JiHo is finally back from NCT’s dungeon and there already have been so many cute moments of her with the Dreamies <3 So here’s a little compilation of those with some of my older favourite moments

JiHo looks so cute during this interview! Focus on how the boys keep looking at her with big smiles and sparkling eyes, they’re all soft for our baby girl
“Fans have been waiting for a long time. Finally NCT’s youngest brothers have returned as 7. Back with a full-length album, welcome NCT DREAM!” JiHo announces standing up whilst clapping her hands.
7 boys appear on screen, waving towards the camera, cheering and with wide grins on their faces, they sit down on the couch and chairs provided for them. As soon as they are seated Mark counts down for their greeting “One two three! To the world! Here is NCT! Hi, we’re NCT DREAM!” JiHo smiles and applauds again, glancing down at her cue cards.
“It’s nice to see all 7 of you guys back together again and this time you’re back with your first full-length album. Hot Sauce! I know the fans have been really excited and curious about the album, could anyone perhaps introduce it for us?” Jaemin and Renjun look impressed by JiHo’s words which seem to flow effortlessly off her tongue. Chenle then goes ahead and introduces the song and Mark follows to introduce their title track.
JiHo always avoided being the host for older NCT content. I’m so surprised at how she talks with such confidence and ease! Well done JiHo <3 
“Just before you guys performed some of NCT DREAM’s biggest hits ‘BOOM’ and ‘Ridin’‘. Normally this song is performed by 6 members right?” JiHo looks up at the boys only to have to try and keep herself from laughing. “Isn’t that something you know already, JiHo-ssi?” Questions Renjun with a smirk on his lips causing the other boys to snicker. The girl clenches her jaw slightly and mumbles, “That was a rhetorical question Renjun-ssi.” She sighs deeply before continuing to the real question. “This time Mark performed with you guys as 7 members. How was it? Do any of you have any funny stories about practise?”
Chenle puts up his hand to indicate that he wants to answer and JiHo gives him a nod. “Actually, when we started practising for BOOM and Ridin’, Mark hyung couldn’t be there because of another schedule. So to figure out our positions we got some help from one of our other (NCT) members.” The grin on his lips almost reaches his eyes and the camera pans to JiHo who lowers her head, trying to hide her reddening cheeks. “Ah~ They must have done a really good job...” “Yes, she helped us with a lot of preparation for this album.” Haechan’s ears perk up at the mention of a ‘she’ and when they all realise Chenle just exposed JiHo helping the group out - what most likely should have been a secret - they swiftly move on to the next question.
Chenle spoiling things even by accident, why am I not surprised?
But I am also super happy to know JiHo spent a lot of time with Dream during her hiatus ^^

During NCT U’s win for ‘Make A Wish’ JiHo wasn’t promoting at the time. Yet she came over to the shows once in a while to support the boys.
It’s the middle of the song when Taeyong and Jaemin turn to the side and motion someone to come over. They send the person in question a few persuasive looks before JiHo waddles onto stage and joins the boys, hiding behind Jaemin and Taeyong. She’s wearing a mask and a bucket hat that cover most of her face.
Jaemin flashes a big grin when he feels JiHo’s hands slitter around his waist while Taeyong coaxes her into singing with them by practically shoving the mic in her face. Jaemin wiggles around for a bit and when he gets released from JiHo’s grip he pulls her to his side and Taeyong hands her the mic to sing along with everyone for the drop of the song. Once the chorus starts again and Shotaro sings his part, everyone is jumping and dancing along.
JiHo has her arm around Jaemin’s waist while Jaemin has his arm around her shoulder while they happily sway from side to side.
Jaemin and JiHo are such an underrated ship! They’re so soft I love them <3

“Do you see that?” JiHo frowns at the camera before moving her body slight revealing Doyoung and Haechan walking around with Doyoung’s arm around the younger boy’s shoulder. “Jungwoo and Mark stole Yuta away from me as well, so now I’m all alone.” She sighs deeply.
The two boys behind her catch her little monologue and turn to her in amusement. “What are you gonna do about it hmm?” Haechan says in a teasing tone and pulls Doyoung closer to him. “I’ll steal one of your best friends.” She then turns to Renjun and reaches out to him but he pulls his hand away causing JiHo’s jaw to drop in bewilderment and Doyoung and Haechan to start laughing. “Why?” “I’ll be with Jisung, bye bye!” Renjun waves at JiHo a smirk appearing on his lips.
“How did stealing one of my best friends turn out for you?” The teasing tone of Haechan’s voice causes JiHo to roll her eyes and she turns to the camera. “Czennie! Look at how I’m being treated by these guys. Unbelievable.” She scoffs and squints her eyes at Haechan before walking away.
A few moments later, JiHo is seen getting a piggyback ride from Jeno, while they are running away from Haechan of whom they just took some embarrassing pictures. “Delete them!” “Pay back! Loser!” JiHo yells and the other boys look at them, laughing as Haechan tries to reach the phone JiHo’s holding high in the air. Her being on Jeno’s back gave her enough extra inches so that Haechan couldn’t reach it without accidentally hurting someone.
“Be careful kids.” Taeyong warns between suppressed chuckles while Kun, Jaehyun, Jaemin, and Jisung look slightly worried that someone would potentially get hurt. 
I know I said JiHo and Jaemin are an underrated ship, but Jeno and JiHo are really something else. I hope we get to see more of their interactions, definitely after that one picture Jisung posted on Bubble where Jeno was pretty much suffocating her in a hug.

That was it for today! I’m sorry this is a shorter video, but hopefully we’ll get to see more JiHo and Dream interactions in the future so I can make more videos.

Side Note: There will definitely be some “lore” posts coming in the near future, pretty much explaining or at least giving a bit more backstory as to why JiHo was gone/what happened and what’ll be happening in the future. I’m just very busy/not feeling too well lately so I don’t have a lot of energy and time to spend on writing atm. Just updating you guys on the current “status” of this blog.

