Iroh was dismissive/cold towards Azula in The Avatar State, most likely, because of her smile during the Agni Kai (then again at his angle and what was on his mind, odds are didn’t see); but in the aftermath as everyone disassembled, and in seeing Azula’s reaction/lack of horror, yeah I can see he’d be defensive about her being around Zuko some three years later after not being in contact with him while he’s been out on a wild goose chase away from home. With that being Iroh’s last memory of her from home, and her suddenly showing up, I highly doubt he was all that thrilled to see her, thus his cold reaction, especially if it’s been in these past 3 years that Iroh has come to see Zuko as a surrogate son. Those emotions would amplify his reaction because now he wants to protect Zuko from further harm, and with Azula there as an obvious placeholder for Ozai, yeah he’s not letting his guard down for anything.
