All Lore from the Dragon Age: Official Cookbook: Taste of Thedas
This is going to be a long post with all the lore from the cookbook collected in one post. This is only going to be counting the lore in the "blurbs" so to speak as the actual recipes themselves, which are not meant to be set in-world.
Additionally, it should be noted that I am unable to say one way or the other if the props used in the photos or the etching art shown on some recipes are to be taken as reflecting the canon the cookbook narrator is in. For the sake of completeness, I have included the less conclusive elements.
Shoving everything below the cut for length as well as to help people avoid spoilers. Think I got everything... There is a lot in this book honestly.

Cookbook Lore
World State
Cassandra is Divine.
The Hero of Ferelden is a Cousland Warden.
The Warden gave Leliana Schmooples.
Hawke is a non-mage, as Varric knows Bethany.
Hawke is diplomatic in personality.
Bull's Chargers, Krem, and Bull are all alive.
Cullen stayed off lyrium.
Celene is empress; Briala and Gaspard are still alive.
Alistair is king.
Varric is viscount.
Uncertain aspects of the world state:
The suggested lore based on the art, props used in photos, and vague wording in blurbs. These are not for certain this is the canon.
Briala is described as a spymaster and lover, implying she was possibly reunited with Celene.
Celene, Briala, and Gaspard are possibly working together in the truce. But the wording is vague it could simply be Celene ruling alone while Briala and Gaspard live.
Cole was encouraged to be more human and is traveling with Maryden Halewell.
Cullen got his mabari.
Josephine was romanced by the Inquisitor.
Morrigan has Keiran.
The Hero of Ferelden romanced King Alistair.
Food Lore
Lentils and onions are common ingredients to find in pantries across Thedas.
Ferelden has reliable access to tomatoes that allows them to use them regularly in their food.
Fereldans are known for their love of soups, stews, pickled eggs, and turnips that it is regularly joked about and seen as a stereotype. Devon regularly comments on the known expectations.
Turnip and Mutton Pie is a classic Fereldan dish served in taverns across the nation.
Nevarra food culture holds that food is suppose to be a feast for the eyes and mouth. Leading to their plating to be dazzling and seen as works of art.
The Jade Ham, is a smoked Anderfels ham with a particular glaze made from wildflowers and turns the ham as hard as jade.
The Anderfels are hostile and often considered inhospitible in certain areas. But despite the harsh environment, pigs farm well there and as a result are much larger than elsewhere in Thedas.
There are custard connoisseurs across Thedas.
Lichen ale is toxic, though most dwarves are able to handle it. However, non-dwarves can only tolerate a few sips of the drink.
Isabela has a drinking game based on how many enemies you have, it has killed at least one person.
The Rivaini tea blend is said to have healing properties such as helping alleviate headaches.
Dwarves underground raise giant spiders like people on the surface raise cattle and goats.
Orzammar has a contest where one is crowned as Orzammar's Best Sauce, the competition is so fierce people get underhanded in their attempts to acquire recipes. This has led to eateries, and in general people of Orzammar, to guard their recipes from others.
Orzammar also farms various mushrooms for eating.
Rice is commonly found in Antiva and Rivain, however it is not a large export for Antiva so it is a rare grain for folks in Ferelden. Due to it not being exported, rice is a cheap food item in Antiva and is very common in the more mundane foods of commoners.
Wyvern, like phoenix, can become deadly poisonous if eaten when they aren't prepared properly.
A jam maker lives in Orzammar, importing individual ingredients so they can make the jam themselves and hopefully sell it cheaper than imported jam.

The golden nug statues do exist in Thedas, Devon mentions seeing one in Haven and hearing rumors of there being more.
Fereldans who worked for the Inquisition would leave Commander Cullen pickled eggs on his desk while he was going through the worst of his lyrium withdrawal symptoms.
Spring time is gurgut mating season, and travelers are advised to keep their distance.
Starkhaven is oval in shape, shaped by rings of tall, grey stone walls, is filled with lavish estates, fountains, and sits on the Minanter River.
Makes reference to the ambient events of where Cole dumped a bushel of turnips onto a fire.