Chapter 49: Playing Dress Up
You were woken from your sleep, by a kiss on the lips. You opened your eyes to see Kylo dressed in his usual uniform. “What time is it?”
You hear him chuckle, “It is time for you to get up Kitten. Your ladies-in-waiting will be here at any moment. I have things I need to attend to. So this is goodbye until dinner,” said Kylo who then left down the hall and out of your chambers.
A few moments later the door opened again, Adlez and Olivia-Rose were followed by the lieutenant, Cardo, and Ushar. You went to meet them.
You heard a distorted wolf whistle, “Looking good Pet,” said Cardo ogling you. You immediately crossed your arms in a failed attempt to cover yourself. You could see the lieutenant turning red and averting his gaze. Olivia-Rose rushed into your dressing room getting you a robe.
Adlez let out a loud gasp and turned around to face him. “That is no way to speak to her.” You could hear the anger and authority in her voice. They were almost chest to chest as Cardo challenged her.
Luckily Ushar threw his arm in front of Cardo pushing him back. “I can speak to her how I want,” replied Cardo.
Once your robe was firmly secured around you, you approached the group. “No, she is the Supreme Leader’s match, you must treat her with respect,” said Adlez.
Cardo puffed up his chest once more, pressing against Ushar’s hold on him, but you spoke before he could respond. “Especially when the Supreme Leader has already reprimanded you for such in my presence once before. Shall I call him down,” you ask with a tilted head and cocked eyebrow. You were not going to be playing my horse is bigger than your horse this morning.
You heard Ushar release a distorted laugh, “Lady Ren has got a backbone Cardo, you better not test her. I like her too much.”
A smirk found its way to your face. You watched as both of them backed away, to go stand near the door. Adlez gave one last humph before turning around and assisting you in your dressing room and told the lieutenant to wait in the dining room.
Once the door shut behind you, Adlez quickly joined Olivia-Rose in getting you ready. “How did last night go m’lady,” asked Olivia-Rose.
“Better, he learned some new boundaries. Like keeping his hands above my clothes.”
Both of the women laughed at this, to which you smiled in response. Their hands expertly taking care of you, dressing you in a similar relaxed outfit as yesterday morning. This time your hair was done in a casual elegant style, very old Hollywood. You could tell that Adlez was an expert in this style.
“Now that he has learned this, you can use it to your advantage m’lady. Teasing him and using any additional privileges like a bartering chip,” said Adlez.
“I like that idea. Although I may occasionally extend my favors as I wish.”
“Obviously, the Dark Lord is a handsome man. If I were you it would be very hard to keep my hands to myself,” said Adlez, finishing putting on a necklace for you, while Olivia-Rose applied your makeup.
“I have really tried to refrain from touching him anywhere else but his head. I might lose my battle with him as it would be too much for my brain to handle, and we might cross my imaginary boundary,” you replied. “Also, why did he choose you for me, if he was going to know that you would be helping me mold him into my will?”
Adlez let out a laugh, “He chose me because of my experience, my ex-husband was a diplomat on Corellia. Unfortunately, because the First Order took over his and my position were cut, and I no longer needed to be married to him. We are better off not married anyway. And because of this position, I now have access to a bunch of eligible bachelors onboard,” she gave you a wink. You saw Olivia-Rose blush at this too.
“I wouldn’t know about the selection you have available, just promise me you two won’t get into too much trouble. I already have my hands full with the Supreme Leader.”
Both of them laughed at that. You all got up to go have breakfast, the lieutenant was waiting in the dining room for you as were Cardo and Ushar.
“Would anyone like anything while I order? I know to get you a coffee lieutenant.”  You looked around to everyone.
“Coffee for both of us m’lady,” said Olivia-Rose referring to Adlez. Both Cardo and Ushar shook their heads.
While waiting for your food to arrive Ushar asked, “So what princess lessons are on the agenda today?” He turned his helmeted gaze to your lieutenant. Who swallowed back a lump of fear before responding.
“Lady Ren is free until her lessons after lunch. After they are finished she has dinner with the Supreme Leader,” replied Mitaka.
“So the princess has a free morning, what shall she do with it,” teased Cardo. You saw Ushar hit him again.
Adlez looked at you and said, “If you don’t mind a suggestion m’lady, Olivia-Rose and I would love to spend the morning styling you in various ways for different occasions. A test really to see what you like and what you don’t.”
You heard a distorted snicker come from Cardo, who turned to Ushar, “They are going to play dress up.”
You grew your backbone once more, “If you are going to be rude Cardo then there is no need for you to be here. You can safely guard me from someplace else if it is too difficult for you.”
You watched him stand and clench his fists before Ushar hissed his name and told him to get out. Ushar muttered apologies to you and the others before stepping out of the dining room himself.
You finished your breakfast with some idle chatter with everyone. Not really commenting on this or that. Preferring to eat without much distraction. Once you were finished you saw Olivia-Rose start to take the dishes into the kitchen and you told her to stop, that the droid would take care of it. She was just as out of place as you once were, not knowing how things fully worked.
You entered the dressing room and dismissed the lieutenant until your lesson. Both women seemed to be very happy changing your outfits and accessories and your hair and makeup. Taking you through this scenario and that one with outfit changes. Deciding what works together and what doesn’t. Olivia-Rose did well as she was there when you bought most everything.
“Now we should discuss your routine. I think it would be best for you to take baths every other day, to maintain healthy skin. We should also get a full regime of face masks in the works to keep your skin looking as young as possible,” said Adlez. You trusted her opinions on this, as her skin looked flawless. “We should also get a regular routine of body hair removal and nail care. I will work something out with the lieutenant to always have it in your schedule one way or another. Not taking care of yourself is one of the quickest ways for a man to lose interest. And it is in our best interest to keep the Dark Lord interested in you.”
You did take care of yourself but not to the degree that Adlez was speaking. It sounded like a lot of upkeep and work. But you trusted her, after all, she was right, you needed to keep Kylo interested in you, even though he had shown no real example of not doing so something in your gut told you that something was coming.
“I was wondering if we should take lunch ‘outside’? I would love to feel the sun on my face,” you asked them both.
“Of course m’lady, just let me check to make sure the simulated sun doesn’t give off any UVA UVB rays. Otherwise, we will have to lather your skin in sunscreen. The sun is aging’s best friend and one of your worst enemies,” said Adlez. She then left the dressing room to go check. She came back and informed you that it was all clear.
You three went to the patio and enjoyed the simulated sun during your lunch. This is where both the lieutenant and general found you when it was time to begin your lessons again. You all headed upstairs to the large sitting area once more.

