DIVISION BELL
Created by Phil Ward at his Mezcalaria, Mayahuel in 2009. A staple on the menu from opening night until its final call in August 2017. The Division Bell is a smoky twist on the classic Last Word. ๐Ÿน
Purported to be named afer the Pink Floyd album that was repeatedly played as Ward built out the East Village, NY bar ahead of opening, this modern classic has a kindred spirit in Sam Rossโ€™ Paper Plane, another Last Word riff named due to the M.I.A song that was synonomous with the summer of 2007. ๐Ÿฅƒ
Maybe Mayahuel was ahead of its time, but thank you Phil Ward for introducing this enthusiast to Mezcal long before it was readily available in the UK. Thankfully Mezcal is entrenched in popular culture and Ward continues to be introducing all things agave to New Yorkers at @mezcalfordinner Madre Cocina & Mezcales. ๐Ÿธ

As I hadnt found time to make a dent in the home bar of late, I wanted to get back into the swing of things with a boozy thirst quencher. As the heat is also resulting in our orchids shedding their flowers, it just felt right to dig into the tiki archives to take advantage of my windfall garnishes.๐Ÿน โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € With Chicago's @LostLakeLovesYou on my must visit bar list, and a bar whose past menus had offered great value during my lockdown virtual bar crawl, I turned to one of my favourite drinks of 2020 - the bar's take on the South Sea Dipper.๐Ÿ– โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Originally a Trader Vic creation, the tiki drink featured in his 1947 Bartender's Guide featuring a single rum base and a hefty ruby port float. Lost Lake's reimagination of the South Sea Dipper was created by the king of Chicago Tiki, Paul McGee - owner of both Lost Lake and Three Dots and a Dash.๐Ÿน โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € McGee's recipe amps up the depth and the funk by splitting the rum base three ways, including a rhum agricole. Furthermore, it dials back the ruby port and dispenses with the float, instead incorporating this into the mix. SATURN โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Ahead of #worldginday tomorrow I had the urge to shake up one of my favourite tiki cocktails - the Saturn. This is a drink I have come to associate with World Gin Day, which always falls on the second saturday of June, since its 2009 founding by a group of gin loving friends in Birmingham.๐Ÿธ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € I believe my connection of the drink with this occassion is due to to the fact that I associate both tiki and gin drinks with hot summer days. As world gin day falls just before summer solstace here in the Northern Hemisphere, I have found myself yearning for a Saturn above all other gin-based drinks on each of the last 4 world gin days.๐Ÿน โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Created by J. "Popo" Galsini in California, the Saturn won the International Bartenders Association World Championship in 1967. While a favourite in tiki circles for many years since, it wasnt until almost five decades later that the drink became universally popular. This was largely a result of its inclusion by Jeff "Beachbum" Berry in his 2010 Beachbum Berry Remixed. The subsequent inclusion of Berry's recipe in Martin Cate's Smuggler's Cove...Cult of Tiki in 2106 further propegated its acclaim. The recipe I follow most closely, however, is from Slowly Shirley in NY. I tweak this slightly to incorporate fresh passionfruit into my mix.๐Ÿน โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € ๐ŸŒ50 ml Whitney Neill gin ๐ŸŒ15 ml fresh lemon juice ๐ŸŒ20 ml fresh passionfruit ๐ŸŒ10 ml Falernum ๐ŸŒ7.5 ml Orgeat ๐ŸŒ5 ml Passoa ๐ŸŒ5ml sugar syrup โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Shake with crushed ice and open pour into a glass of your choice. ORANGE CACAO BLACK MANHATTAN โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € The Black Manhattan is my go-to tipple when I want a digestif style drink to finish off a really great meal. In of itself its a terrific stirred down and spirit forward delight with fantastic bitter complexity. Furthermore its an excellent and simple template from which to experiment with different amaro and bitter combinations. Notable shout-outs to Cynar and Rabarbaro versions.๐ŸŠ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € The Black Manhattan, is of course a twist on a classic Manhattan with Sicilian Amaro added in place of sweet Italian vermouth. The drink was first made and popularised in San Francisco by Todd Smith at Bourbon & Branch in 2008.๐Ÿซ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € In my slight twist, I have deliberatly paired Rittenhouse Rye with @Averna as they are one of the best whiskey and amaro combinations with their flavour profiles intermingling in perfect harmony. I also upped the orange bitters and added the same quantity of chocolate bitters. Gordon's Cup riff - PimGo Cup โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Today was meant to represent the one month marker before my wedding festivities commenced in Brazil. However due to COVID19๐Ÿ˜ท, we have unfortunately had to delay it to the end of the year.