Here is the very, very long and complete list of all dishes, ingredients, and drinks in Thedas as of Tevinter Nights.
This compiles all the canon posts. My headcanons are separate from this list to avoid any confusion but you can find it linked along with the other individual posts below.
Like in the individual posts, the list has the country of origins next to each item and any relevant information. Such as ingredients, use, notes, or trivia. For the canonically suggested foods and drinks I list what their real world uses are for your reference as to what they might be used for in Thedas.

Aspen - The inner bark is sweet and starchy. It is edible both raw and cooked, it can also be dried and ground into flour. Some aspens have edible catkins as well.
Beech - The young green spring leaves can be cooked as greens. The inner bark, once dried, can be turned into bread flour.
Birch - The inner bark can be dried and used to make bread flour. Strips of the inner bark could be eaten raw or boiled like noodles. The sap was edible directly from the tree or boiled down into a slightly sweet syrup.

Palm - Heart of palms are eaten as well as palm oil.
Pine - Aside from pine nuts, the pine pollen, pine cones - only the females, may be eaten once shelled and roasted. Pine needles are used for tea or chewed on for the juices, and the inner pine bark can be dried and ground as flour, used to thicken soups and stews, cooked like spaghetti, or eaten raw. The sap is high in vitamins a and c and has been used to fend off scurvy in the past. The sap can be drunk as a tea in the spring.

Wines of Thedas
Wines are often named after the place where they originate. As a result, many terms that we use for wines would be anachronistic in Thedas... so I dreamed up some wines that you can use in your writing and worldbuilding! In a couple places, I also came up with in-world explanations for where these wines could have derived their names.
In parentheses, I included the Real World wine the Thedas head canon was inspired by, when applicable.

ICE WINES OF THEDAS
These are head canons I have for wines that are made from grapes that grow in humid continental climates where the first frost brings out the sugars in the grapes before they are harvested. While the climate of continental Ferelden would be the right temperature, any wines made there are kept locally and are not part of the greater Orlesian wine trade, which is dominated by wineries from the Frostbacks to the Minanter.
Cabernet Orles (Cabernet Franc) - The primary wine in Orlais made from black grapes. There are many varieties, named after local wineries.
Merlot - The name for this wine is derived from the Orlesian word merle, or blackbird. It is another common variety throughout the vineyards of Orlais, a dark-blue colored grape variety.
Dalish Wine (Gewürztraminer) - This is an aromatic wine grape and is often called "Spiced Dalish" for its bouquet. These grapes are grown exclusively on the western slopes of the Frostback Mountains. The name is a bit of a misnomer, having nothing to do with actual Dalish clans, instead coming from the region of the Dales where the wineries are located.  The human nobles who run the collection of wineries have tried to rebrand their wines, but despite many efforts to get another name to circulate, the term "Dalish Wine" still persists.
Cœurling (Riesling) - A white grape variety that originates in the Orlesian heartlands. It typically has notes of apple and tree fruit. Varieties that are grown along the Minanter tend to develop more citrus and peach notes.
Veltlin Verde (Grüner Veltliner) - Hailing from the Green Dales in the northern Minanter river basin, this sweet and citrus wine is named after the Antivan village Veltlin (not a canon location) where it was first fermented centuries ago.
Chenin Blanc - A white wine grape variety from the Chenin river valley in Central Orlais, on the coast of the Waking Sea. It is highly acidic and is used in the production of sparkling and dessert wines.
Armitage Blanc - A recent wine that was created by Jean Louis Armitage, who hails from Verchiel. He was trying to craft a new grape for the production of brandy and ended up with this winter-hardy variety instead. It is very popular for its high sugar levels and hardiness and has a fruity taste, a trendy wine du jour.
OTHER WINES
Cloudwater - In the wetlands of the Minanter River Delta, rice grows as a staple. The Dalish in the vicinity, including Clan Lavellan, use the rice to ferment this liquor that appears cloudy in color due to the unfermented rice solids that remain suspended in the alcohol. The Dalish use this cloudwater as a key ingredient in many tonics and syrup, and you can often find bottles of it for trade that have been infused with seasonal fruits such as wild strawberries, blackberries and cassis.
Seleny (Champagne) -  This sparkling wine originated in the Seleny river basin of western Antiva. It is renown for its secondary fermentation that causes the wine in the bottle to produce carbonation.
Seleny became associated with royalty in the Black Age, when Asha Campana became the Queen of Antiva. As a favorite wine of the queen, she sent bottles of it as a gift to celebrate each new wedding she arranged for her children and grandchildren across Thedas. The tradition was adopted to pop a cork of Seleny in celebration at wedding ceremonies, and the wine is often affectionately nicknamed “campane”--or the Orlesian bastardization “champagne”--for this reason.