“We will be throwing a formal dinner in a few days with some of the leaders of some First Order planets. You and the Supreme Leader are expected to be in attendance. I will also be there. This is your official debut as Lady Ren, so it will be very important. The Supreme Leader has left it in our hands to get you ready,” said Hux.
You were nervous. You were going to be at a formal dinner, with lots of people you didn’t know, who would be expecting you to be a lady when you weren’t one. This was something that you hoped Kylo would spare you from or something that he would have at least had the courtesy of telling you himself.
You were immensely grateful for Adlez and Olivia-Rose now. They would help you prepare yourself so you didn’t look like an idiot.
“Will I have lessons as to who these leaders are? And to what the rest of the galaxy is,” you ask fiddling with your hands.
“Of course m’lady, it is not my intention to allow you to attend unprepared. It is also the Supreme Leader’s wish for you to be as prepared as I can get you. You will not be alone at the dinner he and I will be there along with other First Order High Command members,” consoled Hux.
“Will Pryde be there?”
“Yes, m’lady, unfortunately, he will be, some of these leaders are the ones I was telling you about. Ones that were Empire sympathizers who like him. But this will be a good time to showcase yourself as someone they can trust. Do not worry, the Supreme Leader will be the whole time with you.” You could see the earnestness in his face. It calmed your nerves a bit.
“When will this formal dinner take place?”
“In a week, seven cycles time. We will be on the other side of the galaxy then near Arkanis. And it will take place here on board the ship, so you will be perfectly safe.” His reassurance did help, as did the date of the dinner. Although you knew that the anticipation may kill you. You were nervous, to say the least.
“Thank you for informing me general, is that all for today?”
“Yes, m’lady. I believe it is now time for you to prepare for dinner.” And with that, both he and the lieutenant left.
You and the girls made your way downstairs to your dressing room. They got out another simple dress and started working on another simple but elegant hairstyle, one that you had worked on earlier that day.
“Do not worry m’lady, we will have you prepared for that dinner, none of those old men will know what hit them,” said Olivia-Rose, voicing herself confidently for the first time.
“Exactly, we will make you the belle of the ball as they say. No one will be able to resist your charm, and if we do everything right, so will the Dark Lord,” said Adlez.
“I know, but I would have preferred him telling me this news versus the general. After all, I am his match, and this is my debut,” you said voicing your displeasure at the situation.
“Well then m’lady you will just have to show the Dark Lord that,” said Adlez while she changed the initial lipstick she was going to hand you. She then picked out a more alluring perfume for you to wear along with a pair of heels. “This will help show him just that. Keep him at arm's-length and he will be eating out of the palm of your hands in no time.”
You liked her thinking a lot. She was right; you needed to show him how it displeased you to have others tell you things that he could have easily told you himself. You were now playing his game, and he did not hold all the cards, but neither did you. But you did have a few aces up your sleeve and now was the time to play one.

Homestuck Liveblog #153
UPDATE 153: All the Pieces are Here
Last time Gamzee had completely fooled Terezi, and by extension, me. Yeah, he’s right now beating her with no remorse at all, and it’s awful to see. Yikes. Also, Jane is now asleep but her body, still under control of the tiara, has latched on Aranea like a tick. So let’s continue from there!
Writing this paragraph before starting. I’m predicting there’ll be a minimum of dialogue, the next fifty pages should have lots and lots of images. It’s bound to pass through real fast, isn’t it? Maybe I’ll go for 100 pages.
All these glitches make everything more ominous, in my opinion. It’s as if the world is going to shatter into pieces in any moment. Chances are that won’t happen, but who knows, maybe the end of Homestuck is the glitches making the universe explode. Thanks for nothing, Lord English, destroyer of paradox space.
Because Jake’s death wasn’t heroic or just, he revives, this time without hope powers. He is also right beside Terezi and Gamzee, just...watching. Gamzee continues hitting as hard as he can, dang. I’m kind of glad the glitches are obscuring the situation a bit. Rose, horrified, shouts for Gamzee to stop.
ROSE: Or, wait.  ROSE: Is this some sort of blackrom thing?  ROSE: I certainly hope not.
What the—Rose! This isn’t the time to be wondering if this is an obscure and weird alien romantic ritual! Stop standing there, go help Terezi! Even if it were a black romance thing, I think no one wouldn’t blame Rose for intervening. Terezi is getting her face smashed against the pavement. Anyone would intervene.
ROSE: I am the actual worst auspistice who ever lived.  ROSE: THE ACTUAL WORST!!!
Damn right you are; you’re just standing there! And Jake isn’t really doing much better, he’s just standing there and watching Terezi being suplexed. I know in real life a lot of people stand around and do nothing when they see someone being attacked or anything, so it isn’t something that came out of left field, but this is still rather frustrating to see. Gamzee slams Terezi so hard against the concrete it breaks, and she’s now hanging over the lava. Augh.
Kanaya and Karkaroni arrive right in that moment, finding Terezi in danger. There’s a rather cool sequence of lava seeping into the Skaia in Jane’s fork, and Jake and Rose finally intervene. Jake does it meekly, just asking Gamzee to kindly stop killing Terezi -- ...fine, Jake, you do that – and Rose takes a more hands-on approach, getting her wand ready. About time, Rose! Tge blast misses and impacts near Jake, making him fly away. Karkaroni had enough, he brandishes the sickle and swears to make a fight. Up on the building, Aranea struggles to pick up Brain Dirk’s katana with her psychic powers – no idea how that didn’t vanish away as well -- and then she arrives.