๐Ÿˆ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € I therefore wanted to mix something up that would raise my partner's and my spirits. My fiance is a Brazilian whose favourite drink is a Pimm's Cup, while I am a Brit who cannot get enough Caipirinhas in me when the Rio sun is beating down. We have chosen Pimm's as the welcome drink for the party and as with all Brazilian weddings there will be a Caipirinha bar serving every fresh fruit variation you can imagine. So looking towards these two drinks for inspiration, and with the memory of the Gordon's Breakfast I mixed up by the truck load a few weekends ago, the Gordon's Cup seemed like the perfect choice!๐Ÿˆ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Invented in the mid 2000's by Sasha Petraske for either/both his Milk & Honey and/or East Side Company bars, its something between a Pimm's Cup and also a cucumber and lime Caipirinha. To ensure I captured the vegetal funk of a great caipirinha, I opted to split the gin base and add in Weber Haus cachaca. I also found that when using Hendricks' cucumber forward gin, the cucumbers do not need to be muddled to esnure the fresh garden notes shine through. This results in a much cleaner drink.๐Ÿˆ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € PIMGO CUP โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € ๐Ÿฅ’40 ml @Henricksgin ๐Ÿฅ’20 ml WeberHausOficial Prata cachaca ๐Ÿฅ’20 ml sugar syrup ๐Ÿฅ’5 slices of cucumber ๐Ÿฅ’Half a lime, quartered ๐Ÿฅ’Crushed sea salt, mixed peppercorn & nori sprinkle. โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Muddle line and then add first four ingredients. Though many of us arent able to enjoy the festivities with as much gusto as we would ordinarily, I raise a glass to everyone's health and well being. I hope everyone is staying safe, and that your loved ones are well! Though I have been distracted the last week or so, I found that a hot soothing cup of Irish Coffee really does help warm the soul.๐Ÿ‡จ๐Ÿ‡ฎ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ €โ €โ €โ € The Dead Rabbit's version is by far my favourite build of this classic hot drink, so this is the version I stirred up here by following directions given by Jillian Vose on its website.โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € โ˜•105 ml freshly brewed coffee โ˜•30 ml Irish Whiskey โ˜•15 ml demerara syrup โ˜•25 ml whipped double cream โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ €โ €โ €โ € Stir the demerara syrup into the whiskey before adding coffee. Layer over the cream and grate nutmeg. โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ €โ €โ €โ € Though perfected by the Dead Rabbit, it was first served at the Foynes airport bar near the flying boat terminal. The well known story goes that in 1949 a Pan Am flight from New York had to make an unexpected stop at Foynes. Asked to prepare something to warm up the cold passangers, Bartender Joe Sheridan added whiskey to their coffee and floated a generous helping of welcoming cream. Legend has it that when the thawed and cheered-up passangers asked if he had given them a Brazilian coffee, he replied "It was Irish coffee".๐Ÿ‡จ๐Ÿ‡ฎ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ € When a San Francisco Chronicler reporter tried the drink a few years later he was so enamoured by it, that he asked his local barkeep at the Buena Vista Cafe in SF to mix it up. It soon made the menu and became so popular people travelled far and wide to taste it. BLOOD ORANGE GIMLET โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € The gimlet is one of the simplest mixed drink to stand the test of time. Similar to another gin based two parter, the G&T, the gimlet is believed to have been created for medicinal purposes.โš“๐Ÿšข โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € A blight of the British navy for centuries, Scurvy would waylay entire crews that were at sea for several months due to a lack of Vitamin C. At the turn of the C19th British ships would start carrying citrus juice and ration this out with the daily tot of rum to fight off scurvy. To preserve the citrus juice for long voyages the navy would cut the juice with high proof rum. While the rank and file where plenty happy with lime in their grog, the officer class preferred something not necessarily ladled from a barrel. It was more common for officers and commanders to drink Navy strength gin.โš“๐Ÿšข โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Then in 1867, the Rose & Co shipping company discovered a way to preserve the lime it was bringing from the Americas by adding sugar. Rose's Lime Codial, sold in finely blown decorative glass bottles, had a far more distinguished air than a barrel full of rum and lime. It is believed that Rose's and gin were first combined togeher in equal measures by Surgeon Rear Admiral Sir Thomas Gimlette, who was partial to adding the cordial to his gin to help the medicine go down.