I think some people might hear Sera being funny or callous when she makes that comment at the execution, "So, where's food? Orlesians always stock these things."
I hear a person who's spent a lot of her life living on the streets* and as such knows where to find free food when she needs to, and when you've spent a good chunk of your life hungry, old habits die hard.
(*Based on the timing of Lady Emmald's death and her own probable age, Sera only lived in a noble house until she was maybe 10ish.)

So a bitch got the Dragon Age World of Thedas book and for once the bitch isn’t me (it’s my partner)
And there are RECIPES, so you know what we did

This is the Dalish Deep Forest Comfort, but we ah… we have enhanced it to a wild degree
So Imma preface this with “we have been making jokes about Lavellan’s parents being godawful cooks so he eats everything raw” for months long before we got this book
(There’s a ficlet about it for our Four Heralds AU that may or may not be out already and if not will be soon)
But then we saw this recipe, and… guys? Guys? Let the Dalish have nice fucking things
This here is a spaghetti squash casserole, and one we made with one spaghetti squash instead of three
In the original recipe, the ingredients for this casserole are:
- 3 spaghetti squash
- 2 tbsp butter
- 4 cloves garlic FOR THREE ENTIRE SQUASH
- 2 cups mushrooms
- 2 cups spinach (they lie and pretend elfroot is spinach but elfroot is weed so this might explain the quantities)
- 2 cups diced tomatoes
- teeny bit dried red pepper
- pinch of parsley
- 3/4 cup of feta
- wildflower garnish
Let me tell you right fucking now I don’t think they know how much you get out of a spaghetti squash because we put 2 cups tomato and spinach each in this baby with our 1 spaghetti squash and it’s perfect
So obviously we diverted right at the start, cooked the spaghetti squash with salt, pepper, roasted garlic and red pepper all rubbed in
And to the rest we added onions and a strawberry basil summer sausage that fuuuuuuuuuucks, herbs de Provence, more salt, pepper, olive oil, roasted garlic and red pepper, cracked garlic, allllll the sausage juices, and tossed her up
Crusted the top with aged white cheddar, panko, and more feta, back into the oven, and guys?

Food of Thedas. Part 1/? The Hinterlands
So! One of my lesser spoken-about special interests is working out what kind of food fuctional settings have and can make! And so as I am replaying DA:I again I thought I would give it a go talking about it here!
Let's get into it!

Beetroot: I'm not suppried there are (as we'll see going on) a lot of root veg in Ferelden. Beets are nice and versatile.
Wheat: most cultures have a staple starch. And it seems in Ferelden, or at least in the Hinterlands it is wheat!

Gourds: Gourds, pumpkins, squashes are hardy veggies! So perfect for growing in Ferelden
Tomatoes: now we're getting interesting in my opinion. Tomatoes, they could definitely grow in these conditions but why are they on the ground? They also kick off the fact that I have to suspend my disbelief and pretend that someone in Bioware's office wasn't just handed the task to model a bunch of vegetables one day. I doubt they cared too hard about the fact that these are from the Americas when everything we've seen maps Ferelden to you kinda standard Fantasy not-England.
Side note about gourds. The kind these were modeled after here are likely the American variety so geography is completely out of the window at this point!
Corn: Now we never see corn planted in the Hinterlands. Unlike the wheat. And I also seem to recall that the Exalted Plains have a LOT more in their food waggons so I wonder if perhaps it has been imported.

Apples: this site fascinates me. This is near the cult that has taken up residence in the Hinterlands. These are clearly being left as an offering. So is this site Andrastian? I don't recall anything similar to this mentioned else where. It could be Avvar perhaps?

