
Lots of adventuring together!! Bantering!! Teasing!!
Yeah given how insanely OP Wukong is, I’d like to credit Iron Fan and Bull Demon’s ability to hold their own in a fight against him to having a familiarity with his fighting style
The three of them share three braincells and Iron Fan has two of them for most of the time
This is when crushes develop :3c
Wukong erased Iron Fan and Bull Demon’s names from the death books
Wukong probably also slipped them a few immortality peaches during the Havoc
That all being said- She and Bull Demon were probably as distraught as the HuaGuo Shan monkeys when they heard what happened
Bull Demon coped by being like, “Eh, it’s our bro Sun Wukong. This is probably an elaborate prank or he’s planning something. He’s gonna be fine.”
Iron Fan however was like, “Well I’m just gonna forget now.” and pushes all her feelings under a rug
They both continue to grow their power in the meantime
She and Bull Demon got married 200 years after the incident cuz Red Boy’s said to be 300 years old by the time Wukong encounters him
Was probably a doting mom and loved Red Boy to bits
But was also a bad influence and gave him all the weapons he could ever want as playthings
Her and Bull Demon’s relationship probably got strained around the time Red Boy was 200 because Bull Demon started making bad decisions
I don’t think the book ever mentioned Iron Fan ever showing malicious jealousy towards Jade-Faced Vixen and Jade-Face sends her gifts to make amends so I don’t think they’re enemies
The majority of the strain is coming from Bull Demon wanting more, more, more and wanting to be an even more powerful king
Which included having another consort because :/ Tang Dynasty- and Iron Fan, as most reasonable people, was pretty pissed at this line of thinking
Iron Fan, although pretty ambitious and glory-chasing and power-hungry herself, was getting frustrated with how brute-force Bull Demon was starting to go about it
Afterall, Wukong was the strategist in their plans and Bull Demon was starting to lose sight of what made their old plans work
They also started seeing each other less and less and Iron Fan got disheartened because it seemed like Red Boy enjoyed hanging out with his dad more 
She started getting even more pissed because she worried Bull Demon would be a bad influence for the kid
Which led to her trying to steer Red Boy away from his dad which made Bull Demon mad which made their relationship more strained
Iron Fan and Bull Demon probably still had some feeling left for each other and were sad with how their relationship was progressing but with the place they were in and the roads they were taking, they weren’t a good match for each other at that time
So when Iron Fan hears about Wukong being back and what he did to Red Boy…. oh boy
All hell breaks loose

Though kung fu movies feel so familiar to modern audiences, it wasn’t until the 1970s that kung fu movies really made their way to the United States and Americans fell in love with Chinese martial arts films. The late Bruce Lee in particular captured America’s imagination, as his intense, powerful skill captivated audiences following his untimely death at the age of 32.
Of course, if you want to learn more about the great stars of Chinese kung fu, Lee, Jackie Chan, and Jet Li, these films will give you that exposure. But, a deep dive into Hong Kong martial arts films will also yield a deeper appreciation of Chinese culture, Asian history, and the evolution of action film. Perhaps most importantly, these films offer some of the most intricate and impressive fight sequences ever filmed. It wouldn’t be inaccurate to call these films violent, but when kung fu movies are at their best, the violence transcends to a level of physical beauty that is unlike anything else ever captured on the big screen.
Kung Fu is indeed a style of martial arts, but it transcends simply one definition and extends as well to a lifestyle that one chooses. There are those who interpret it as Kung – hard/ or skillful work, and Fu – time spent. Over a very long period of time, Kung Fu (or Gongfu) has come to generally define one who devotes oneself to a lifestyle of martial arts, or more specifically a Chinese martial art. This is why the martial arts movies we will talk about today are all considered Kung Fu films, and also why you won’t see any movies with Karate here like Karate Kid.

So the officers are taking everyone from Jishitang because the officer died after eating their medicine... Of course. Even Ruyi. Will teach you to say nonsense and accusing Bai Suzhen. So to prevent Xu Xian getting involved, Suzhen turns herself in and ask not to bother the rest of them. Such a nice girl.
