Ok so here’s the final count of the meals made with leftovers from the Christmas dinner etc. . . 2 Shepherds Pies (2 weeks of meals) 2 Christmas Dinner Pies (2 weeks of meals) 6 Litres of Turkey Curry (4 weeks of meals) 6 Litres of Turkey and Vegetable Soup Base (4 weeks worth of meals) 4 Potato Bakes (4 weeks of meals) . . That’s 16 WEEKS of meals for Tanny and I yes we have other meals I’ve made in the freezer. But just from the leftovers from Christmas dinner and the things that didn’t get used and the veg that was going a bit off. You can’t not call that a win!!! . . Yes it’s just us but honestly even a family of four that’s a good 3-4 weeks of main meals. . . It means we can worry less now about the beginning of the year bills as we know dinner is sorted and on the table. . . A video will be coming out shortly in what I did. I am warning you though it’s a new camera and it may be a bit all over the place but I think I’ve figured it out by the end. . . At the end of the day this is a major lesson in using what you have. Waste not want not guys. The amount many of us chuck out after Christmas is criminal when so many are starving right now. 4️⃣ ingredient Mexican chicken - Apple cider vinegar Chicken breasts Mexican shredded cheese Salsa Taco Seasoning —— (1) Grab a 9x13 pan spray it with cooking spray OR you can add apple cider vinegar to the bottom of the pan. (2) cut off the fat and add the chicken to the pan. (3) in a bowl add the taco seasoning, apple cider vinegar and a little water 💦 stir to combine and then brush the taco seasoning marinade over the chicken. (4) cover the pan and bake for 25 minutes. (5) uncover and sprinkle with shredded cheese. Bake for an additional two minutes. (If you’re using rice 🍚 go ahead and cook it in the microwave.) it’ll be ready when the chicken comes out. (6) add the rice to the plate and top with chicken. Cooking everyday more than likely means leftovers. And after a long day at work, that’s perfectly fine. When I roast a whole chicken like I did the other day, I anticipate enough leftover meat for sandwiches. But today, I wanted something different. So this new recipe is really a glamorized Chicken A La King inside buttery, cheesy puff pastry. (You can also call it a supersized posh Hot Pocket). What elevates it is the use of fresh mushrooms and the addition of a layer of ham. I also used spices not usual in the dish: nutmeg and tarragon. (These spices make all the difference!) Yesterday we had Sunday Dinner. The chicken cost us £2.99 the veg cost us £4.50, the pastry was £1 and the oat cream £1. . . So Tanny had chicken and veg yesterday, I had veg. Today I turned the leftovers into meals for lunch and dinner for the rest of the week. . . Roast Chicken and Veg Pie for Tanny and Sunday Dinner Veg Pie for me for dinner tonight. . . 2 chicken, stuffing and gravy pies for Tanny for work. . . Chicken, Veg and Pearl Barley Stew for Tanny that will be enough for a couple of days. . . Roast Veg Soup for me that again will last a few days for me. (I also like to turn it into a sauce for pasta. . . Then of course there is the stock pot with what will end up being around 5 Litres of Chicken Stock. . . That’s not to mention the leftover cabbage and cauliflower I’m using for breakfast for the next couple of days. . . We will be well fed for the next few days and it didn’t cost the Earth. Simple roast chicken and homemade corn bread. For those who are curious, I always use @guarnaschelli’s buttermilk cast iron corn bread recipe, there’s simply no way to improve on it. (I did add a little parmigiano reggiano in the mix just cuz....) Browning the butter before pouring the batter (a la Yorkshire pudding) is super genius. This is prime example why there are but a handful of chefs whose recipes I revere like the Bible—coz they don’t leave out an ingredient or technique, or worse, mislead.
