🇮🇹 PICI ALL' AGLIONE 🍝🇮🇹 Tuscan hand rolled pasta with tomato and garlic sauce.😍 🍝A very simple and tasty vegan pasta named Pici that comes from Tuscany, a beautiful Italian region. Today I' ve tried to make my glutenfree version of these eggless rustic noodles and I've used fava bean flour from @hodmedods. The dough is made of only flour, lukewarm water and salt. Then rolled by hands to make a round noodle shape,cooked and tossed with a simple tomato sauce with lots of garlic and extra virgin olive oil. I love getting these #glutenfreesmiles.So much. Out for a late Mother's Day breakfast at the Heritage Auckland, Hectors restaurant, the staff knew their stuff and assured me the chef would take extra care and ensure everything was gluten free. When it arrived, I collected a sample from the omelet, potatoes, bacon off my plate for my @nimasensor, then there was the 3 mins waiting period. I always get bit nervous at this stage because if the result is 'gluten found' you have to do the 'this is not gluten free' talk.