Yinxiang takes Xu Xian a long way, but he’s too smart and realizes she’s lying to him and guesses that Ruyi wants to do something to Suzhen. Xu Xian runs to the pharmacy, but it’s too late, Suzhen has already been taken away. She wonders how come he died from his medicine. She only prescribed a laxative in it and Xu Xian took it away. So it really was her. Well, I actually like that. It means she’s not as naive as I thought. When she tries to come back to her snake form, she realizes her powers have been sealed.
As soon as he hears about Suzhen being taken away, Xu Xian wants to go save her. He’s the one who prepared the medicine, not her so he should be the one taken away. Ruyi doesn’t want him to go, of course she likes better Suzhen being accused, and her dad also tries to convince him not to angry the officials otherwise they won’t be able to keep on doing business. But then Xu Xian says the only way for them not to be affected is to prove Suzhen’s innocence. So daddy lets him go because it makes sense.
That fox lady. I knew Jing Song shouldn’t trust her. Of course she will uses this to eat Suzhen’s core and after that, he won’t have any ways to defeat her. He’s blinded by jealousy. Or is he helping Suzhen? I mean, he doesn’t look that stupid. Anyways, that fox tells Suzhen that she’s sealed and that it’s thanks to her friend. It doesn’t take long for Suzhen to realizes that it’s Jing Song that gave her sur a magic tool.
Yep, exactly as I said. She plans to take Suzhen’s core. Just right then,  they come to free Suzhen, just in time, Kexin couldn’t get Suzhen’s core. Xu Xian came to clear Suzhen’s name. I hope he wins. And not by accusing himself...
At a guesthouse, Qing Er is eating and resenting that Suzhen likes Xu Xian better than her and she hears about what happened at the pharmacy. Qing Er doesn’t believe Suzhen killed someone, they tell her it’s true and to go look herself if she doesn’t believe it.
So Xu Xian’s idea is to drink himself the medicine that was prepared for the doctor. If he doesn’t die, it means that it’s not due the medicine. But ugly fox is there. I don’t trust her. Then another higher official comes to judge the case. When he hears Xu Xian’s name, he looks somewhat weird. He must know him, maybe? With the reading mind of the fox, we know that this dude is the one who killed Xu Xian’s dad. So she uses that to her advantage. Even though Xu Xian just had the medicine and didn’t die, he says there’s no proof that the medicine wouldn’t harm someone who’s sick. So they decide to punish Suzhen by hitting her. Xu Xian uses his body to protect her and accuses them of not having any proof to declare her guilty. So they say they have a witness: Hu Kexin. Fox lady. ARRRGH.
Qing Er TT Come and help Bai Suzhen and Xu Xian. She’s just wondering there why Suzhen isn’t replying. They changed the medicine somewhere and put in some kind of flower that in a too high dose can cause death. Xu Xian and Suzhen definitely didn’t put that in there. Oh yes! Qing Er! She realizes that Suzhen is tied by something that keeps her from moving. Good girl! Now go and help. So you become BFF again.
The officers claim that Suzhen is guilty and orders to beat her. Xu Xian says that he’s the one to have prepared the medicine so if any problem came out with it they should punish him, not her. But they don’t want to listen. As they are about to hit Suzhen, Qing Er finally helps. She makes them unable to hit her and disrupt their movements! Yay! I hope that now she heard Xu Xian begging to get punished instead of Suzhen she trusts him more. She starts yelling that they are accusing the innocent and that she was protected by the good spirits. The people around also starts believing it and wants Suzhen to be claimed innocent. So they have no other choice but to let her go, which means she’s not tied anymore by the sealing rope. HAHAHAHA. In your face ugly fox. Now, please save my dear Xu Xian.
Kexin pretends to faint and gets back the rope. Yikes. Qing Er follows her. QING ER! QING ER! QING ER!
They declare Xu Xian guilty, Suzhen tries to help him. But then he tells her that he’s okay, to not be afraid because he promised to protect her. This guy </3 He asks her to take good care of his sister for him. TT Such a nice guy. Don’t hurt him </3
I don’t really get what happened with that higher up official and Xu Xian’s father, but he’s looking for something and it seems to involves someone else’s death too. He goes to question him, but Xu Xian is like oh wow, you looked into my identity, good for you, by the way, I’m not going to make my father lose face. Mister officer tells him that his dad was killed because he hid some texts, if he tells him everything he knows, he will spare his life. Xu Xian just laughs. Don’t let that old creepy guy bully you! He won’t say anything.
