Henwood Style Mac & Cheese
Chef’s Note: So creamy. Blue cheese is not overpowering and adds depth. Baked the flavor into the pasta. Not brown top, just baked top.
Why do I want to eat apples with this?
Ingredients
8 oz fusilli (spiral) pasta (substitute rotini)
4 tbsp cup unsalted butter
1 tbsp dried minced onion (the spice seasoning)
1/4 cup all-purpose flour
2 cups milk
4 oz Velveeta
1/4 cup blue cheese crumbles
1/4 cup cheddar cheese (I'd say shredded)
1 tsp salt
1/4 tsp ground mustard
Instructions
1. Preheat the oven to 400°F (200 degrees C). Lightly grease an 8x11-inch baking dish
2. Bring a large pot of lightly salted water to a rolling boil over high heat. Stir in fusilli and return to a boil. Cook, uncovered and stirring occasionally, to al dente (according to package directions). Drain pasta well.
Make the sauce while this cooks
3. Melt margarine in a large saucepan over medium heat.
4. Add onion and let soak up some butter
5. Whisk in flour and cook for 1 minute.
6. Slowly whisk in milk until entirely incorporated.
7. Add Velveeta, blue cheese, cheddar, salt, and mustard. Cook, stir continuously, until cheeses have melted and the mixture thickens.
doesn’t have to be continuous, but pretty often. Don’t want it to boil
8. Pour pasta into the dish. Pour cheese sauce overtop. Stir until everything is coated.
9. Bake until the top begins to brown, about 20 minutes.

My dad put Velveeta in a paper towel roll dispenser to make it easier to make mac and cheese. It worked about as well as you’d think.

Scalloped Potatoes and Veggies

Makes: ~ 5 cups
Ingredients
2 large potatoes, peeled and sliced (I used Russet)
2 large carrots, sliced
1 small onion, sliced (~ 1 cup). Yellow or white onion
1 cup frozen peas
1 cup milk
2 tbsp all-purpose flour
1 1/2 tsp salt
1/4 tsp ground mustard
4 oz Velveeta cheese, cubed
Instructions
1. Add the potato slices, carrot slices, and sliced onion to a medium pot (at least 2 qt). Fill halfway up the vegetables with water. Cover and heat over medium heat for five minutes.
2. Add in the frozen peas. Continue cooking, lid on, for 15 minutes, stirring every so often so everything gets to soak in water and nothing burns on the bottom
3. In a bowl (or mixing cup), combine the milk, flour, salt, and mustard.
4. Once potatoes are tender, pour the milk mixture overtop and stir to coat everything.
5. Add in the Velveeta. Continue stirring until the Velveeta has melted and the milk mixture has become more solid.
6. Serve warm

The absence of fear in Alexios should be concerning to anyone but most especially to Dakota. He stays right where he is with the dagger still pointed at the other’s man chest right where he knows his heart is. That heart. The one that he missed the beat of every single night they were separated, the one that he was getting to learn again now that they were once again together. The one that kept his love cradled to itself even when Dakota had tried to move on without him. Dakota was a fool to think he could at the time but he did try.
He watches as the tip of the blade pierces the fabric of Alexios’ shirt front and visibly winces himself as he watches a bead of red make a flower of the same color slowly blossom. A knife was too much power to give him. Far too much.
“Shut up,” he says and withdraws the point away from his lover. “Before I take your tongue out instead.”
The malice the words would have is not present though because Dakota is blushing just the same as he places the knife to reconnect with its keeping box again. He moves to step closer to Alexios now, arms coming up to loosely wrap about his shoulders and bring them nearer; hips to hips, legs framing each other’s, chests apart only so they can still see each other as Dakota says, “I’ll stay.”
He leans more then the action meaning to draw the other into a kiss but he stops just short of it. Like a hush over water before a storm he continues, “But you’re going to have to seduce me again.The knife was a good start~”
Then he’s drawing away again to turn and walk out of the weapons room and out into the main area.