The Condesce is pissed. Oh, gee, who’d have thought that derailing the session like this would make her angry? Haha! Do you have a plan to counter the Condesce, Aranea? Did you expect her to arrive so soon? Everyone who is in the session seems to have converged in one place, this is getting good!
Aaaaaand because Hussie is like that, right when it gets good, it’s time for the so-called main act of Act 6 Act 6.

Oh, jolly. Well to his credit I’m happy it was now and not in middle of the intense events that are likely to happen. Now that’d have been annoying. Better get this Caliborn thing out of the way before things happen here in Jade’s planet! Besides, I admit I’m a bit curious how much Caliborn has progressed now.
Looks like he’s confident enough to mess with the manga book. Why do I have this strange sense of foreboding...again? I have it all the time when it’s about Caliborn, haha...okay, let’s get done with this. What artistic work do you have to show now, bud? As usual, here’s the warning: there’s a chance I won’t have much to comment about Caliborn’s antics. By now, dear readers, you may be aware I’m not a diehard fan of him. By now I tolerate him, but I’m not exactly reading his sections with excitement. Once again, I’m sorry for that.
Looks like Homosuck is getting into its equivalent of Act 5. There are the trolls. Krabkrab, Honk Friend – ‘friend’?! Is there something you’d like to share with the class, Caliborn? – Cape Douche, Smelly Horse Man, Other Guy, and Bull Horn Wimp. Oh, and all the female trolls, too, with no pejorative name other than ‘tha bitches’. Hah! Saw it coming.
The Beforus trolls are just everyone flipped and with a negative color scheme. Yeah, that’ll do...for the five seconds the trolls mattered. All these pictures go to the trash, because Caliborn has something better to show.

Well, to Caliborn’s credit, he has improved a lot from his first drawings, and he followed all the instructions about how to draw manga. Never let it be said Caliborn doesn’t motivate himself to improve himself!
This is truly “the yaois”. Manga Dave and Manga Karkat are here. What they do, hm, well, let’s say they’d both be upset to know how they’re depicted here.
IF YOU'RE CONFUSED, BASICALLY THE IDEA IS. YOU PRETEND THEM TO LOOK MORE LIKE GIRLS. TO MAKE IT LESS WEIRD FOR EVERYBODY WHEN THEY DECIDE TO TOUCH EACH OTHER. 
So that’s the key to draw manga. Haha! I know a handful of people from my school that’d have taken serious offense by that! Always with the finger on the pulse, Caliborn, eh?

...that is not what I expected. Dear reader, imagine that this here is what’s destroying paradox space. Imagine the big bad, Lord English, looks like that. Good thing he doesn’t, eh? Yeah, the skull, the hulking figure, and the billiard eyes does wonders when it’s about making someone threatening.
John arrives in middle of Caliborn’s games with his OC, and isn’t happy at all to see Caliborn. Thought so, what after seeing the kind of playing Caliborn does with those bad drawings of his friends.

you're the one who vriska and her pirate pals are all trying to stop! it was you who put all this into motion in some way i don't really understand! which means you're responsible for like a trillion people dying, and universes blowing up, and all my friends getting scattered around and acting like idiots, and my dad being dead!
...huh. Well, that’s certainly...a bold accusation, John, and without anything to back it up, too. If what John said partly influences Caliborn to start doing everything he did once he was Lord English, hah, I wonder how John would react to that. It isn’t too farfetched to have that possibility in mind, I’d say, but if that were true, it’s possible there’ll be a second John to tackle the first one soon.
Turns out Caliborn is saying his monologue loud enough for anyone around to listen! I thought the narration was just text, not that Caliborn was actually saying it. Hah! It’d be kinda endearing if it didn’t come from Caliborn.
And then comes ‘game over. A flash file in Caliborn’s intermission. Um, well, that sounds a tad promising! Flash files are almost always great, I don’t see why this would be any different, Caliborn or not.

How Do You Know if a Canning Recipe is Safe
How do you know if a canning recipe is safe? Or what do you do when someone isn't following canning safety? Is there a way to tell if a jar of home canned food someone has given you is safe?
These are legit questions and concerns. I'm thrilled there are so many people getting back to growing and preserving their own food, but with that, there's a lot of outdated and plain dangerous canning procedures and recipes floating abound.