Suzhen and big sister are cleaning the mess the officers made earlier and they find Xu Xian’s medicine journal. In it, on the day the dead guy came, he wrote that he needed the specific flower that poisoned the officer, but the pharmacy already used it all and it was nowhere to find in town and he had to switch ingredients. So it basically proves his innocence. YAY SUZHEN!
Right then Ruyi comes in and says bad thing about Suzhen, but Li Gongfu is like “we know Suzhen’s character, this has nothing to do with her, leave her alone”.
Suzhen gets confirmation that Xu Xian was framed, but the guy, if tells everything, his whole family will get involved and die. Suzhen decides to go see Xu Xian.
Back in his prison, the prisoner next to him tries to kill him, but he was already wary of him because he said he was sent to jail because he stole some mantou since he was so hungry, but then when they sent the food, he didn’t even eat, so Xu Xian knew it was a lie. Somebody’s trying to get rid of him quickly.
Suzhen and Li gongfu got in just right in time to save him. She asks him why he didn’t say anything about the flower, but he says he didn’t hide from her on purpose. He tries to convince her to leave because it’s unsafe. No matter how much she asks, he doesn’t want to tell her. She’s hurt because she thought he was thinking of her as his, but he retorts that it’s exactly for that reason that he doesn’t want her to face any danger. He tells her they have no other way because it’s the dude that harmed his father to death.
How much more complicated is this legend going to be? I didn’t think this drama would be so fascinating. It’s almost, almost, making me forget the sadness of the emptiness that left the Untamed into my heart. It can’t replace it, but it helps to make me forget how sad I am that this drama is ended. And I can’t help but keep watching.

Recap - Last Time on Tea Lives of the Rich and Famous
Part one of our blog on black tea told the history of the famous tea type and how it is made. This week, we’ll start from where we left off by delving into some examples of black teas. So, welcome back tea-friends. Buckle up, and let’s continue!
Black Tea Types - Profiling Celebrities
As mentioned in part one, this blog's purpose is to focus on and discuss exclusively Chinese-grown black teas. Generally speaking, the main types of Chinese black teas are: gongfu cha, xiaozhong cha, and hong sui cha. As most high quality black teas are considered to be gongfu cha, we shall talk about those teas first.
Keemun (Qimen Gongfu)
Arguably the most famous tea in China, qimen originated in 1875 in Qimen county by a tea maker who traveled to Fujian to learn more about his profession. Upon returning home, he began to produce his own tea, one that would go on to become one of the most sought after black teas in China. Qimen is known for its sweet and rich flavor, and boasts aromatics of rose, fruit, orchids, and chocolate. Visually, the tea is distinguishable by its incredibly small leaves that taper sharply at the tip, and its almost jet black color with streaks of grey. Although qimen is considered to be one of China’s highest quality black teas, there are incredible variations in qimen quality. High quality qimen is typically made from perfect sprouts and young leaves and is solely sold straight. While, the lower quality qimen is made from less than perfect and sometimes broken young leaves and is exported to make English Breakfast.
Yunnan Red (Dianhong Gongfu)
Dianhong gongfu are black teas that hail from Yunnan province. They were originally created in response to the popularity of Indian teas in the international market. Dianhong gongfu is usually created from the leaves of feral trees (similar to the trees used for pu-erh) in the southern and western parts of the province. It is dianhong’s unique leaves that make the tea so memorable for they are known for being remarkably large and toting brilliant gold, thick pekoe. Observing the pekoe is a great way to help determine the quality of the tea. Typically, the darker the pekoe, the later in the year that the tea was picked. And with that said, spring picked dianhong is always the most delectable - boasting an assertive flavor and notes of chocolate, lychee, banana, and brown sugar.
