SEOUL, South Korea — In fried-chicken-obsessed South Korea, restaurants serving the nation's favourite fast-food dish dot every street corner.
But Kang Ji-young's establishment brings something a little different to the table: a robot is cooking the chicken.
Eaten at everything from tiny family gatherings to a 10-million-viewer live-streamed "mukbang" -- eating broadcast -- by K-pop star Jungkook of BTS fame, fried chicken is deeply embedded in South Korean culture.
Paired with cold lager and known as "chimaek" -- a portmanteau of the Korean words for chicken and beer -- it is a staple of Seoul's famed baseball-watching experience.
The domestic market -- the world's third largest, after the United States and China -- is worth about seven trillion won ($5.3 billion).
However, labour shortages are starting to bite as South Korea faces a looming demographic disaster due to having the world's lowest birth rate.
Around 54 percent of business owners in the food service sector report problems finding employees, a government survey last year found, with long hours and stressful conditions the likely culprit, according to industry research.
Korean fried chicken is brined and double-fried, which gives it its signature crispy exterior, but the process -- more elaborate than what is typically used by US fast food chains -- creates additional labour and requires extended worker proximity to hot oil.
Enter Kang, a 38-year-old entrepreneur who saw an opportunity to improve the South Korean fried chicken business model and the dish itself.
"The market is huge," Kang told AFP at her Robert Chicken franchise.
Chicken and pork cutlets are the most popular delivery orders in South Korea, and the industry could clearly benefit from more automation "to effectively address labour costs and workforce shortages," she said.
Kang's robot, composed of a simple, flexible mechanical arm, is capable of frying 100 chickens in two hours -- a task that would require around five people and several deep fryers.
But not only does the robot make chicken more efficiently -- it makes it more delicious, says Kang.
"We can now say with confidence that our robot fries better than human beings do," she said.

Investing in 'foodtech'
Already a global cultural powerhouse and major semiconductor exporter, South Korea last year announced plans to plough millions of dollars into a "foodtech" fund to help startups working on high-tech food industry solutions.
Seoul says such innovations could become a "new growth engine," arguing there is huge potential if the country's prowess in advanced robotics and AI technology could be combined with the competitiveness of Korean food classics like kimchi.
South Korea's existing foodtech industry -- including everything from next-day grocery delivery app Market Kurly to AI smart kitchens to a "vegan egg" startup -- is already worth millions, said food science professor Lee Ki-won at Seoul National University.
Even South Korea's Samsung Electronics -- one of the world's biggest tech companies -- is trying to get in on the action, recently launching Samsung Food, an AI-personalised recipe and meal-planning platform, available in eight languages.
Lee predicted South Korea's other major conglomerates are likely to follow Samsung into foodtech.
"Delivering food using electric vehicles or having robots directly provide deliveries within apartment complexes, known as 'metamobility,' could become a part of our daily lives," he said.
"I am confident that within the next 10 years, the food tech industry will transform into the leading sector in South Korea."

'Initially struggled'
Entrepreneur Kang now has 15 robot-made chicken restaurants in South Korea and one branch in Singapore.
During AFP's visit to a Seoul branch, a robot meticulously handled the frying process -- from immersing chicken in oil, flipping it for even cooking, to retrieving it at the perfect level of crispiness, as the irresistible scent of crunchy chicken wafted through the shop.
Many customers remained oblivious to the hard-working robotic cook behind their meal.
Kim Moon-jung, a 54-year-old insurance worker, said she was not sure how a robot would make the chicken differently from a human "but one thing is certain -- it tastes delicious."
The robot can monitor oil temperature and oxidation levels in real time while it fries chicken, ensuring consistent taste and superior hygiene.
When Kang first started her business, she "initially struggled" to see why anyone would use robots rather than human chefs.
"But after developing these technologies, I've come to realise that from a customer's perspective, they're able to enjoy food that is not only cleaner but also tastier," she told AFP.
Her next venture is a tip-free bar in Koreatown in New York City, where the cocktails will feature Korea's soju rice wine and will be made by robots.

