Tickets to June 7’s Ranch Night BBQ & Concert are available for purchase this morning at 10 AM at duttonranchnight.com. Chris Dutton announced the one-night, one-time-only event to be held at his family’s farm in Flushing earlier this year. 90s country music sensation Sammy Kershaw is slated to headline. Along with General Admission and free overnight parking, Dutton has announced a Premium ticket available for purchase. A General Admission experience is $45, while the Premium offering is $80. Ranch Night BBQ & Concert attendees can expect a unique farm-to-table concert experience, the bulk of the food offerings pasture-raised and hand-fed a few hundred feet away. Everything from Wagyu brisket and burnt ends to ribeyes and chuckeyes, as well as burgers and all-beef wagyu hotdogs, will be available. Additional food options and day-of service will be provided by The Pike 40 Restaurant & Bar.

Sammy Kershaw, the renowned country artist, achieved immense success with three platinum and six gold albums, selling over 5 million records and nearly 100 million songs. Hailed as the “heir apparent” to George Jones, he shaped the ’90s country music scene, drawing inspiration from legends like Conway Twitty. I've re-read IAL SO MUCH the past year, it's my dirty little secret fanfic I recommend to anyone that's into OW fanfics. That aside, I'm curious about the chili cook off bit. Were the chilis based off recipes or stuff you've done before? ( cause ngl link if its recipes you've looked up, pretty please?). The food you write about always looks so good when I look it up (especially the cake!)
It’s my dirty little secret too.  I think maybe one person I know IRL has read it.  Maybe two. 
So I’m copy pasting a response I made to that chapter, because I’m really braindead tonight.  It should answer most of the questions.  Added a few extra details
Chili: so Jesse and Gabriel I just kind of projected what I thought they would know how to make.  Haven't actually combined those ingredients in real life.  But I probably will, because my food porn is apparently leaking into my real porn.
I don't give measurements because I do things to taste.  Sorry.
White Chili Chicken thighs, onions, habanero peppers or jalapenos (basically any hot pepper that isn't red), garlic, cumin, smoked salt, chili powder (I go easy because of the color), white pepper (honestly black works fine if added at the end), white wine or sherry, white beans like navy or canellini, chicken stock, heavy cream/half&half.  Saute chicken with aromatics, spices, add stock and booze, simmer till chicken is done.  Taste.  Add more seasonings as necessary.  Add beans.  Taste.  Drink the booze.  Add heavy cream or half&half at the end, take off heat.  Add sour cream and or cheese if you're feeling decadent.
Chili Saute: Onions (add leeks or shallots if you like), garlic, hot peppers (pickled jalapeno, serrano, habanero, poblano), bite-sized chunks of chuckeye, coarse ground chuck, or brisket.  Season with: cumin, chili powder, smoked salt, Worcestershire sauce and/or anchovies, fruit jelly (eases the bitterness in some of the spices), bay leaf, adobo sauce or chipotle peppers, cayenne pepper,  cinnamon, allspice or nutmeg or both, sherry or beer (I prefer shaoxing jiu, but I'm biased as fuck) Add tomatoes (puree in blender or buy crushed), Simmer till meat is tender, add beans (pinto, black, whatever you have). Add more hot sauce.   Laugh at people who can't eat spicy.

Hot pot/shabu shabu places have become quite popular. They’re perfect for cold days, which are a rarity around here. Tokyo Shabu Shabu is a small shabu shabu restaurant where you can get an individual sized hot pot or a larger hot pot for sharing.
For the shabu shabu you choose your protein (wagyu rib eye, wagyu chuck, angus beef rib eye, chuckeye roll, short ribs, beef bacon, lamb, jidori free range chicken, kurobata pork, seafood or the veggie option), size (S, M, L, or XL), broth (flavored broth is an additional $3), dipping sauces and extras. They also have appetizers, drinks and desserts. Your shabu shabu comes with a plate of veggies and a bowl of rice (refillable).
* Kurobata pork shabu shabu with spicy pork miso broth ($13.99 lunch special, includes free drink): The portion is quite large for a small size (4 oz of meat). The veggie plate had tofu cubes, enoki mushrooms, cabbage, green onions, carrots, ½ a shitake mushroom, spinach and 2 kinds of noodles (ramen noodles, bean thread noodles). The pot was big with lots of broth. You add everything to the broth and cook it yourself. I liked the gomu sauce (freshly ground sesame seeds). The ponzu sauce was okay (sweetened soy). The broth was creamy and had a nice miso flavor. The rice was mushy.  
Tokyo Shabu Shabu is tastier than Jazz Cat but not as good as Boiling Point. It’s more expensive than both. No refills of broth were offered.
The décor looks Japanese inspired with red and black. They were playing some Japanese music videos during lunch.
Look for happy hour specials. The lunch special is available Monday-Friday lunch only, excluding holidays. There are only 6 big tables so you may have to wait for a table. They also have counter seating. They have a frequent buyer card.