Fujian Red (Minhong Gongfu)
Minhong gongfu teas are known for their unique sweetness and mellow, malty, and floral taste. There are three main types of minhong gongfu: Tanyang, Bailin, and Zhenge, all named after locations in Fujian where the tea is grown. Since Yezi Tea specializes in a minhong that lies outside of the main three, we thought to speak about that one in some detail - minhong teas created from the Jin Mu Dan cultivar.
Jin Mu Dan Cultivar Black Teas
The Jin Mu Dan cultivar is over 600 years old, and hailed originally from the Tanyang village where tanyang gongfu tea is from. Now grown in the Nanhu mountain range approximately twenty miles south of Fuzhou city, this cultivar produces some of the most incredible black teas in the world.
The mountain range has been known for its teas for over 200 years, however, that knowledge is primarily held by those in Fujian. And it was not until Huang Jian, a local Fujian tea farmer, that Jin Mu Dan was used in the Nanhu mountains. In the early 2000s, Huang Jian planted the Jin Mu Dan cultivar in the soils of the mountain range and began to create a series of black teas that are complex, malty, sweet, and robust with notes of chocolate, pastries, and florals. The teas from this cultivar are some of the most popular teas at Yezi, and, until recently, were only available to those living in China.
Lapsang Souchong (Zhengshan Xiaozhong)
Though produced in the Wuyi mountains, the origin of zhengshan xiaozhong is unclear. When tea from Wuyi was first exported to the West, the teas that were smoked became extremely popular. That popularity is the reason for the tea’s ongoing production, as in China, zhengshan xiaozhong is not widely consumed. Made from relatively mature leaves, zhengshan xiaozhong is produced in special buildings that allow smoke to circulate. Inside, tea leaves are withered by pinewood fires. And after the teas are dried, they are again smoked over a low pinewood fire to finish and add more flavor. It goes without saying that zhengshan xiaozhong contains notes of smoke, however, the tea's notes also consist of cinnamon, chestnut, fruit, and tar.
Jin Jun Mei
Jin jun mei is a relatively new tea in the black tea world as its origin traces back only a few years. Grown originally in the Wuyi mountains, jin jun mei is a type of zhengshan xiaozhong that has become popular due to its exquisite complexity. Made solely from buds, jin jun mei boasts faint notes of smoke and malt as well as a creamy and smooth mouthfeel. Overall, the tea has a more subtle taste than regular zhengshan xiaozhong.
Hong Sui Cha
Our final black tea type consists of broken tea leaves that are primarily for foreign market consumption. Mass produced with machines and sorted by an internationally renown tea leaf grading system, hong sui cha is less complex than the other black tea types. However, because of its broken leaves hong sui cha brews up a strong, bold tea at a fast rate, which is preferred by many tea drinkers.
Chemical Compounds of Black Tea - Caffeine’s Ready for its Closeup
We've mentioned in previous articles how the popularity of certain teas in the West grew because of their purported health benefits. Although black tea’s popularity in the West rose primarily due to its taste and its period of being a symbol of elevated social status, it was in fact black tea’s chemical properties that played a key role in both of those factors.
The first and most important compound in black tea is caffeine. The common belief is that out of all of the tea types, black tea contains the most caffeine. This is untrue, as it is the tea types with the youngest and least processed tea leaves that contain the most caffeine. With that said, due to the complete or almost complete oxidation that black tea undergoes, the tea's caffeine is partially separated from its tannins which allows for the uptake of caffeine during consumption to be faster than that of other teas. Most likely, it is this fact that has been the reason for the misconception that black teas contain the most caffeine out of all of the tea types. Additionally, when considering how much caffeine one is consuming when drinking black tea, it is important to note the difference between drinking black tea made from Camelia sinensis var. sinensis and that made from var. assamica. The var. assamica plant naturally has more caffeine than its var. sinensis counterpart.
Now that we have gotten the pesky caffeine conundrum out of the way, it is important to talk about what makes black tea special - the fact that it is fully oxidized. This complete oxidization not only gives the tea a unique chemical composition, it is also what creates the chemical compounds that give the tea its dark color and robust flavor. While black tea does not contain as many cathechins as green or white tea, black tea does contain two other compounds that may be just as influential as cathechins - thearubigins and theaflavins.
