VERY GOOD QUESTION- I know my answer should be rather straightforward but I feel I have to put some context to my answers since they may seem contradictory/paradoxical otherwise, so bear with me-
Sammy x Norman : Well. I think that one was pretty obvious, anyone who's seen more than 3 of my posts knows that I'd die for these two. They're just so PERFECT for each other, from their complementary personalities to the fact that their relationship allows us to delve deeper into batim's historical and social context. Sammy and Norman have one of the few relationships that develop the most during the game's lore : Norman originally complains vehemently about Sammy's frenetic behavior, only to end up lamenting to Buddy and Dot how 'Sammy isn't the same anymore'. What's interesting about this statement is that he says it in relation to Sammy's strange behavior : clearly, the two men have grown close enough for Norman to differentiate Sammy's extravagant habits from his ink-influenced behavior.
Furthermore, Sammy is a very gray character morally, a perfectionist who is extremely socially maladjusted (surely due to the fact that he's coded on the spectrum and autism wasn't properly diagnosed at the time), naturally ostracizing him. For his part, Norman comes from a rural background (which surely earns him the animosity of the people at the studio, given the historical context and the fact that he could very well be poc) and also seems ill at ease socially : to me, it's fascinating to see two characters excluded from their peers because of differences they can't change (being autistic or poc and gay) getting closer to each other, to the point where Sammy, who is deeply misanthropic, naturally compliments Norman by describing him as very bright. To me, Norman is the perfect partner for Sammy : ready to apprehend him as he is, since he's completely free of social conventions, without taking any shits from him.
I think Sammy and Norman can really get the best out of each other, during a historical period when being different was strongly proscribed. I think I'd have trouble enjoying Batim as much without their dynamic at its heart (considering how narratively rich it is) : Norman is Henry's confidant, Sammy is Joey's, both remain morally gray deuteragonists fundamentally opposed to the ink machine, while remaining fascinated by its powers. And who wouldn't love a good old enemies to lovers ending tragically with the unwitting murder of one by the other ? After all, Norman's main flaw is that he's too curious for his own good, and it was Sammy who inevitably led him to his doom..
Allison x Tom : what more can I add. She's everything. He's just Tom. I've always been drawn to characters/ships with a vibe completely opposite to the vibe of the work they originally came from, and the 'turning poison into positivity' energy that Tom and Allison bring to Batim has always fascinated me. In a world as tragic as their own, I find it touching to see these two find beauty in all the ugliness and manage to ask themselves 'what if we were happy after all ?' It's really striking and brings a narrative richness to the work, since they directly mirror what failed with Sammy and Susie : Allison is perfect, but that was never what was at stake in Tom's eyes. Tom was looking for humanity, not perfection, and he managed to go beyond the image of the muse to discover a friend, unlike Sammy with Susie. They're literally Romeo and Juliet but, well... Not dead.
Joey x Henry/Henry x Linda : oh boy. These three... Let me get it straight right away : Henry and Linda are perfect for each other. She's exactly what he needs to be happy : she's present, patient. There's no denying that he loves her immensely. But Joey... oh Joey is undoubtedly Henry's soul mate. The subtlety is that Joey can't bring him the stable happiness Linda can : Joey tugs at him, pushes him over the edge. He knows exactly what to do to push him beyond his own limits. The love Joey offers Henry is an uncomfortable but unconditional one, one that would allow Henry to go beyond what he thinks he's capable of achieving because no one knows Henry better than Joey ! And let's be honest, Batim only exists because Joey refuses to move on, to live his dream without Henry in it. He's stuck in unrequited love and refuses to learn to live with it. And that's the tragedy of this trio : Henry sincerely loves Linda but is truly himself with Joey, which prevents him from hating OR loving him (And Joey exploits this information by remaining extremely toxic and convincing himself that he can wear him down lmao). Henry is stuck with this dilemma : Existing peacefully with Linda or living painfully with Joey. And that's why I love the dynamic of this love triangle : because there are no solutions that will satisfy everyone.