Fullblood Wagyu Beef Tequila Tacos

INGREDIENTS
1 Double 8 Cattle Company Fullblood Wagyu Chuckeye Steak
6 Flour Tortillas
Cotija Cheese
Cilantro (to garnish)
Salt
Freshly Ground Black Pepper
Marinade
1 CUP Tequila
1/4 CUP Cilantro
1 TBSP Brown Sugar
1/2 CUP Olive Oil
1/4 CUP White Vinegar
1 TSP Cumin
1 TBSP Chili Powder
Sriracha Aioli
1 CUP Mayo
1/4 CUP Sriracha
Salt
Freshly Ground Black Pepper
Avocado Corn Salsa
1 Avocado (small diced)
1 Ear of Corn (shucked)
2 Tomatoes (small diced)
1 Red Onion (small diced)
2 Limes (juiced)
2 TBSP Cilantro (minced)
1 Jalapeño (small diced)
1 TBSP Red Wine Vinegar
Salt
Freshly Ground Black Pepper

Gas Grill or BBQ
PREPARING THE AVOCADO CORN SALSA
Begin making the salsa by small dicing the avocado, tomatoes, red onion and jalapeño. Place them in a bowl.
Shuck the corn, then cut the kernels off the cob. Add the corn kernels to the bowl (The crunch of raw corn will reinforce the sweetness of the fresh avocado).
Mince the cilantro, and juice the two limes.
Add the minced cilantro, lime juice, and red wine vinegar to the bowl.
Season everything in the bowl with salt and freshly ground black pepper to taste. Set the salsa aside.
PREPARING THE SRIRACHA AIOLI
To make the sriracha aioli, combine the mayonnaise and sriracha in a bowl.
Season everything in the bowl with salt and freshly ground black pepper to taste.
Set the aioli aside.
PREPARING THE FULLBLOOD WAGYU CHUCKEYE STEAK
Combine the following marinade ingredients (tequila, cilantro, brown sugar, olive oil, white vinegar, cumin, chili powder) in a bowl. This is your marinade.
Season the Fullblood Wagyu chuckeye steak with salt and freshly ground black pepper, and place it in a container.
Cover the steak with the marinade by pouring the marinade into the container.
Then, place the steak/container in the refrigerator for at least 30 minutes.
Remove the marinated Fullblood Wagyu chuckeye steak from the container, and place it on a preheated grill at 400°F.
Cook the steak for 6 minutes on each side or until it reaches an internal temperature of 125°F.
Allow the steak to rest for 10 minutes before slicing.
FINAL STEPS
To assemble the Wagyu beef tequila tacos, begin by gently warming the tortillas on the grill for 15 seconds.
Then, place some sriracha aioli on top of the tortillas.
Add a couple of slices of marinated and grilled Fullblood Wagyu chuckeye steak.
Top with the avocado corn salsa, cotija cheese, and fresh cilantro.
Serve warm, and enjoy!

Here's a super fast video of me cooking up flat iron and chuck eye steaks that I got from @crowdcow. I coated them with Tom's Steak Rub from @faithfamilyandbeef, seared them in a @lodgecastiron pan with some olive oil, and then sliced them up with my new 7" Japanese steel santoku knife from @kamikotoknives. What a meal! Great quality grass finished beef, elevated by a massive flavor boost from the rub. And the blade went through the flesh like it was nothing.