In previous articles, we have mentioned polyphenols, however it is solely black tea that contains the polyphenols: thearubigins and theaflavins. The reason why thearubigins and theaflavins can only be found in black tea is because they form when certain enzymes within the leaf completely oxidize. Some say that these polyphenols are as effective an antioxidant as epigallocatechin gallete (EGCG) and can help with heart disease prevention.
Aside from that, studies have shown that consuming black tea promotes dental health, reduces fatigue, stimulates the nervous system, promotes strong bones, enhances blood vessel vitality, reduces risk of stroke, and can lower bad cholesterol. However, as always, we must mention that any health claim that you hear or read about when it comes to tea should be considered with a bit of skepticism. Black tea is a young tea type and any studies that have been done on black tea are much younger.
Preparing Black Teas - Ready, Tea Set, Action!
In many cultures there are strict guidelines on how to prepare black tea. Milk, cream, butter, sugar, spice, and citrus are all additions that some deem necessary in the brewing of a good cup of black tea. In the West, it is common to add milk and sugar to black tea, as many say that it enhances the fragrance and flavor of certain quality black teas. And while all taste is subjective, we here at Yezi think that the best black teas can speak for themselves, and only shine when consumed straight - without any additions.
To properly prepare black tea, water temperature is crucial. Black tea should always be prepared with boiling or near boiling water to bring out the tea’s flavors. With lower temperature water some of the chemicals (such as thearubigins) that play a crucial part in the tea's flavor and aroma will not be released, and as such the tea will not live up to its potential.
To best experience the many nuances that high quality black teas have, we believe that gongfu brewing is the most appropriate brewing method. Gongfu brewing of black tea is best done with a gaiwan or small teapot (less than 6 ounces). When brewing, 4 -5 grams of tea should be used for every 3 ounces of water. The first infusion of black tea should be steeped for 15 to 20 seconds. For each following infusion, 15 to 20 seconds should be added to the steep time. Meaning that the second infusion should be around 30 to 40 seconds, the third should be around 45 to 60 seconds, and so on. Most high quality black teas can be infused upwards of three times, with the maximum amount of infusions being around six. Infusion quantity, of course, depends on the exact type of tea.
Final Words - Sometimes Less Notoriety is Better
For many in the West, exposure to black tea may be the only exposure to tea as a whole. For some, black tea may just be an assertive, tannic replacement for coffee, due to its chemical properties and bold flavor. Whether consumed in tea bags or in loose leaf blends from India and Sri Lanka, black tea has become so commonplace that not many may care to know more than their daily favorite. However, we hope that tea lovers and tea novices alike will consider going beyond the blends that they may be used to. For example, tasting teas from the birthplace of black tea (the Wuyi mountains), or sampling the straight, individual teas that are used in some of their favorite black tea blends are two great ways to do just that. Though there may not be a wide variety of black tea types in comparision to the likes of oolong and green tea, the spellbinding differences between high quality black teas are worth the foray into their world. These velvety, smooth, bold, sweet, and dessert-like teas might just become your new morning pick me up, or perhaps your new evening cool down.

Legend of the White Snake - Episode 25

Yay. Agaaaaiiiin. Of course, for the one post I forget to save drafts, my computer won’t let me have my ways! And I had to be almost at the end of the episode. However, maybe that’s a good thing that I have to rewrite this recap, because it was extremely... hm short compared to what I use to write. We’ll see how it turns out this time. Just maybe my reactions will be a little different than in the original post. Which is annoying because I really try to be extremely genuine with those reactions.
So staged. Ruyi runs towards the cliff, but she doesn’t even jump. She stops right at the edge and then Daoling disguised into an immortal pulls her back to Jiaorong’s side. That fake tells her that a snake demon is hiding next to his little brother and that he attracts demon.
Xiao Qing tries to spy on them, but they are too far away and can’t hear anything they say. But as she believes that that man is trying to dupe Jiaorong when he hands her a plate, she gets really and rushes to go fight that liar, but then she ate too much shaved ice earlier and she feels unwell so Yutang gives her a piggy back ride back to Baohe tang.