Safe canning is pretty straight forward.
Water Bath Canning Safety 101
Water bath canning is when you are processing the contents of a mason jar in a pot of boiling water for a specified amount of time. In order for something to be safely water bathed canned, it must be 4.6 ph or lower on the pH scale because botulism does not grow in an acidic environment.
This includes most fruits (but not all, bananas and tomatoes to name a few), pickled vegetables, and tomatoes with added acid. Tomatoes don't always measuring at 4.6 or lower on the pH scale, which is why we always added acid when we are canning tomato sauce and tomato products.
If you're following an updated pickling recipe that that brine ratio has been tested so that we know that the overall contents of the jar is 4.6 or lower, we're good to go.
Pressure Canning Safety 101
All vegetables that are not pickled, all meat, and soups, have to be pressure canned because it's a non-acidic environment. Botulism spores can grow and the only way to kill those spores without the acidity level being 4.6 or lower is to heat the contents of those jars up to the temperature when your pressure canning, which for your non-acidic vegetables and meats is going to be 248 degrees Fahrenheit or higher, which is your 10 pounds of pressure.
If you live 1001 feet above sea level, so you are higher altitude, then you're going to be using 15 pounds of pressure for your vegetables and your meats and your soups and those combination of things.
How do you know if a jar of home canned food is safe
You cannot tell by looking at a jar of home canned food if it is safe, just because it's sealed, does not mean that it's safe. A seal just means that you had vacuum action from it getting hot and cooling down. A sealed jar is in no way an indication that the food is safe or not.
If someone that you don't really know their canning practices or their kitchen, but someone hands you a jar of home canned food, you might be wondering like, “Oh, goodness. How do I know if this was canned properly,” right? That's a legitimate thing. I don't think we should feel bad for wondering that. The safety of our family is something that's really a high priority.
And this has happened to me. I've had people bring me home canned food, and I'm kind of like, “Oh, man. I don't know how they've done this. If it's been followed with safe procedures or not.”
Simply ask. “How did you can this?” And not like you're interrogating someone or in a snotty way or condescending. But just simply ask, “Oh, what's your recipe or how did you go about doing this? How did you can this?” They'll tell you.
Warning signs it wasn't canned properly
Not pressure canning vegetables and meat. If it's vegetables or meat in a jar and they start explaining to you that they water bathed canned it for three hours, then you know that that is not safe because that has to be pressure canned.
Not processing via water bath. They may start sharing if it's a jam or a jelly recipe (if it contains low acid fruits like bananas or pumpkin this is a big indicator it's not safe), they may share with you, “Oh, we just boil the contents and you put it in a jar, and then I just tighten down the lid and the seal, and it just sealed,” but they didn't process it in a water bath. Then you know that is not safe.
Unsafe canning methods are jar flipping, oven canning or open kettle canning. That's when people have taken usually with jam or jelly, sometimes with pickled foods. So they've taken the hot contents, right? Poured it into that mason jar. They've put the lid on, screwed the band down, and sometimes they'll flip the jar upside down and then later flip it upright and it will seal because it's simply sealing because hot and then cooling has created a vacuum action.
The whole point of processing it in the water bath is to kill any bad bacteria, and it doesn't matter if you have sterilized the jar and then you're pouring that boiling liquid in because bacteria is just everyone. Botulism spores are actually everywhere, you guys. We come in contact with botulism all the time. It's when it's in a sealed jar that doesn't have oxygen in it, which is a sealed canning jar, that it multiplies and becomes an issue.
When we are canning acidic foods we process them in the water bath is to kill any bacteria because with bacteria, it doesn't matter how fast we're pouring into a sterilized jar and slapping that lid on and screwing that band, bacteria can get in there. Our hands are washed and of course we're practicing good sanitary things in our kitchen. That's just the nature of it. That's why a lot of times in the old days they would open up a jar of jam or jelly and there would be mold present.
And if you see mold, just scrapping it off, mold grows downwards and it grows by spores. So if it's to the point where you can see it, just because you scrap off that top inch of that top layer of mold, those spores have already traveled down in throughout the contents of the jar. You just don't necessarily see them.
I hear people say a lot, “Well, my grandparents did that and we would just always scrape the mold off and we were fine.”
Well, a lot of times, people would get sick with things and they didn't even know back then that it was related to their food. Sometimes people are fine, but other times if you've got upper respiratory issues, weakened immune systems, I mean, there's a whole bunch of things. It can cause serious complications and people didn't realize back then that it was likely from their food.
Why are you taking a short cut at the end
My whole other thing is we've got the benefit of tested recipes and tested procedures. We've got the benefit of all of that. Why wouldn't we do it?
We go through the work of growing this wonderful, organic, good for you food, making it yourself so that you know it doesn't have high fructose corn syrup in it. You are controlling the sugar level. There is no food dye. Why wouldn't you spend that 10 minutes to water bath it to make sure that it's totally safe and that it's shelf stable without the mold? Why wouldn't you do that?
How to know if an old pickling recipe is safe for canning
When it comes to pickled foods, that's not always as easy to know, and I'm going to say tomato products, salsas, and pickled foods because a lot of time people will take their favorite salsa recipe and other times it's a favorite pickle recipe that's been handed down.
Maybe it was great-grandma's recipe or it was grandma's recipe, and a lot of those older canning recipes didn't have the benefit of the testing, and a lot of them aren't acidic enough.
I look at the recipe, if it's in the family and it's grandma's recipe or great-grandma's recipe or it's somebody who's giving you a jar of it, you can ask them for a copy.
Look up a tested canning recipe source such as the Ball Complete Book of Home Canning or an extension office website. If using a canning book, make sure it's a book with a publication date of 2000 or newer (that's my rule of thumb).
Example: We have a mustard pickle recipe that was handed down on my husband's side from his grandma or his great-grandma. I think it was his great-grandma. I had the written recipe, and a lot of those older recipes too, and this is one if you see this listed as an ingredient, then you know it's an outdated recipe, and that is using any type of thickener that is flour, corn starch, corn meal, tapioca, arrowroot, any of those are no longer approved thickeners for canning because they can create thick spots in the jar.
If you have a spot that is too thick, the heat cannot get through that spot to sufficiently kill the bacteria spores that we needed to kill in order to keep it safe. So if I'm looking at any recipe and it's got that in there, then I immediately know that that recipe is outdated and I either need to go find an updated source or not use it.
Find a similar recipe from a tested source
I went to my Ball Complete Book of Home Preserving book, and there is a recipe in there that has a mustard pickle recipe in it that uses clear gel, which is the only tested and approved thickener to use when you are canning.
That's what you're going to be using for pie fillings, if it's some type of relish recipe that calls or a sauce that calls for a thickener. Clear gel is the only approved canning thickener to use. And I go into a lot more detail on exact science and more on this in the free home canning safety class. I highly recommend that you go and take that class if you haven't been through it yet for more in depth detail and on a whole lot more than just that.
I went to that recipe from Ball and I made sure that the non-acidic to the acidic ratio was following that updated tested recipe. I took great-grandma's recipe, looked at an updated recipe, and made sure that the acidity ratios all stayed the same as that tested recipe in order to keep us safe and that pH level of 4.6 or lower.
The only way to keep it safe is to follow a tested recipe for the acidity and ratio of non-acidic ingredients to acidic ingredients.
You can never alter the acidic to non-acidic ratio. If it calls for two cups of vinegar and one cup of water and two cups of onion, you can't increase it to three cups of onions because then you're increasing non-acidity.
If the brine calls for two cups of vinegar and one cup of water, you can't say, “Oh, that's too vinegary for me. I want it to be two cups of water to two cups vinegar,” because you're decreasing the acidity. So you can't do that.
Now you could look at it and be like, “Well, I don't really like that much onion flavor. I don't like that much pepper.” If it called for two cups of onions, and you could decrease it to one cup of onions because you're just omitting some of the non-acidic but you're actually creating a more acidic recipe as long as then you don't try to add something else back in.
If it's something that's really spicy and you're like, “Oh, I don't like that many peppers,” you can take a pepper out, but you can't increase it and make it more spicy because then you're altering that careful balance where it's been measured with acidic to non-acidic ingredients.
I'll find that updated tested recipe and make sure those ratios are following the tested recipe, and if not, then I don't use that old one.
What to do when the recipe is not updated or safe and the person doesn't want to change it
You'll often hear, “Well, I've been doing like this for generations and nobodies gotten sick.”
This can be hard because we love our family and our friends, right? I mean, if we're eating somebodies food, usually that means you're pretty close to them and you've got a relationship with them and we don't want to alienate anybody and we don't want to hurt their feelings.
But when you know something is not safe, we also want to approach that, and our hope is then they will do it the safe way, right? So this can be really hard. And you're going to have to know what your relationship is with the person and how you can talk to them and how open they are to things.
You can share something like this, “I just learned a lot about canning and science and making sure that we're updated, and this is the reason why we do this now. For example, people used to water bath canned vegetables and not pressure can them a long time ago, but we know that botulism is not killed on non-acidic foods. No matter how long you water bath it, the temperature of boiling water is always 212 degrees Fahrenheit, y'all. It doesn't matter if you boil that water for five hours. It doesn't ever get any hotter than that. So we know that that's why we pressure can non-acidic vegetables because we've got to get that temperature up to that 250 degree Fahrenheit mark in order to kill the botulism spores.”
Some people just don't know and then when they find out, they're like, “Oh.” Then they're excited to learn and to do things the safe way.
But that does not always happen unfortunately.
Despite sharing the reason for canning safety you might hear back, “We've done it this way for 50 plus years and nobodies gotten sick yet.”
That's a tough spot to be in because a lot of people know that we know that smoking cigarettes is carcinogenic and can cause cancer. Some people still choose to smoke, and they haven't gotten cancer yet. Some of you may be like, “Really? You're comparing unsafe canning or outdated canning practices to smoking?” Yeah, I kind of am.
Just because you haven't got sick from something yet doesn't mean that you won't, and  especially when it comes to those non-acidic foods or pickling recipes not being acidic enough and we're talking about botulism. I love canning, y'all, and I'm not trying to do any type of scare mongering at all. Botulism is a neurotoxin. It can be a fatal form of food poisoning.
Is it fairly rare? Yes, it is, thanks to the good Lord above, we don't have a ton of botulism cases. But we know how to avoid it and how to stay safe with canning. That's the whole point of the updated and the tested recipes and procedures is so that you don't have to worry about it and so that you're avoiding it.
If I've had a discussion on canning safety and that person doesn't want to change their ways or their practices, then I have made the decision to not eat the food that I know has not been preserved in a safe manner.
You don't have to make a big deal about it. When those items are served that I know haven't been safely canned, then we don't put it on our plate or eat them. Of course, everybody will be making their own decision on how they're going to do that. That is how I've decided to handle it, I'd rather be safe than sorry.

