These ribs turned out terrific!! Loved having an afternoon just to take a break and enjoy the sunshine here in the Alamo City!! Kept my Weber a little hotter than the temperature outside at 104F 😳☀️🔥 . Below is what I use as my go to base rub. You can also incorporate other spices or herbs like ginger, mustard or adjust the level of heat to what you like! For me, the heat is just right! 🌶 ❤ . Lola’s Spices Cajun Blend Brined Salmon 🌶 Brine: 1 Tbl. Lola’s Spices Cajun blend 1 Tbl. Salt 1 Tbl. Sugar 1 lb. Salmon 1 cup water 🌶 Prep for cooking: 2 Tsp. Lola’s Spices Cajun Blend Olive oil 🌶 Drizzle with olive oil and sprinkle with Lola’s Spices Cajun Blend 🔥 Oven Method: Using a 13 x 9 in. baking dish, stir ingredients and pour over salmon. Refrigerate 1 hour or up to 24 hours. Remove salmon, place on a cookie sheet and cook in the oven at 350 F for about 20 mins. 🔥 Smoked Method: Using indirect heat, place salmon skin side down on grill grates or if you prefer use a grill mat and smoke at 225 F or until the internal temperature reaches 145 F. 🔥 Sour Cream and Dill Sauce 🌿 3/4 cup Sour Cream 1 Tbl. Today, I'm going to relax and enjoy some delicious ribs and tasty beverages! 🔥 Tomorrow, I will welcome 27 kiddos to 5th grade- grateful to be in a district that provides options to families and teachers and the support to make that happen!! 😍 Haven't been this nervous since- well NEVER in all the years I've been teaching! Lola's Spices Cajun Rotisserie Chicken with a Texas version of Alabama White Sauce 🔥 3/4 cup Mayonnaise-I used @dukes_mayonnaise 1/3 cup Grated Horseradish 1/3 cup Red Wine Vinegar 1 Tbl Garlic granulated 1 tsp Worcestershire 1/2 Tsp Hot Sauce- I used @crystal.hot.sauce 1/2 Tsp sugar 1/2 Tsp salt 1/2 Tsp black pepper 🔥 Combine all ingredients and chill for 20 mins. 🌶 I coated the chicken with Olive Oil and sprinkled all over and in the cavity with my Lola's Spices Cajun blend and stuffed it with an onion. Lola’s Spices Cajun Easy Étouffée and Crab Cakes ☆ 🌶 ✔4 Tbl Butter ✔1/4 cup AP flour ✔1 Tbl Anchovy paste ✔2 Tbl Lola’s Spices Cajun Blend ✔8 oz. Tomato Sauce ✔1 cup Water ✔1 pinch sugar 🌶 For roux, heat butter and flour and whisk frequently over low to medium heat until it is the color of caramel, about 10 mins. Be careful not to let roux burn. 🌶 Combine water, Lola’s Spices Cajun blend, anchovy paste and tomato sauce. Slowly add sauce mixture to roux over low heat. Continue to stir until throughly mixed.