On their way back home they bump into an old man getting kicked out of a practice because he’s too poor to pay for medicine and treatments. His illness is very serious and he needs to be treated quickly. Suzhen offers to pay for his medical treatment so the clinic won’t have any reasons to refuse him. Since even so they don’t want to take him in, Xu Xian and Suzhen brings the uncle back to Baohe tang.
That ill person is really suspicious. He always keeps his eyes half closed half open and his disease is really strange, Xu Xian never saw something like that. Suzhen brings some rice porridge and he complains that she doesn’t give her anything good to eat and she explains to him that porridge is actually really good for health. When he’s better he can eat what he likes, she will even cook it for her.
Ruyi is really mad at Daoling for not saying that Suzhen is the white snake, that then she did everything for nothing. But he tells her that the plate he gave her is real, he took it from when he was an immortal. And I just realized, while watching a second time, why his face when he was younger looked so similar. If I am not wrong, it’s the guy that was playing the son of the second prince in Eternal Love, the poor little boy that was framed by Su Jin. Poor him. Anyways, that has nothing to do with the story here. He fell in love with an immortal looking like Ruyi and because of that neglected his duty, which resulted in him losing his status and becoming a demon. He believes Ruyi is that same girl and that she followed him in the mortal realm. For what I have seen, she’s probably forced to be there as a punishment, she seemed to have the same bad character, too spoiled.
The sick old man is going through Xu Xian’s notebook and even corrects mistakes here and there, adds more notes. Seems like he’s an immortal actually. When he hears footstep, he lies down again. Suzhen and Xu Xian prepared a special medicine for him, but he says it smells so bad, medicine doesn’t need to be so ill tasting, they could add dattes and and a few more things to make it less bitter. He accepts to take his medicine after Suzhen talks to him and when he’s complaining because it’s too bitter, she hands him some deserts she prepared to forget the taste. They even get him a bath with herbs ready. Since they treated him well, he gives to Xu Xian a medicine book.
Jiaorong’s prayers to the plate (which is kind of a token of authority or something like that) invokes a big storm which hurts Xiao Qing and she goes off Yutang’s back. Then lightning breaks a tree and Yutang uses his body to protect Xiao Qing. I ship. Very had.
When she sees that wather, Suzhen gets worried. I believe she knows it’s no good for her kind and the uncle pushes them back inside. He thinks it’s actually coming for him and he leaves. Seems like he’s  the Lü immortal, the real one this time. He wonders who dares use this plate without having the right to and it breaks down, making Jiaorong unconscious.
While Xiao Qing is taking care of Yutang’s injury, she’s crying, but she tries to hide it from him. How cute.
Suzhen and Xu Xian burn incense for Lü immortal, since they notice it was him. He seems happy with their thank, so he makes things appear on the altar they made for him.
Back home, Jiaorong wakes up screaming, she had nightmares in which she saw the real immortal Lü telling her not to believe again in demons, otherwise she’s going to pay the price. Xu Xian tells her that the first one must have been a fake, which is why the last one told her not to believe in demons again. Gongfu was very worried about her. Jiaorong then tells them that it was Ruyi who introduced her to that immortal, he really could use magic. Then Jiaorong is worried that Ruyi is also tricked by that fake, but right Xiao Qing comes in and says that Ruyi and that fake were together, that she’s trying to harm them. Suzhen asks Xiao Qing to stop saying that nonsense. She knows that Jiaorong still likes Ruyi and she doesn’t want the confrontation. Jiaorong still actually asks for forgiveness and then Xiao Qing is starting to feel unwell again.
While watching on her, Suzhen tells Xiao Qing that there is no medicine for her poisoning. Xiao Qing begs Suzhen then to take care of her four underlings and.... of Zhang Yutang. Who’s really worried about her. Then... Hahahaha! Okay, I love it. Actually, she’s just getting her first period. I love have how Suzhen teased her.
Awww. Yutang is so worried about Xiao Qing. He asks Xu Xian to tell him the truth, no matter what she has, he’s willing to take care of her. Cute <3 No matter how expensive the medicine, he’s willing to pay. Xiao Qing hears that and she yells that she’s not sick and leaves. Xu Xian then tells Yutang to make sure Xiao Qing drinks a lot of hot water, nothing too cold and that he doesn’t fight with her. Four or five days later, she should be completely healed. Hahaha.