Sausage: as my partner commented when we were discussing this, fantasy setting tend to lean their food germanic so it's no supprise to find Sausage. I would however, expect this to be a tougher smoked sausage. Something that can keep while traveling. But of course, model reuse.
Garlic: Ferelden food is decidedly not bland! In many houses and campsites you can find not just garlic but so many bunches of herbs.
Dried fish: This is the cabin where you later find Blackwall, up by the lake. It makes sense that dried fish would be a popular food for those who live around Lake Calenhad. I'm sure that when I get to Redcliff later we will see more!
So! In conclusion it seems the people of The Hinterlands prefer tough hardy vegetables with lots of dried and smoked meats. Things that can last a good amount of time! They would likely eat breads made from wheat. Which, thanks to the windmill near Redcliff and I'm sure others, could be ground quite fine!
In normal times they likely benefit from the Imperial highway and Lake Calenhad bringing trade and non-local products into Redcliff.
So yeah! I hope this is interesting! If this picks up I'll try and do more! I have the screen shots for part 2 at Val Royeaux ready already! Did you know they seem have an artificially stocked resivour?

More Fun Thedosian Food and Drinks Facts
So, a few more fun facts to tide you all over while I finish my food posts. (Also some snide commentary of my food frustrations at the end.)
Part 1
The Inquisition soldiers stationed in the Western Approach, Griffon Wing Keep, eat quillback and occasionally varghest. Which, considering they’re predators and you want to cook that all the way through means a lot of stews, soups, roasted, and other means.
Orlesians drink almond tea.
They also have punch, which can be both alcoholic and non-alcoholic.
When needed Thedosians will sweeten yellow wine with honey and spices.
Thedosians, Nevarran and other nations alike, eat dragons. Which isn’t entirely surprising but I mean they salt it, dry the blood to use as seasonings, all of it. Which, honestly, I appreciate them using the entirety of the animal.
Thedas has caviar, which implies sturgeon - unless Thedas has it’s own caviar making fish, but until noted otherwise you can assume sturgeon as most Thedosian food follows real world sources.
Thedas has both the dessert and savory forms of pudding. Which threw me for a minute when I came across Varric’s dialogue suggesting they put gravy on pudding.
Qunari have their own type of ale.
Avvar have their own type of mead and it is supposedly better than lowlander mead. Though, Amund might be a bit biased.
Both Avvar and Fereldans eat harts.
With the existence of Cacio e pepe, there is the implication that spaghetti and pevorino romano cheese exists in Antiva/Thedas. In Tevinter Nights it is implied that the Imperium makes it wrong meaning they uses butter, oil, or another ingredient aside from the cheese, pepper, and spaghetti.
Thedas has ale, beer, lager, and drafts, but since those things historically haven’t always been made from hops, it’s hard to say if hops exist. Hops in Thedas are theoretical, like waffles and lettuce.
Waffles aren’t mentioned as a food. Hawke’s nicknames are actions so... likely not a food. But open to headcanon, cause I ain’t here to rain on your parade.
There is not a single mention of salad or lettuce in Thedas but there are objects labeled “salad bowls” and I have intense feelings about this. Especially since the foods referenced range up to the 1900s. Let there be lettuce Bioware. Please.
The Bioware devs seem to like just saying “root vegetables”, “cakes”, “teas”, “fruits“, ect. instead of specifying which leaves a large gap and hurts my heart. Cause honestly I would love to know more veggies they used or even to see more foods unique to Thedas.

Cheeses of Thedas
From the Dragon Age fan who brought you Wines of Thedas, I now have some cheeses that you can pair them with! I love love love the cultures and climates of Thedas and dreamed up these cheeses to make the world feel a little richer, so feel free to use them in your writing and worldbuilding.
In parentheses, I included the Real World cheese the Thedas head canon was inspired by, when applicable.