Joey x Sammy : okay, don’t get me wrong : these two are HORRIBLE for each other. Does Sammy periodically want to quit just to piss Joey off? Yes. Isn't Joey's fascination with Sammy intimately tied to his refusal to forget Henry, who was a genius like Sammy? Yes. Nevertheless, it's impossible for me to read The Illusion of Living without feeling embarrassed and like I'm reading Joey's diary : whether you ship them or not, Joey is practically canonically smitten with Sammy. I sincerely don't think Joey and Sammy can sustain a healthy relationship with each other, but oh boy, surely that won't stop me from exploiting their bizarre obsessive love-hate relationship, where it's hard to determine whether they're going to throw hands or make out.

Alright folks. This is something I've wanted to talk about for a while now, but just now I decided to actually write it all down and hopefully make sense of myself.
Long ass ramble about BATIM and some lore from official books.
So far I've got my hands on two Bendy books, that is The Illusion of Living and Dreams come to life (I also have the Employee's Handbook but that one isn't lore important). I plan on getting the rest of the book in the future but let's look at these two for now.
The Illusion of Living is Joey Drew's memoir, written all by himself. In this book we get to know quite a lot about Joey, more or less his whole life.
We get to know that he comes from a family of shoe makers, that he lied about his age at 13 so he could join the war. Or that he likes to dress and look fancy long time before he actually is fancy, just because it makes him feel better and gives the illusion that he's someone important. We even get to know that he once joined a Detective when he was investigating murder. And that he can appreciate good art while also drawing slightly himself.
What I want to look deeper into though, is the way he and Henry met. Thanks to the game (and even fandom), most people assume they were best friends for a long time. That they would go to hell and back for each other. But that wasn't actually the case??
Joey and Henry met through a mutual friend, Abby Lambert, and he actually didn't like Henry at first. Joey didn't like the cartoon artstyle, which is what Henry mainly drew. So they didn't have anything in common.
That was until Joey got the idea for Joey Drew studios, and asked Abby for help to come up with the main character, since she could draw better than Joey. Well, Abby tried, but it didn't end up as they wanted. And then Abby took Henry for help and went to Joey together, and let me tell you, Joey actually wasn't really thrilled for Henry to come with her.
But, after a few tries, Henry was able to come up with the right design for Bendy. Joey and Henry decided to work together after that, but Henry left the studio not that long after. It's said that Abby started to work in the studio three years later, but it's also said that Abby and Henry never ended up working together. And Joey didn't really seem to care for Henry.

He acknowledges him, but isn't mad at him.
It's just so interesting, why is Joey so angry at Henry in game, if he didn't seem to actually care about him in the book? Could've been a mistake from the writer, or I don't know.
This is just something I've wanted to point out for a while, and I'm super open to starting a conversation with someone about this!
Now let's look at Dreams comes to life
This book is written from the point of view of Daniel Lewek, also known as 'Buddy', who is also the character that ends up being the Boris we all know and love in game.
I love how this book is written, since it's written after Buddy is corrupted by the ink, and he's slowly forgetting all of this, so he's writing it down so there's something left. So the truth is known.
Buddy is hired by Joey to be a delivery boy after a quick meeting when he's delivering him a new suit, but later gets promoted to an artist after Abby Lambert (who is now in the head of the Art Department) sees a drawing that Buddy's grampa actually did, but Buddy ends up lying, since being an animator is something he actually wants to do.
Buddy befriends Dot, who works in the Story telling Department, and she's a really noisy and sneaky character.
Now, something I think is interesting is that, Sammy Lawrence is probably the first character to get corrupted by the Ink machine. Buddy's first meeting with him actually traumatises him slightly, because Sammy jumps at him covered in ink after a pump bursts right above him. Throughout the book, Sammy is depicted to be really interested in ink, while also drinking some from the ink bottles.
Then Buddy has the luck to meet the Ink Demon himself, accidentally even letting him out from the room he was locked in.
And then, Sammy goes missing. That's when even Dot has the pleasure of meeting the Ink Demon, since she and Buddy went to the studio when it was shut down to see what other weird stuff they can find.
When we meet Sammy again, he's already The Prophet that we've seen in the game. And he even already made some sacrifices, Buddy and Dot (and Richie, Buddy's animation coworker) were meant to be part of them too but they were lucky enough to escape. But Buddy's coworker, Jacob, didn't. And when Buddy and Dot find him attached to the Ink machine cowered in ink (they are able to save him actually), they also find already dead bodies of Dave (another Buddy's coworker) and Norman Polk ("Of course no one would notice he was missing. Of everyone in the building. He watched everyone, but no one really saw him" – I'm sorry I had to add this, I absolutely love it)
Dot and Buddy end up having a small fight with the Ink Demon until they get rid of him. Or so they thought, because he ends up grabbing Buddy and pulling him into the ink with him.