Omg. Jiaorong and Gongfu looking for a husband for Xiao Qing and asking Suzhen’s opinin. Suzhen’s like... oh sorry, I want to keep Xiao Qing for myself a few years still, I will take care of that when the times come. But that worries her a lot and Xu Xian notices that she’s worried and they discuss that matter. Actually, Xu Xian is shipping too, but Suzhen isn’t so sure about that. Xiao Qing can’t be compared to her. It’s different. Feels like she doesn’t dare to tell him that her core is inside him so he wouldn’t die.
Moh. Xiao Qing tries to flirt with Yutang, but he’s completely oblivious to it and all dedicated to work haha.
Worried Suzhen makes it that Xiao Qing tells her what she really thinks of Yutang which is... like!

So. I was half way through the episode when my computer decided it was the perfect time to reboot. Again! Yep, I think it’s sulking because I now have a desk computer and uses it a little more often. So pardon me if the recap of the first half of the episode is lacking, I have already seen it and have to rewrite what I did. I should save drafts way more often hahaha. Saving just now. Just in case.
Xiao Qing is trying to keep herself cool by swimming in West Lake. Then Fahai comes and traps her in her bowl. But he grows a flower so she would be feeling a little less the heat. Can Xiao Qing build a harem and have many lovers? Am I weird to ship her with almost every body?
Xu Xian comes back home with a bottle of alcohol for him to drink with Suzhen for the Duanwu festival. So Ruyi asks Xu Xian if he added realgar inside of it, as it tradition, but he didn’t so she adds it in for him. So Suzhen won’t have choice but to reveal her true form. She’s so mean. Suzhen is still feeling unwell because of the heat and it worries Xu Xian. He came back earlier to spend time with his wife and pours wine for her. She tries to not drink it, but in the end she can’t really find a reason good enough to refuse. So she ends up drinking it anyways.
Fahai finally releases Xiao Qing and she asks him why would he help her. Then he just ignores her. Then, due to the gift his master left for him, he realizes that Xiao Qing is half immortal and warns her that as soon as she hurts people, he won’t show mercy even if she’s half immortal. Xiao Qing is of course asking for a duel someday later and finally realizes he called her half-immortal and asks him about it, but he just leaves, so she can only run after him.
Back home, Suzhen is experiencing problems to maintain her human form and because she’s wearing the buddhist beads Ruyi gave her, she can’t use her spiritual energy. So she asks Xu Xian to go out. It takes her a lot to make him go out. Why won’t she just  take off that bracelet? Gosh. It’s so simple, why does she not know those things when she was reluctant even to accept it as a gift... Outside, Xu Xian is getting really worried about his wife. Then Ruyi comes in yelling that a snake went inside the room where Suzhen is. Which is bad because Suzhen is transforming back. A panicked Xu Xian breaks the door only to see a huge white snake inside the house. He thinks it ate his wife and dies out of the shock ): Well at first I wasn’t sure if he died or just fainted, but he literally dies on the spot.
When Ruyi comes back with Jiaorong, it’s only to see a big white snake fleeing away and a dead Xu Xian. I hope Ruyi is happy now. She killed Xu Xian with her harmful ways.
Fahai runs into Xu Xian’s house to see he’s dead and believes that the White Snake killed Xu Xian. Suzhen then comes back, so sad because she knows she’s the one who hurt Xu Xian and then big sis asks her how come she escaped by herself, leaving Xu Xian alone. Then as he sees her and his staff doesn’t react, Fahai is doubting again. He blamed her but she’s not the culprit? Is it true? Suzhen blames Ruyi for giving her the buddhist beads and Fahai prevents her from hurting Ruyi. But what actually stops her is that she sees Xu Xian’s soul trying to leave his body. She asks Li Gongfu to take Jiaorong and Ruyi to rest, she will stay by Xu Xian’s side. Then she begs Fahai to save Xu Xian, she’s willing to pay any price. But Fahai has no way to save him.