Kickstarter Employees Win Historic Union Election
Kickstarter employees voted to form a union with the Office and Professional Employees International Union, which represents more than 100,000 white collar workers. The final vote was 46 for the union, 37 against, a historic win for unionization efforts at tech companies.
Kickstarter workers are now the first white collar workers at a major tech company to successfully unionize in the United States, sending a message to other tech workers.
“Everyone was crying [when the results were announced],” Clarissa Redwine, a Kickstarter United organizers who was fired in September, told Motherboard. “I thought it would be close, but I also knew we were going to win. I hope other tech workers feel emboldened and know that it’s possible to fight for your workplace and your values. I know my former coworkers will use a seat at the table really well."
"Today we learned that in a 46 to 37 vote, our staff has decided to unionize," Kickstarter's CEO Aziz Hasan said in a statement. "We support and respect this decision, and we are proud of the fair and democratic process that got us here. We’ve worked hard over the last decade to build a different kind of company, one that measures its success by how well it achieves its mission: helping to bring creative projects to life. Our mission has been common ground for everyone here during this process, and it will continue to guide us as we enter this new phase together."
The union at the Brooklyn-based crowd-funding platform arrives during a period of unprecedented labor organizing among engineers and other white collar tech workers at Google, Amazon, Microsoft and other prominent tech companies—around issues like sexual harassment, ICE contracts, and carbon emissions. Between 2017 and 2019, the number of protest actions led by tech workers nearly tripled. In 2019 alone, tech workers led more than 100 actions, according to the online database “Collective Actions in Tech.”
“I feel like the most important issues [for us] are around creating clearer policies and support for reporting workplace issues and creating clearer mechanisms for hiring and firing employees,” said RV Dougherty, a former trust and safety analyst and core organizer for Kickstarter United who quit in early February. "Right now so much depends on what team you’re on and if you have a good relationship with your manager… We also have a lot of pay disparity and folks who are doing incredibe jobs but have been kept from getting promoted because they spoke their mind, which is not how Kickstarter should work.”
In the days leading up to Kickstarter vote count, Motherboard revealed that Kickstarter hired Duane Morris, a Philadelphia law firm that specializes in labor management relations and “maintaining a union-free workplace.” Kickstarter confirmed to Motherboard that it first retained the services of Duane Morris in 2018 before it knew about union organizing at the company, but would not go into detail about whether the firm had advised the company on how to defeat the union and denied any union-busting activity.
Dating back to its 2009 founding, Kickstarter has tried to distinguish itself as a progressive exception to Silicon Valley tech companies. In 2015, the company’s leadership announced it had become a “public benefit corporation.” “Benefit Corporations are for-profit companies that are obligated to consider the impact of their decisions on society, not only shareholders,” the senior leadership wrote at the time. The company has been hailed as one of the most ethical places to work in tech.
Indeed, rather than dedicate its resources to maximizing profit, Kickstarter has fought for progressive causes, like net neutrality, and against the anti-trans bathroom law in North Carolina.
But in 2018, a heated disagreement broke out between employees and management about whether to leave a project called “Always Punch Nazis” on the platform, according to reporting in Slate. When Breitbart said the project violated Kickstarter’s terms of service by inciting violence, management initially planned to remove the project, but then reversed its decision after protest from employees.
Following the controversy, employees announced their intentions to unionize with OPEIU Local 153 in March 2019. And the company made it clear that it did not believe a union was right for Kickstarter.
In a letter to creators, Kickstarter’s CEO Aziz Hasan wrote in September that “The union framework is inherently adversarial.”
“That dynamic doesn’t reflect who we are as a company, how we interact, how we make decisions, or where we need to go," the company’s CEO Aziz Hasan wrote to creators in September. "We believe that in many ways it would set us back.”
In September, Kickstarter fired two employees on its union organizing committee within 8 days, informing a third that his role was no longer needed at the company. Following outcry from prominent creators, the company insisted that the two firings were related to job performance, not union activity.
The two fired workers filed federal unfair labor practice charges with the National Labor Review Board (NLRB), claiming the company retaliating them for union organizing in violation of the National Labor Relations Act. (Those charges have yet to be resolved.) Days later, the company denied a request from the union, Kickstarter United, for voluntary recognition.
The decision to unionize at Kickstarter follows a series of victories for union campaigns led by blue collar tech workers. Last year, 80 Google contractors in Pittsburgh, 2,300 cafeteria workers at Google in Silicon Valley, and roughly 40 Spin e-scooter workers in San Francisco voted to form the first unions in the tech industry. In early February, 15 employees at the delivery app Instacart in Chicago successfully unionized, following a fierce anti-union campaign run by management.
By some accounts, the current wave of white collar tech organizing began in early 2018 when the San Francisco tech company Lanetix fired its entire 14-software engineer staff after they filed to unionize with Communications Workers of America (CWA). Later, the company was forced to cough up $775,000 to settle unfair labor practice charges.