Jackass on New Year's Eve/Day Headcanons

New Year's weekend brings me the first headcanon of 2023, Jackass style! 🎉
Johnny: his New Year's resolution is continuing to be a good leader to his fellow castmates, new and old. Ever since Jackass Forever premiered almost a year ago, I have a feeling that his extensive injuries give him an opportunity to focus on his well-being, physically and mentally.
Steve-O: he'd need to slow down on the social media for being too much of a self-centered jerk, not nearly as much as Bam much of 2022, though.
Pontius: even Party Boy has other resolutions besides, well, partying. In fact, he should take up swimming due to the lack of serious injuries, let alone broken bones or concussions. Another resolution is for Pontius to make amends with Ehren after 20+ years of pushing him around.
Wee Man: the shortest Jackass should work on managing a taco franchise more efficiently since he's been just as busy as Steve-O has recently.
Preston: he could reconnect with old buddies in and outside Jackass by doing something simple as messaging them or taking them to a fast-food restaurant for lunch.
Dave: he just celebrated his birthday the day before New Year's Eve, so his resolution is spending more time with his wife and kids while at the same time incorporating mindfulness in his routine.
Ehren: the new Jackass MVP kissed Pontius at midnight after reconciling with him, so he has too many resolutions to list: hang out with Pontius more often, know more facts about the newcomers, swim in the open water or pool, etc.
Poopies: teaching a beginner's surfing class to some children and teens sounds like something this newbie should do because it fits his profession very well.
Jasper: he's caring about his father Dark Shark, so his resolution is to just be livelier at social gatherings.
Rachel: as the first female Jackass mainstay, she should talk to her castmates, especially Ehren, more often due to her strong connection to him. She can also tell her stand-up comedy routines with at least one other newcomer or OG castmate onstage.
Zach: his new year's resolution is to just exercise at least 4 times weekly since I want Zach to not only focus on physical wellness, but also mental health, much like I've been doing the past almost 2 years.
Eric: this British import's resolution is based on his social and romantic relationships, like most if not all his castmates, but he should also look back on what else he can do three years after the COVID-19 pandemic. Specifically, Mr. Manaka should learn a new sport like basketball or water polo.

The Little Things
One of the biggest mistakes people make, I think, is believing that they should only write about their characters doing awesome and heroic things. Sure, heroes do heroic things, but they also have lives outside of their heroic derring-do… and what takes places outside of their heroism can tell us a lot about who they are as a character.
Take someone like Timmy from The Unconventional Heroes Series. Sure, he’s necromancer, but he’s not just a necromancer. When he’s not saving the world, he has hobbies and more mundane concerns. He needs to find the money to maintain and upgrade his castle. He has to watch over his various business interests and scout for new opportunities. He has to educate his apprentice and a young dragon. And he likes to tinker with runes, seals, and all sorts of other things.
Showing the reader what Timmy gets up to when he’s not locked in mortal combat helps flesh him out as a character. It also makes him more likeable since he’s not just some invincible hero who walks in, gets the job done without a scratch, and then disappears until he is needed again. He’s a person with hobbies, friends, and all sorts of mundane concerns. Moreover, when Timmy does come up with some obscure piece of information or some crazy strategy that can work, the reader doesn’t feel like it’s coming from nowhere. Timmy’s background – what he does in his spare time – goes a long way toward explaining why he has such a bizarrely broad knowledge base and why he makes the decisions he does.
Knowing what your characters do when they’re not out on adventures is also important because if you can’t imagine them outside of the context of an adventure, how well do you really know them? Ask yourself, if your characters walked into a fast food restaurant, how would that go? I can already tell you how that would go with Timmy and the others.
Timmy probably knows exactly what he wants because he has been to the restaurant before. It’s also entirely possible that the franchise is owned by a former Grand Necromancer looking for a more lucrative but less dangerous occupation.
Katie has her eyes on the kid’s meal that comes with a plush toy, but she doesn’t want to order it in case people think she is childish. She orders a burger meal instead, and Timmy just gets her the kids’ meal anyway, saying that he likes the plush toy it comes with. He doesn’t care what anyone thinks, and she’s totally getting it afterward anyway.
Gerald orders what looks like the least greasy thing on the menu. The problem is that everything is greasy. Oh well. He also ends up getting a kid’s meal, so he can give the toy to his youngest nephew.
Avraniel orders a burger meal. She doesn’t care that it’s greasy. It tastes good.
Old Man thinks about ordering a salad before realising the futility of it, much like Gerald. He decides to get a burger of some kind, albeit with the healthiest toppings he can get, which isn’t saying much.
Spot wants to order ten of everything. They talk him into ordering enough for five people with the promise that he can have more later. He doesn’t want a plush toy. It’s of a dragon, but he thinks it looks lame, and it’s way too small. A dragon plush toy should be huge and awesome. He changes his mind when he sees that the plush toy is of a black dragon… he can have someone add the white spot on the snout later.
Amanda points out that junk food is actually an ancient vampire delicacy since most of them are massive hedonists. She’s never been particular fond of it, but eating it does remind her of some old friends who she hasn’t seen in a while. She orders fries and a cola.
Daerin orders enough for two people and devours it hungrily, all the while arguing that dwarves could have made it better. That doesn’t stop him from ordering another burger, though.
Characters don’t just exist when they’re out on crazy adventures. They exist as regular people doing regular things. Giving your characters insight into those can really help them appreciate and like your characters more.
Incidentally, I’m getting used to typing with a bandaid on my finger. I cut my other finger while using scissors. I don’t even understand how that could happen, but the pain doesn’t lie.