Ferelden Cheeses
Gwaren chumlavi (norwegian brunost) - This semi-hard cheese is mild, a little tangy, and a little sweet. It is made on the island off the coast of Gwaren in southern Ferelden. Local cheese-mongers boil a mixture of milk, cream and whey until the milk sugars into caramel, giving the cheese its characteristic brown color. Local legend claims it was a favorite of the dwarves who traded with the outpost during the Divine Age. In recent history, it is a favorite staple in the diets of fishermen and sailors who traverse the Frozen Sea, as it travels well and can be sliced easily to add to bread or hardtack.
Ceodre (cheddar) - A hard, off-white cheese, named after the small village it originates from in the Highever region, where a number of caves maintain the humidity and temperature needed for maturing the cheese. Delightfully sharp in flavor, its popularity has let to its spread across the southern countryside and has become a favorite on Ferelden farmsteads. In Orlais, the cheese is similarly loved, but not wanting to be associated with the palate of dog-lords, the Orlesians claim the cultures originated in the caves outside Montsimmard and call it "grottes fromage" or simply "grottes" which translates as "cave cheese.”
Marcher Cheeses
Minanter Cheese (emmental) - Whereas most cheeses are made into 10 or 20 pound cheese wheels, this particular cheese, crafted in the dank river valley between Starkhaven and Ansburg, is made in 200 pound wheels. The many tolls running up and down the Minanter charge per item, so bigger cheese wheels are more affordable. The size of these giant wheels of cheese is a popular amongst marcher city states, and in Ostwick the greased cheese wheels are used in races and competitions. The cheese itself is hard and the inside is riddled with holes, a by-product of the fermentation process. It has a mild flavor and melts easily when cooking.
Damsleigh (brie) - A soft cow's-milk cheese,  pale in color with a rind of white mold. This cheese is crafted by monks who live at a monastery outside Damsleigh, a small town in the Planasene Forest at the base of the Vimmark Mountains. It is said that when the Qunari invaded cities along the Waking Sea, brothers from the monastery took to the mountains, hiding out in caves. One monk, Brother Florence, had the foresight to hide away the monastery's stock of cheese wheels, and his thoughtfulness kept the monks from being driven from hiding by their starvation.
Nevarran Cheese
Fortnight (fromager d'affinois) - Similar to damsleigh in production and appearance, this soft cheese is produced by a secular cheesemaker based out of the city of Cumberland. Using milk from cows that pasture north of the city, the milk is richer and creamier than its damsleigh counterpart. Added to that, the production process heats the milk until a substantial amount of water evaporates out, making the cheese creamier still. While fortnight has a more intensive process to make it, the resulting cheese is made much quicker, in a mere fourteen days, which is where this rich delicacy gets its name.
Antivan Cheeses
Rialto (provolone) - The region that runs along the Rialto Bay and its most immediate trade routes is the home to a stretched-curd cheese that is a staple at tables and trade ports alike. Along the Minanter, in the eastern-most Marches, the cheese is called rialto dolce for its sweet and mild taste, but along the river valley that stretches between Seleny and Antiva City the rialto piccante varieties have a sharp flavor. Within Antiva, if you ask for "cheese," you will most assuredly be served this rialto variety without a second thought, but outside of the region it is referred to exclusively as "rialto cheese" and is sought after in palaces from Minrathous to Denerim. Pedaggio (munster) - Cattle herders who live in the steppe north of Seleny, in Antiva, will migrate south towards the river valley each summer to graze their herds in the lush and humid subtropical region. They return to the grassland plains with their herds to overwinter for the rainy months, and in the cool of cellars they craft and age a cheese that is very soft, very strong and requires vigilance. The uncooked, raw milk is cultured into cheese wheels that are washed regularly in a brine as they age in the damp and cool cellars of these winter homes. When the herders travel south for grazing season once again, they use the cheese as a toll for the Merchant Prince of Seleny, and that is where the cheese derives its name ('pedaggio' meaning 'toll' in Antivan). These cheese wheels are traded up and down the Antivan river valley for considerable sovereigns that rarely see their way back to the steppe herdsmen.
Orlesian Cheeses
