my nemesis is phoning it in again for this video where he is just like “you can make pizza dough without measuring !” and proceeds to not only measure most of the things but then sure, NOT measure the flour at all

look, as someone who has spent the past two years working on truly learning and internalizing pizza dough and how to get Great results, you need to know what you’re putting in there every single time.

“but ryan lots of bakers say you might need less liquid depending on humidity” that’s bullshit. that’s horsepucky. they are trying to cover their bad recipes up by putting some of the blame onto you instead of with them and their bad recipe.

what the environment DOES do to your pizza dough is affect the rate at which it ferments, the rate at which yeast multiply and produce gas. if it is hot and humid you will know if your dough is not strong enough because when the yeast produce gas more quickly, they will move your dough and create bubbles and if your dough is not strong enough to hold them in, your dough looks weird (but you can stretch and fold it a few times and reball it and it will be fine usually)

the only thing i adjust in my dough recipe is how much yeast there is in it to start with. i will use more yeast if i know i will not have time to make them naturally, and i use less yeast if i want to do a room temperature ferment or a long fridge ferment

if you want okay pizza sometimes and bad sometimes, and probably inedible pizza sometimes, i highly recommend watching his video because that’s what’s going to happen to you

looks like shit to me. he has millions of subscribers.
