Sometimes the most humble of dishes can conjure up a lifetime of memories. One such dish for me is the Durban Style Viennas in a Tomato Chutney with a hint of chilli, masala, turmeric, garlic, mixed Herbs and crushed black pepper. I made this dish because it is time efficient, delicious, plentiful and cost effective. I have over the years made this hundreds of times. The taste and texture constant. Perhaps you should try this sometime. Use Viennas or any kind of sausage or wors. I added a handful of mixed veg to it. This goes well with rice, bread, roti, rolls, pasta or even as a pizza topping. I e been making some Chicken and Mushroom Bakes for Tanny for work. I want to make around 4 different flavours for him so he can have different ones every time and doesn’t get bored with them. . . So out of £12 of ingredients I will be able to make 3 perhaps 4 dozen of them. You can only purchase 8 of them for that price and yes I will work out the cost of gas but I will also say this when I have a baking day I cook all day long. Every so often I pop by the Bluff Towers Mall, on the Bluff in Durban, on errands. Most times I forget, to pop by 786 Big Chicken Flavour. They are situated outside the @bluff.towers Mall, overlooking the parking lot. This past week I wanted to let them get supper sorted. When I remembered what incredible value for money meals they have it really was a no-brainer. I opted for their crispy, golden, crunchy, deep fried Chicken, with its succulent, juicy thighs. To that I ordered lunch too😂. At those prices who wouldn't right? The giant Double Burger patties, on fresh Sesame seeds bun, and generous portions of freshly fried, Homestyle chips was a steal, for only R 39-90. Don't take my word for it... Go see for yourself. Veggie chilli with all the sad veg from the bottom of our fridge! Chilli is great for using up random bits of veg because it's so tasty and all the flavours get merged in there. This one-pot meal is also super budget friendly because it uses cheap veg and beans as protein which are way cheaper and better for the planet than meat. Here I added - 🥕🌰🍅🍠🫑🌽 plus garlic, tomato paste, broccoli stems, and some wilted spring onions with plenty of spices, a bit of water, and a teaspoon of veggie stock powder. How often do we end up with leftover chips from the chip shop? In our house we always do I’m not a huge fan of chips or potatoes and Tanny gets them because it’s cheaper to get the extras he wants with chips than it is without. . . You guys know me though I hate waste so for brekky this morning I popped the chips on a baking tray in the oven. Cut down some leftover bacon and fried it off, broke up some leftover blue cheese I had and added that and added some cream and cooked them off into a yummy creamy sauce for on top of the chips. . . I had thought of adding some mushrooms and cooking those off with the bacon but I have some baking to do so I thought I’d better keep the mushies for later on. . . I reckon this would be great with plant based cream and creamy cheese too. I will say this version is quite salty but at the end of the day it was a chuck together for something fast as I have a HUGE day of cooking ahead of me today. . . Anywhoo away to get the day done!!!
