What’s cookin’ - Avocado & cactus!

Tacos - fresh tortillas that i got for 1Peso; cactus, onion, & jalapeño sauteed (had to saute it for a long time bc cactus is super sticky, who knew!); added in some of this giant avocado and radishes on top!

Sopes - thick corn tortilla on the bottom, topping was lettuce, tomato, radish, spicy green sauce from last nights quesadilla, avocado, and the same saute from the tacos! 

Delicious, will be eating cactus again!

Today is the last day of quarantine :)

Quarantine in Mexico day 2!!

* Learned how to get to the big grocery store for towels and other things (yes ive been showering without a towel for 2 days). Apparently the big grocery stores dont give you bags and also don’t sell alcohol on NYE, lessons learned 

* Spent the afternoon with some chips, salsa, Modelo, tarot cards & a book

*Took the scary ladder up to the roof for a great view, still trying to figure out how to get Maya up there. goal was to watch the fireworks from up there but fell asleep by 10PM

6 months and a close call to living in the snow behind schedule, Maya papaya and I finally made it south of the border!! Last night we landed in Tapachula, Mexico where I’ll be working and Maya will be along for the ride. Here are some highlights and photos from the first day:

Day 1 - 

*Maya pooped in the Mexico City airport after she got patted down by security

*I found the mercado central and panic bought some random ingredients that i’m currently making into something (avocado, i think those are tortillas, tomatillos, platanos, mangos, onion, jalapenos, rice & beans)

*Maya made a new friend around the block with a Great Dane puppy

*We played fetch in the yard until Maya got hot and I got her ice to eat

Updates on the meal later, but excited to be done with my 5 days of quarantine and start doing things!