When Buddy wakes up after, he's already in the body of Boris. Joey Drew standing above him, absolutely thrilled that they got a perfect cartoon after such a fail with Bendy.
Even if Dreams comes to life was mainly focused on Buddy, it feels like we've got so much lore for all the other characters. Joey shows how much of an asshole he can actually be. Norman shows up a few times, always unannounced and with some information no one else except him knows. Sammy and his grumpy ass that was slowly getting corrupted by ink. Hell, we even got Tom and Joey argument about the Ink machine (and Allison was with Tom!! Holding his hand!!).
These books are really worth reading, and I'm excited when I finally get my hands on the rest of the books.

I have this theory and I made a post about it but I love your Sammy stuff and consider you like a premiere expert so I'm genuinely curious.
Canonical after re-reading the books (and are they canon anymore LoL but). Did canon!Joey *know* Sammy was tripping the light fantastic on ink?
Like the passage where he tells buddy 'why please a man when you can please a god' seems to imply wet cat prophet man is pissed about Joey and feels let down -
And then *later* Joey's like 'Sammy lured them all down here...but I couldn't use them' and I'm like ho-shit did bro become the guy's Walter white

There’s several little things in the background that implies SOMETHING between these two but we don’t get to see it! Thomas surely reported Sammy’s weird behaviour to Joey like he said he would (Sammy did not make a compelling case for himself in their argument), but the ink doesn’t disappear from Sammy’s closet until weeks later, so did Joey like… know about it and his only response was “huh interesting, let’s see where he goes with this!” or did he just blow off Thomas’ warnings as unimportant b/c Sammy is his special perfect genius who can do whatever he wants, or what!!! Also the thing where Joey is the one who’s furiously interrogating everyone about Sammy’s whereabouts when he goes missing, before anyone else had even noticed he was gone, and Buddy thinks Joey’s emotion seems stronger than the situation warrants – so how intense was Joey being, for his upset at being unable to find the guy who writes ALL THE MUSIC to seem like an overreaction?
ANYWAY,
I don’t understand breaking bad references, but my interpretation tends to be that by the end of DCTL Sammy had snapped enough that Joey had no real power over him, and this is part of why Joey was so angry at Sammy’s disappearance – for once, Joey didn’t have control over him and didn’t know how to take control. I think Sammy’s accusation of “living your sad little lives to please Joey Drew” is projection – that’s what SAMMY had been doing in his 15+ years at the studio, and he now condemns it as pathetic. I don’t think he was willingly or knowingly aiding Joey at this point.
Joey, meanwhile, doesn’t seem to have a master plan so much as an ability to just… roll with whatever happens and make it work for him. He tells Buddy, simultaneously, that this was “meant to be” and “the plan all along,” but that he didn’t actually know what he wanted to do with Buddy until the moment he saw him in the demon’s jaws. So, like, this was just a lucky break for Joey, a moment where the right person just happened to be dead in front of him at just the right time for him to turn that person into a cartoon, and it worked out great!! He didn’t orchestrate this – it was a series of accidents that he retroactively decided was a plan. Joey Drew is an opportunist! And I think the fact that he didn’t find Norman and the others until after “the ink had infected them for days” points to the idea that Joey didn’t plan that either, since he didn’t find them until much later. My reading is that once Sammy started murdering people, instead of getting that under control, Joey just kind of followed him to see if he could take those lemons and make lemonade, so to speak.
That said, I like the idea that Joey knew; it was the first canon-adjacent thing I drew in this fandom! I don’t think they were in cahoots in canon, but it’s still an idea I’m really fond of. There are a lot of little things that could be used to suggest that Joey knew what was going on with Sammy and enabled it for whatever reason (my favourite evidence for this is still the “who does a god worship” convo in The Illusion of Living – the idea that Joey really wanted to see if he could make something Sammy would worship gives him a solid motive here, and becomes interesting when Sammy is the ONLY person whose infection ends up with these religious overtones, see the end of this post), but it’s equally possible from what little we know that Joey was simply negligent, caught up in his own nonsense, and never thought to look into it until Sammy became an obstacle to his own goals.
