Red Onion Pickle

Another jar of a vegetable pickle in a bright hue, this delicious Red Onion Pickle is simple to make, and gives a tasty, bright pink treat (almost a sweet!) to liven up a salad or enhance a ploughman’s lunch!
Ingredients (fills a 1/2-litre jar):
1/3 cup caster sugar
1 cup apple cider vinegar
1/2 cup water
2 large red onions
In a pot of boiling water, sterelise a clean jar with a top with a rubber coating.
In a small saucepan, combine caster sugar and apple cider vinegar. Stir in water, and bring to a slow boil over a medium flame, stirring occasionally until sugar is dissolved. Keep warm.
Peel red onions, and cut them into thin slices.
Carefully remove jar and lid from their pot of boiling water, and dry them thoroughly.
Arrange red onion slices into the jar,up to the top.
Gently pour the hot pickling liquid over the onion slices, right up to the rim, pressing on the onion slices gently, to submerge them well. Close jar tightly. Leave at room temperature, at least a few days, before eating.
Once opened, keep your Red Onion Pickle in the refrigerator.

i’m quick pickling mushrooms! i’m rly excited about it, i’ve never pickled mushrooms before.
i just used my usual pickling mix of garlic, mustard seeds, and 4 types of peppercorn, but i’m out of dill so i used rosemary bc i know it goes well with mushrooms and i have like a huge paper bag full of rosemary that i picked and dried so. like i use rosemary in everything.
i don’t like sweet pickles so i used equal parts sea salt and light brown sugar* (about 1 teaspoon each) with equal parts of water and white vinegar (1/2 a cup of each) for my brine and i’m gonna let it sit in my fridge overnight, tho i’ll probably test them in at least a few hours and then i’m going to fry them bc i really like fried pickles but i didn’t want to buy cucumbers so i’m pickling mushrooms instead

The Quickest Dill Pickles! 🥒

Extremely good for how quick they are made!
- Roll dill with the jar or a rolling pin to bring out the flavor - Put Dill at the bottom of Jar
- Cut a cucumber to your favorite pickle shapes - Put the slices in the Jar
- crumble up a Bay Leaf
- Chopp up some garlic
Add it all to the jar!!
The Brine :
- 1 Cup Water + 1 Cup Distilled Vinegar
- Salt
- Mustard seeds
- Coriander seeds
- Add Chilli Flakes (If You want Spice)
Heat it up till the Salt is Almost / all the way Disovled
- Add mixture to pickle jar
- Cap Jar
- Refrigerate For 2-3 Days
After 3ish days you'll have some delicious pickles ready to go!!!

Chervil Courgette Pickle

I like the bite and the crispness of pickled vegetables. They have this deliciously fresh taste, this delightful brightness. Like this beautifully green Chervil Courgette Pickle; and, until opened, it keeps long enough so that you can enjoy a taste of Springtime in the cold months. I do prefer it in season though, a few slices scattered onto goat’s cheese generously spread on a slice of bread, or tossed into a salad!
Ingredients (fills a 1/2-litre jar):
1 1/2 teaspoon fleur de sel or sea salt flakes
1 teaspoon caster sugar
1 1/2 cup (filtered) water
1 large courgette
2 fluffy sprigs Garden Chervil
1 teaspoon coriander seeds
In a pot of boiling water, sterelise a clean jar with a top with a rubber coating.
In a medium bowl, combine fleur de sel, caster sugar and water, to make the brine. Stir well until salt and sugar dissolve. Set aside. 
Rinse courgette thoroughly, and pat dry. Cut courgette into slices.
Carefully remove jar and lid from their pot of boiling water, and dry them thoroughly.
Arrange half of the courgette slices into the jar, tucking a few leaves Garden Chervil between them. Sprinkle with half of the coriander seeds. Repeat, with remaining courgette slices, Garden Chervil and coriander seeds. 
Pour the salt brine over the courgette, right up to the rim. Close jar tightly. Give a little shake, and leave at room temperature, at least a couple of weeks and up to six months, before eating.
Once opened, keep your Chervil Courgette Pickle in the refrigerator.