The update to the X-T1 may look similar at first glance, but there have been some huge improvements made to Fujifilm's follow-up flagship mirrorless camera. Perhaps the biggest update though is the autofocus. A huge leap forward compared with the system found in the X-T1, AF tracking of moving subjects is very snappy, while the level of sophistication and customisation is impressive. Add in 8 frames per second burst shooting, a clever double-hinged rear display, bright EVF, Fujifilm's excellent 24.3MP X Trans III CMOS sensor and plenty of body mounted controls and you're left with one of the best cameras available today.

Nikon's D3400 builds on the brilliant D3300 and is our top pick when it comes to entry-level DSLRs. Sharing pretty much the same design and specification as its predecessor, the D3400 adds Nikon's SnapBridge bluetooth connectivity to transfer images directly to your smart device to make it that much easier to share images. The 24.2MP sensor resolves bags of detail, while the D3400 is also a very easy camera to live with. Its clever Guide Mode is a useful learning tool that gives real-time explanations of important features. There's no touchscreen, but otherwise, this is our favorite entry-level DSLR right now.

The X100F is a thing of beauty both to look and and to use, but it's not for everyone. It's a relatively large, retro-styled compact camera with a fixed focal length 35mm equivalent f/2.0 lens, and designed for photographers who hanker after the weighty feel and manual external controls of traditional 35mm film rangefinder cameras. It's a relatively specialised camera and most owners are likely to have other cameras too. It may be a touch pricey, but there's nothing quite like it – it's an exquisite camera to look at and to shoot with.

While the main specification of the OM-D E-M10 Mark III doesn't offer a huge upgrade from the Mark II, Olympus has refined and tweaked one of our favorite mirrorless cameras to make it an even more tempting proposition for new users and enthusiasts alike. Some will criticise the smaller Micro Four Thirds sensor format (roughly half the area of APS-C) but the effect on image quality is minor and it means that the lenses are as compact and lightweight as the camera itself. Sporting a 5-axis image stabilization system, decent electronic viewfinder, an impressive 8.6fps burst shooting speed and 4K video, it's no toy – the E-M10 Mark III is a properly powerful camera.

Similar in size to earlier TZ-series cameras, Panasonic however has managed to squeeze a much larger sensor into the TZ100. This enables the pixels to be about 2.4x bigger than they are in models like the TZ90, and this helps the TZ100 produce much higher quality images. The zoom lens isn't quite so extensive though, but you still get an electronic viewfinder that makes it easier to compose images in bright sunny conditions and in addition to 4K video recording, there's Panasonic's 4K Photo mode to help capture 8MP images of fleeting moments. It all adds up to be a powerful compact camera.

One of the best entry-level DSLRs out there, the EOS 800D is an update to the 750D. The resolution stays the same, but it's a new design with an improved high ISO performance. The autofocus also gets a boost over the older model, now with a 45-point arrangement that's backed up by excellent live view AF system that's as quick as mirrorless rivals, while the newly designed graphical interface will certainly make this camera even more appealing to new users. The absence of 4K video and the quality of the exterior materials disappoint, but despite this the EOS 800D is a great entry into the world of DSLR photography.