Bosquet (limburger) - Cultivated in a monastery deep within the forests that lie between the rivers north of Val Foret, this cheese saw a rise in popularity after a folk tale arose about its use resisting the Tevinter occupation. As the legend goes, a local folk hero on the run from soldiers took shelter in the monastery, and the monks hid her in the cheese cellar. The smell was so pungent that the Tevinter soldiers passed by the cellar, leaving the monastery, and its hidden occupant, in peace. Bosquet is a rind washed soft cheese made from raw cow's milk. It has a crumbly texture and softens the longer it ages. After its third month of aging, it starts to give off a pungent odor that smells like feet. It is popular amongst Orlesian loyalists. Perdu (muenster) - Introduced to Orlais by the cook for an Antivan princess who married an Orlesian Grand-Duke. The Antivan princess arrived to Val Royeaux with a wheel of the coveted pedaggio as part of her dowry and begged her new husband's cook to try and recreate it. After years of trial and error, she found an acceptable imitation of the beloved pedaggio cheese. Upon tasting it, the Grand-Duke renamed it "perdu" for having found what once was lost.   Despite the enthusiasm of its reception, this cheese has little in common with its Antivan counterpart. It is made from pasteurized cow's milk. The cheese itself is pale in color, mild in flavor, and smooth in texture. Its orange rind is attributed to the blood lotus used to add a rich and colorful note to cheeses such as grottes. Souscendre aux Lueur - Cheesemakers in southern Orlais, drawn to the luminescent properties of deep mushrooms, use the blue fungus as a crucial ingredient in this glow-in-the-dark cheese. The cheese itself is a soft cows milk cheese interspersed with flecks of this particular strain of deep mushroom and rubbed with a deep mushroom oil. It tastes slightly sweet with hints of unami from the mushrooms. Commonly referred to simply as “souscendre” or under ash, this cheese gets its name from the coating of beech ash mixed with dried herbs and spices that form the dark rind which locks in the flavor and light while preserving the cheese's freshness. When sliced into, the food will illuminate a five foot radius with a blue glow for up to an hour for each cut made (subsequent slices can increase the glow up to a 15 foot radius). In order to gain any substantial stamina gains from the cheese, one would have to consume such a quantity that it would not be advisable, but that does not stop cheese mongers and adventurers alike from making claims to its bolstering affects. Snow-Favored Cheese (gruyère) - In the caves of the Frostback basin, the Avvar craft this cheese that has been a staple since the founding of Stone-Bear Hold. An excellent melting cheese for use in quiches, soups and fondues, it is sought after in trade, and often gets called the erroneous name "Snow-Flavored Cheese" for the mild flavor of its less-aged variants. The cheese tastes sweet, creamy and slightly nutty when young, then becomes more earthy, and complex as it matures. Virelay (epoisses) - Before the dawn of the Divine Age, when Emperor Drakon was uniting all of Orlais under his banner, he sacked the village of Virelay and razed it to the ground, leaving no survivors of the heretical cult known as The Daughters of Song that lived there. The cult had been a hedonistic one and hosted a yearly festival to celebrate gluttony and lustful desires, and one of the only surviving products of that town was a cheese that was so delicious that visitors to the annual festival kept making it in nearby towns. While the town was never rebuilt, the story of the cult lives on, and is passed down from one cheese maker to another.
The cheese itself is made through a time intensive and difficult process, including washes in both brine and brandy, but the finished cheese is like none other, with a custardy creamy center that is so runny it is recommended one eat it with a spoon.
The etymology of virelay has morphed over the centuries, and where once the Orlesian word was associated with wanton hedonism, it now carries a connotation of abstinence and patience, with the connotation of "worth waiting for." The small cheese wheels are sold in round wooden boxes with the emblem of two naked women dancing under grape vines seared onto the cover.
Rivaini Cheeses
Caws Cynrhon (casu marzu) - A traditional Llomerryn sheep milk cheese. It is fermented by maggot larvae who decompose the cheese with their digestive action, resulting in a very soft cheese that seeps liquid when pressed. It is often served sliced atop open face sandwiches alongside Llomerryn red sauce. The cheese is considered spoiled once the maggots have died and is to be consumed with live larvae that appear as translucent white worms, typically thousands per wheel of cheese. Considered an aphrodisiac, because the worms can jump out of the cheese when disturbed, diners hold their hands over their sandwiches while dining to prevent the maggots from jumping off the plate.
Orzammar Cheeses
Brochalavi (bronto-milk cheese) - The bronto's slow reproduction cycle and long nursing period lead to a sweet and watery milk that is used to make this cheese. Brochalavi has several versions, all of which utilize bronto rennet. The fresh curds taste mostly bland, slightly sweet, and have a soft and bouncy texture. The brochalavi that is aged a matter of weeks is often used as a vehicle for other flavors and ingredients such as syrups, mushrooms, and dried surface foods. The brochalavi that is aged for years is crafted with an additional bacteria; it is kept in cheese caves where it ripens into a pungent and nutty cheese. This aged variety originates in Orzammar, where dwarves pair it with the best ales, and it even finds its way to the surface as a rare and highly sought after trade item in upper class homes from Halamshiral to Minrathous.

