If you read my blog fairly frequently you might think I just posted this; I even questioned it myself but they are different soups with similar ingredients. This one I adapted from a recipe I found in allrecipes.com that was submitted by domesticgoddess. It comes together quickly and has fabulous flavor and fits the bill around here. Something I've dubbed Italian tuscan soup lol
basically a sausage white bean soup (the base recipe is pasta fagioli) but I added kale and cream and a bit of onion as well. Delicious.

Italian On A Budget/ Feeds about 4 people

Lunch: Eggplant Parmesan served with a side salad.
Dinner: Whole wheat spaghetti with marinara sauce and a side of steamed broccoli.
Day 2: Caprese Stuffed Chicken
Lunch: Caprese Stuffed Chicken Breast served with roasted vegetables.
Dinner: Spinach and Mushroom Risotto.
Day 3: Zucchini Noodles with Pesto
Lunch: Zucchini Noodles with Homemade Pesto and Cherry Tomatoes.
Dinner: Minestrone Soup with a side of whole grain bread.
Day 4: Margherita Pizza
Lunch: Margherita Pizza with whole wheat crust and a side salad.
Dinner: Grilled Balsamic-Glazed Salmon with Roasted Asparagus.
Day 5: Spaghetti Carbonara
Lunch: Spaghetti Carbonara with a side of garlic bread.
Dinner: Italian Vegetable Frittata served with mixed greens.
Day 6: Veggie Lasagna Rolls

Almost Tuscan Sausage and Kale Soup Similar to the Tuscan soup at a well-known chain restaurant, this Tuscan sausage soup with kale, cannellini beans, and potatoes has Italian influences. 1 large onion chopped, 1 can cannellini beans drained and rinsed, 1/4 teaspoon smoked paprika, 6 cups low-sodium chicken broth, 1 cup peeled and chopped yellow potatoes or more to taste, 1/2 teaspoon chopped fresh basil, 2 cloves garlic crushed, 1 pinch ground black pepper or to taste, 4 cups chopped kale, 1 pinch red pepper flakes or to taste, 1 pound bulk hot Italian sausage removed from casings and crumbled, 1 tablespoon olive oil or as needed

Easy Basic Overnight Oats from Brittany Mullins on eatingbirdfood
Modifications: i use maple syrup instead of honey; instead of adding fruit, i use cinnamon; used unsweetened vanilla almond milk and low-fat vanilla yogurt; did not use sea salt
Rice Cakes, Peanut Butter, and Yogurt from me
2 Caramel, Chocolate, or Apple Cinnamon Rice Cakes
Spread 1 tbsp of organic peanut butter on each
Take one container of strawberry-banana yogurt, spread half on one and the other half on the other
Enjoy!
LIGHT MEALS

Modifications: i do not garnish with parsley

Modifications: i use mirin instead of rice wine vinegar; i use brown sugar; i use olive oil instead of canola oil (this was made to use excess soba noodles, i didn't have a lot of the stuff lol)

8 - Favorite scents.
In no particular order.  Petrichor, tea & lemon candles, tomato plants, sweet sandlewood, sun dried cotton, cat leather (the scent that exudes from happy, healthy fur).
43 - At least 3 recipes.
Okay, tried and true.  Two of these are one pan meals.  Just make sure your pan is oven safe (I use a deep dish cast iron).
My Basic Chicken Dinner: Cubed chicken breast pan fried in butter and olive oil, sprinkled with thyme, savory and garlic.  Salt and pepper to taste.  Add equal parts lemon juice, white wine (you can skip this if you don’t want it) and water to make a sauce, thicken with either cornstarch or a roux.  Serve over couscous with veggie of your choice.
Hamburger Pie: pound of browned ground beef, small onion chopped, a can or half a bag of frozen green beans and a can of condensed tomato soup, salt and pepper to taste, all mixed together.  Top with cornbread batter and bake at 425 for 20-30 minutes.  Serve with burger condiments or cheese.  Or both, if you’re feeling daring.
Tuscan Pie: pound of Italian sausage, chunked and cooked through.  One can of cannellini beans, a jar of tomato sauce and 8 oz of mozzarella cheese, mix together.  Top with rolled out crescent roll dough and bake at 375 for twenty minutes or until topping is cooked through.
Chicken, Leeks and Cream: what is says on the tin.  Pan fried cubed chicken breast, thoroughly washed and sliced leeks (don’t worry, they get soft, it really won’t be too much if you use the whole bundle you bought at the store), salt and pepper to taste.  Add about 3/4 to a cup of heavy cream until bubbling.  Take off heat, melt in a pat of butter, stir it all up.  Serve over rice.
45 - Where do I really want to go?
I really want to go back to the Big Island of Hawai’i.  I spent a week there, long ago.  Touristy stuff I can take or leave.  I fell in love with the scenery and the history and the majesty of the sacred places.  I left my offering to Pele up on the peak of Mauna Kea, overlooking a glacial lake above the cloudline.  I want to go back and feel that wonder again.

Recipe of the week:🤩😋🇮🇹 
If you love the potato sausage soup at your fave Italian restaurant, you HAVE to try this healthier version! It’s dairy-free and also super delicious!  
👉If you want a little extra fiber, you can add some cannellini beans.
🍲👩‍🍳🥔Zuppa Toscana (Tuscan Soup)(serves about 6)
Ingredients
4 slices uncured bacon
1 lb (450 g) uncured Italian sausage with the casings removed (get your favorite brand: chicken or turkey!)
1 large onion, chopped1 tbsp Italian seasoning
3 cloves minced garlic6 cups (1.4 L) low-sodium chicken broth
6 medium red potatoes (chopped to bite-size)6 oz (168 g) of fresh spinach or kale
8 oz (230 ml) of full-fat coconut milk (the kind in a can – mix it up really well before adding!)Salt and pepper to taste Directions
In a large pot, saute the bacon over medium heat. When it’s done, remove it and drain off most of the fat. Next, add the sausage and cook until browned. Add the onion, and Italian seasoning and continue to saute for 2-5 minutes, until onion is softened. Add garlic and saute for about 1 minute.
Add chicken broth and potatoes, and reduce the heat. Cover and simmer for 10-15 minutes. Add the spinach or kale and the coconut milk and continue to simmer until the greens and potatoes are tender. Add the bacon and heat through.
Add salt and pepper to taste. Enjoy!
