Homemade Fall Comfort with These illy Pumpkin Recipes

While the fall equinox isn’t for a couple of weeks, pumpkin patches are visible, comforting ingredients are on full display in grocery isles, and pumpkin lattes are trending.

With more than 20 years working as an illy Master Barista pursing quality coffee drink, from cocktails to hot preparations, I’ve decided to fill my cup with my own pumpkin recipes using simple ingredients and tools for everyone to make in the comfort of their home.   Of course it all starts with great coffee and the illy blend provides a backbone with a complex and balanced taste profile that can work with this type of recipe.

Along these lines and the seasonal popularity,  I’ve created my very own Pumpkin Simple Syrup. It’s as easy to make as it is delicious. In fact, I’ve used the syrup for almost everything, from pancakes to cocktails to a number of illy recipes. The opportunities are endless!

All you need is:

·       1 cup pumpkin puree ·       1 cup water ·       1 cup sugar ·       1 tbsp spice mix ·       1 tsp vanilla extract

Combine and mix all ingredients together in a pan and set medium heat. Cook it for about 1 hour, stirring occasionally. Let it cool down for another hour and then strain it using a nut milk bag (for clear syrup, a fine strainer works as well).

The next step, making your own pumpkin spice latte. I recommend using illy’s signature Classico blend that is made of 100% Arabica beans. Its versatility and balanced taste, with delicate notes of caramel, makes the flavor profile perfect for this fall treat. Then if you’re making a savory iced version, use 1% milk and if looking for a comforting warm latte, use steamed whole milk (no foam). The rest is the same!

And if you’re really feeling the autumnal spirit, try your hand at an illy Warm Harvest Latte or even add pumpkin syrup to your illy Cold Brew – yum.

illy Iced Pumpkin Spice Latte:

Ingredients:

·       1 illy Classico espresso ·       1 oz Pumpkin Spice Syrup ·       3 oz 1% milk ·       2 oz cream ·       Pumpkin Spice Mix, to taste ·       1 tbsp ground Cinnamon ·       3/4 tbsp ground Ginger ·       1 tsp ground Nutmeg ·       1/8 tsp ground Clove ·       Ice cubes

Add ice to the glass. Mix together 1/2 oz syrup and 3 oz 1% milk and pour into the glass. Prepare the espresso, using illy Classico blend, and pour into the glass gently to create layers. In a shaker (or in a bowl) pour the cream and the other 1/2 oz of syrup, shake it (or whisk it if using a bowl) just enough to turn the liquid cream into a denser liquid (must be pourable). Then pour the cream slowly on top of the drink. Finish with a dusting of pumpkin spice.

Godchild

The Godchild is part of the Godfather family of amaretto cocktails. When I made this I liked it better than I expected. Godchild is the only family member of these drinks that is blended and made with half-and-half. It retains that spike of vodka of the Godmother, however, and I was happy that this wasn't another of those weak amaretto dessert drinks.

1 1/2 oz. amaretto (Lazzaroni used)

1 oz. vodka (Divine Clarity used)

1 oz. half-and-half

Combine all ingredients in a blender with cracked ice. Blend until smooth and pour into a chilled champagne flute.

I left Florence for Verona to continue learning Italian. City & school were a better fit. New found Veronese friends showed me around. One was a driving tour... with stops for cappuccino's and pranzo, Thank God... completely around the Lake of Garda. One main stop was Limone sul Garda. Huge stone and wood beam structures scaling the sides of mountains down to the water, no roofs, filled with lemon trees covered in what looked like bright yellow ornaments. The scent was obvious. Limoni! Years afterwards, when I was a shoe designer, my technical guys took me to a hill top ristorante after a morning of working in a factory. The cap of the wonderful meal was an icey cold glass filled with a likewise frozen thick yellow liqueur... limoncello! In a period when hundreds of new brands have been created in almost every traditional liquor category, we felt it was time to create something new and unique. In our pursuit of creating a unique new spirit, we asked ourselves... "What spirit would the wealthy Venetian merchants of the 18th century have created to serve at their lavish masked balls?" They had access to all the exotic spices from the east as well as flavours indigenous to Italy. Since 1181, various bridges have stood next to the Rialto Market in Venice, where these exotic spices were bought and sold. The current bridge, the Ponte di Rialto, was built in 1591 and is one of the most beautiful bridges in the world. A very special thanks to Christian Lazzaro (@chris_l78) for this amazing photograph of Ponte di Rialto. Many beautiful photographs have been taken of the Ponte di Rialto over the years; however, this is the nicest one we have seen.