still just sitting here thinking about the amount of trade and work required to keep a circle alive and kicking, and how it's probably the basis for the vast majority of the economy of thedas. The templars alone need food, firewood (gotta cook, gotta see in the dark, gotta stay warm) medicine, clothing, armour, weapons, lyrium. The lyrium comes from orzammar but the rest is probably sourced from all over the place and it is the job of multiple people to ensure all that stuff keeps flowing. Just think: before those Requisition Officers were chasing the Inquisitor around, they were likely chasing Cullen and Meredith all over Kirkwall.

Fenris's anger towards Danarius in act 1 is so deceptive. Not that it doesn't exist - it definitely exists, is very real and all-consuming. And Fenris definitely creates a very logically sound argument for why it exists and why Danarius deserves to die and why it would be incredibly insulting to just pay Danarius for his own freedom - ie. the institution of slavery is evil! after everything he's taken from me, why does he also deserve my money?! (Absolutely a fair point. But nevermind that Fenris knows perfectly well that Danarius is already extremely wealthy, and already expending a far greater amount of money having him tracked and hunted and brought back alive than Fenris could ever hope to match.) And I think it all distracts from the fact that Fenris is just not a very ideological person and isn't actually motivated by ideological ideals. Which is what makes him a sensible and reasonable and pragmatic person (unlike Anders who is 100% fuelled by outrage against injustice in the face of every practical impossibility to his plans, and is thus insane (i say this affectionately, please keep your Anders hate/salt off my post)).
There's just a very practical reason that Fenris is so angry in Act 1 and I think it's that his anger is one of a very few things that's keeping him from going back to his abuser. Like, Danarius has gone out of his way to make as sure as possible that Fenris's time as a man free is as miserable and uncomfortable as being his slave, if not more. When you meet Fenris, he's being chased across the filthy backwaters of Southern Thedas by bounty hunters, hounded and paranoid and unsafe at every turn, without access to adequate food or housing or medical care, incredibly lonely and entirely without allies (and who would want to ally with him, when it comes with the strife of becoming a target of those bounty hunters too??). He is living a miserable grimy existence, and he knows that the easiest way to make it stop is to give in. To go back to Danarius - let Danarius be the solution to the problem that Danarius created in the first place, entirely with the intention of bringing Fenris back under his control. And the only thing stopping Fenris from doing that is him reminding himself at every inconvinient moment that he's furious with Danarius and the guy made his life hell and deserves to die miserably. And you think so too, right, Hawke?! Tell him you think so too!
So that anger is important, but the things that Fenris said in it also can't really be taken as a literal understanding of his thought process or his actual desires imho. It's just pretty obvious by the time you reach acts 2 and 3, when Fenris has far more in the way of resources and allies and security, that all his conviction and outrage in act 1 about how he'd go and hunt down Danarius and kill the man himself was an extremely empty bit of hot air. His grand plan for dealing with Danarius in act 3 is 'hope that guy has moved on and forgotten about me so I can meet my sister in peace'. Frankly, he doesn't want to kill Danarius - doesn't want to have to. Much in the same way he didn't want to have to kill Hadriana. He doesn't give a shit about revenge or whether or not they deserve it for their magical crimes. It's just that none of these fuckers will leave him the fuck alone to move on with his life.
