FRENCH TOUCH.
I know the fall is here when I take the time to make my Tarte Tatin, just go get the smell of of the caramelized apples in my kitchen 🍏🍎
You can make it with a puff pastry or a sweet dough, this time, I had extra puff pastry (when I make some at home, I always make more because that's a lot of work and I prefer to freeze some of it for later use)
You will need
Around 3kg apples
250g of dough / puff pastry
150g sugar for the caramel
300g sugar
200g butter
100g salted butter
In a big, high pan, boil 2 liters of water and melt the 30pg sugar with the butter, to get a "butter syrup".
Peel the apples and cut them in quarters, and cook them in the syrup until they are soft.
Make them dry a bit on paper.
Meanwhile, melt the sugar in a pan on medium heat : don't touch it, just let the sugar melt gently until golden brown.
Pour the caramel into a pie dish to get a nice thin layer.
Place the apples very close to each other, even with overlapping so there is no space left empty.
Best way for me is to let this rest in the fridge overnight to let the apples absorb the caramel, but you can also bake your pie immediately: just roll the dough over the apples and bake for 35 minutes at 185.
When the pie is warm and not hot, you can flip it!

@le_pirate_erbalunga is a pearl of gastronomy on the Mediterranean seashore in Erbalunga near Bastia.
Inventive, colorful, generous, this cuisine is most importantly local and absolutely delicious!
The confied eggplant in miso and blackcurrant sauce is definitely a dish to remember!
Bonus point :the service, with a great team of friendly and very professional waiters.

ROMA IN TEL-AVIV. Italian cuisine is probably my favorite one, Abdi always am amazed by how delicious their food can be, even (and especially) when it's based on such simple ingredients. The concept of cucina povera ("cooking of the poor") is to take the most basic ingredients and turn them into a delicious meal. This Pasta al limone from @kaparamio yesterday was insanely good, rich, creamy, tangy, lemony, spicy... So many sensations with a "simple" plate of pasta. GRAINS, SEEDS & CO. Along with the Pinault Collection at Bourse du Commerce, @halle_aux_grains_bras_paris opened its doors a few days ago. Located on the top floor of the building, the view on the pieces of art is stunning, and the menu created by @brasofficiel showcases grains, seeds, local ingredients, with much inventiveness, modernity, boldness. A beautiful dinner, and this fantastic chocolate lava cake (invented by Michel Bras in the 80's) is modernized in a great way with the fantastic oat milk ice cream. PINK PARADISE. This is not only a raspberry tart. ALEXANDER. I love the word "boulangerie", only French could define in a unique word the place where you will find breads, pastries, cookies. More than a pastryshop, the smell you get is a mix of sugar, caramelized pastries, sourdough, burnt flour... Addictive! @alexander__tlv is the new Boulangerie in town...