Suzhen traps herself into pain and sadness over the death of her husband. She’s desperate to find a way to bring him back to life. Then the rest of the family comes to take Xu Xian’s corpse. Xiao Qing warns them that Suzhen won’t allow it and indeed she doesn’t. Big sis is a little unhappy with her and blames her for not having been by Xu Xian’s side when he was attacked by the snake.
Suzhen tries to convince them that there’s still a way to save him, that he’s not dead. She says he’s not dead and takes big sis in to show her. How dare that Ruyi follow and come in? Doesn’t she feel guilty for what happened to Xu Xian? And she even has the nerves to tell Suzhen that if she really likes Xu Xian, she should let him go? WHAT? Did I hear her say that? That little. Okay. Now I hate you. You pretend that you have nothing to do with this? You should be a mess and cursing your own stupidity.
And now big sis accusing her again of running away without him when the snake came. Poor Suzhen. Jiaorong orders to take Xu Xian’s corpse and says that Suzhen is crazy thinking she can still revive him. But Suzhen begs her to have three more days. In that span of time, she can revive him. Jiaorong agrees but if after that he hasn’t been saved, she shouldn’t come back. Poor Suzhen. Now the in laws dislike her. Get that awful Ruyi out of that room. She has no right to stay when she harmed that much Xu Xian.
Xiao Qing is mad at Suzhen for promising to save Xu Xian, but she says she knows a way and begs her to go get Fahai for her as she needs his help. Even though at first he’s not really willing to help, he ends up agreeing. She needs him to help Xiao Qing looking on the lamp, that fire is going to prevent Xu Xian’s soul to disperse. She’s herself planning to go to Kunlun mountains and get an herb to save him. Xiao Qing tries to prevent her from doing so, because it’s a place for immortals where demons shouldn’t go, but Suzhen is determined. She’s rather die than not try. Xiao Qing wants to go with her, but Suzhen convinces her to stay and keep an eye on Xu Xian and her core because in this world, the only person she can trust now is Xiao Qing. Suzhen really knows how to get Xiao Qing’s feelings.

Okay, out of that random moment of happiness. He’s like happy to learn that Xu Xian died. Well I guess anybody would like to see their rival out of the way and it was kind of bound to happen. Suzhen is clearly going to live longer than Xu Xian. I can’t dislike him for being happy. Even though my heart screams for that poor Xu Xian. And he’s going to stop her. Oh god. Jin Ling. Poor little thing.
Wow. The set of the Kunlun mountains is just sooooo beautiful. At first, when Suzhen sees Jin Song, she’s kind of happy. I think she misses him a little, but as soon as she understands he’s here to try to convince her to stop, she gets sad again and asks him to mind his own business. As they are about to fight each other, they get distracted by something and Suzhen takes that opportunity to flee.
Back home, because Xu Xian’s body isn’t degrading, Fahai has to repulse evil spirits. She needs to calm down to be able to help him take care of the body.
The spirit that try to come in was actually Wang Daoling. He couldn’t get any information and asks Ruyi to distract at night the monk so he can fight with Xiao Qing. Because he’s no match for Fahai. Gosh. That Ruyi. She’s going to kill Xu Xian twice. And she doesn’t even... what? She has no guilt for what she’s done? She blames it on Suzhen. That girl has mental issues. Please somebody take her away.
Suzhen gets discovered by one of the disciple of the master of Kunlun mountains and fights with him to get the medicine. However, without her core, she’s no match for it and if it wasn’t for Jin Song, she would have died. He takes her away and is so worried when she doesn’t wake up. He tries again to convince her to go back with him to Emei, but she won’t give up and she’s willing to sacrifice herself to save Xu Xian. Then he tells her he can save Xu Xian. At first she doesn’t believe him, but he insists. He gives him the opportunity to go in the past 5 times, it’s super dangerous though.
She then uses that little disciple’s appearance to trick the other disciple only to learn that the master took all the magical herbs away to make it a present for some immortal. She follows to there and her way of getting in is to use the younger disciple’s appearance. One of the guards is doubting, but the other convinces him it’s all fine so she gets in without trouble. For now. More obstacles are waiting for her.