Our final camera is a 'bridge' camera, a type of camera that we don't normally like very much because the ultra-zoom design forces the makers to use titchy 1/2.3-inch sensors the same size as those in point-and-shoot cameras. You get the look and feel of a DSLR, but you certainly don't get the image quality. But the Panasonic Lumix FZ2000 is different. It sacrifices a huge zoom range in favour of a much larger 1.0-inch sensor - a compromise most serious photographers will applaud. While the zoom tops out at 480mm equivalent, which is relatively short for a bridge camera, that's still plenty for all but the most extreme everyday use. We'd certainly sacrifice a little for of zoom range for better and faster optics. We love the FZ2000 because it delivers both image quality and zoom range, while also offering full manual and semi-manual controls, the ability to shoot raw files and 4K video.

 The GoPro Hero6 Black is the best action camera you can buy. It's pricey compared to some of the competition, but it's got a wealth of features, including shooting 4K footage at up to 60fps, as well as super-slow-motion 1080p video at 240fps. The improved image stabilization system works at treat, as well as footage offering a wider dynamic range and better low-light performance compared to the Hero5 Black. That's not forgetting it's waterproof down to 10m, has a useful 2-inch touchscreen, while the updated app with QuikStories automatically transfers and edits your footage for you. If you want an action camera, you're not going to go wrong with the Hero6 Black.

VR vs. An Immobile Stance On Mobile
The week of the end of February through to the beginning of March seemed unreasonably long with both Mobile World Congress (MWC) and the Game Developers Conference (GDC) to deal with.
For those of you who aren’t in, ahem, ‘The Business’, international events aren’t actually that much fun, especially for those left behind. For us, not only do you not don’t get to work the event, take in all that that entails and see all the games and tech up close and personal, but you also get the joy, out of necessity, of not only working UK hours but the hours of the show as well. It’s also very difficult, even working from home, to just get away from your desk even for ten minutes as you’re always having to react to something or the other. Meaning that you’re in for a very long day indeed. As the perennially left behind (sigh) I can certainly attest that said week where we had two big events going on at the same time was decidedly unamusing.
Something that is fun, of course, is seeing everything that comes out of the events, and now we’ve the addition of two new members of staff Rebecca and  Nina – through whom we’re producing a lot more video content on the site – we get to see and show you a lot more. In fact the most interesting thing of that week was probably the surprise announcement of a newly redesigned Gear VR and the introduction of a Gear VR controller, a combination that already has over seventy games in development for it. It was an announcement we were able to quickly capture on camera.

It’s not a perfect video by any means, the announcement kind of came all of a sudden and we did well to get the camera on at all I’d say. But as a video it certainly got attention. In fact, it did very well for views, disproportionately better than the rest of our YouTube channel – a channel you should definitely subscribe to by the way, and click the bell whilst you’re at it.
Then however I noticed something. Both the likes and dislikes were going up, and fast. They were also pretty much even. For a few minutes I mulled it over trying to understand why that was. The statistics weren’t any help since those generally take a few days to appear in the back end and strangely no one was commenting on the  of YouTube then it dawned on me. This wasn’t so much a reaction to the video, it was a reaction to the news there was a new Gear VR in the first place. I even commented on this on our Twitter account – something else you should certainly follow.

In the days that followed, along with a number of comments I was seeing flick past on social media it appeared that I was indeed right. The negative reaction was more for the fact that there was a new and better Gear VR coming.
Are we… Are we still actually doing this?
For a while there’s been this nonsense going on where 360 degrees is decried as not being ‘proper’ or ‘true’ virtual reality (VR) and it began to spread a while back into covering by extension all of mobile VR.  It isn’t right, some mutter, and it’s not nearly as good as VR on PC. A fact which, you know, is news to absolutely no one. But to some not only should people not mention mobile in the same breath as VR the more extreme end has it be that it shouldn’t be treated as VR at all.
Now if you’re not a fan of smartphone-based head mounted displays (HMDs) in VR, then that’s fine. Absolutely. However if you’re taking the strange almost zealot-like stance of ‘If it’s not the very best there is then it is bad, doesn’t matter at all and stop caring about it.’ I have but one question.
Why?

What the heck is wrong with you?
Firstly that logic makes no sense. If I go out for lunch and let’s say I grab a burger from a local vendor the food isn’t magically bad just because gourmet burgers or Five Guys exists. By this ‘rule of expulsion’ that would mean if you don’t drive a supercar you should be banned from driving. “Koenigsegg? Through you go. Vauxhall Corsa? Ooh, I’m sorry sir. I’ll have to ask you to step out of the vehicle…”
I’ve mentioned previously about my belief people would be less fussy about what ‘virtual reality’ should mean if it was treated as more actively treated as an umbrella term with the various forms or types of VR then included under it. All types forming a sort of VR spectrum of quality and immersion but all being accepted as part of the same family.
Mobile VR is the most readily accessible platform the industry has. Mobile VR has introduced more people to this world, this new generation of VR than any console or PC HMD. The Samsung Gear VR is at the heart of that and shows the possibilities of that technology. Likewise Google Cardboard and cardboard-based VR headsets might not be flashy and the experience may be at the bottom end of the VR quality spectrum but Cardboard HMDs made it so practically anyone can get a VR headset for practically nothing so long as you have a smartphone.
With Google Daydream and the continued development and evolution of the Gear VR you now have the addition of motion controllers to mobile VR. That’s great! You’ll be able to buy online or see in your local tech store. Whilst those at the higher end of the VR spectrum, especially Oculus for PC, works to push the costs and hardware needs downwards to make things more accessible the most accessible platforms are pushing hard upwards to make it what you want to be and be closer to a PC or console level experience. Both sides are trying to meet in the middle so you then have a full range of high quality, accessible, affordable VR options across the board.
I mean, isn’t that the entire point? We’re always talking about VR needing to become a mass market technology; that is making VR accessible to everyone.
End of the day, if you don’t like mobile VR – fine. The good news is, it’s working to get better. But don’t look down on those that use it and certainly don’t decry it for existing at all. Mobile isn’t the VR peasantry. It’s part of the family – part working just as hard to make everyone’s dreams of a VR future come true.