โš“๐Ÿšข โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € I enjoy a gimlet very much but I often overlook it for something more layered or complex. LIMA MARGARITA โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € A month ago I enjoyed the revelries of the annual London Pisco Sour Week. While I savoured a number of sour riffs, one of my favourite changeups was a Lima Martini from Casita Andina. I first had this the year before, so it was a great pleasure to try it once again. โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € The London Pisco Sour week is a great excuse to visit the city's excellent Peruvian bars and restaurants. This February was the 6th iteration in its weekly form, however it has grown from the celebration of Pisco Sour Day in Peru, which is celebrated on the first Sarurday of February. โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € The Pisco Sour has become such an important symbol to Peru's national identity that Peruvian's have been celebrating its history since c.2003. Then in 2007 Peru's National Cultural Institute officially recognised it as part of it's historical patrimony (which had already been afforded to Pisco brandy itself in 1988). GORDON'S BREAKFAST When I noticed my green birdseye chillies that I used in my Tommy Gun Margarita had ripened and turned varying shades of orange and red, it gave me an idea. That was to try and make a similar but inversed coloured version. After several attempts however I failed to create a drink that I enjoyed as much as the original.โ™ป๏ธ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Back the drawring board, and having finished my chili and peppercorn infused tequila through trial and error, I reached for a botanical gin, and began working with a Gordon's Breakfast spec...โ™ป๏ธ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Gordon's Breakfast is a variation on the Gordon's Cup created at Milk & Honey by legendary Sasha Petraske. I then believe the Gordon's Breakfast evolved from this refreshing sour at its sister bar Little Branch c.2007 with the addition of Worcester and Cholula sauces. DOCTOR FUNK โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € We have had a little snowโ„ for the first time this year in London so I really fancied something to help #tikithesnowaway. I was especially in the mood to recreate the first Doctor Funk I had when requesting a 'funky rum based drink' at Happiness Forgets 9/10 years ago when I lived just around the corner from it...great times!๐Ÿน โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € At this time I was unaware of the history of the drink and thought it was named due to the flavours of the potent flavourful rum and absinthe combination. I later learned that Doctor Funk was named after a German physician based in Samoa 1880-1911 - Dr Bernhard Funk. The physician of Robert Louis Stevenson, when he relocated to the South Pacific in his last years, Dr Funk would often "prescribe" a potent mix of absinthe, lime and seltzer slightly sweetened with grenadine as a drink to ward off what ails you. ๐Ÿน โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € This tart highball became popular on the island. So much so that when Ernest Gantt came across it during his travels in the South Pacific it inspired him to fortify it with rum and add it to his menu when openening his tiki genre creating bar Don the Beachcomber in 1933. This consequently makes the Doctor Funk the earliest Polynesian tiki drink. VESPER MARTINI TWIST - SICILIAN/ VESPA MARTINI โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € The Vesper Martini was dreamed up by James Bond author, Ian Flemming as 007's preferred drink. Bond first asked for his Martini twist, in the 1953 book, Casino Royale.๐Ÿคต โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Bond's quite specific request, saw the fictional spy ask for 3 parts gin, 1 part vodka and half a measure of Kina Lillet. Then famously, Bond specified that his drink should be "shaken, not stirred" (yessh I alsho cannot shay it without doing a terrible Sean Connery impression).๐Ÿคต โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € For me, this results in an unblanced and spirit heavy drink even with the additional dilution from the shake. Though I have only used Cocchi Americano rather than Kina, I do not expect the original was balanced any better. ๐Ÿคต โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € My interpretation, consequently, is more Vespa than Vesper, and I look to an experience of a martini with Amaro Amara that I drank on a balmy Sicilian evening last year. The first recorded Tequila sour recipe - and the precursor to the Margarita - was created in the UK and known as a Picador. This then became known as a Margarita when it found its spiritual home in the US. It was in the American heartlands of the west coast that the Tommy's Margarita was then born. This latest margarita style was first mixed at Tommy's Mexican Restaurant in San Francisco in 1988/9 by Julio Bermejo.๐Ÿš‹ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € This version plays on the Tommy's Margarita build. While I am sure drinks like this one contributed to these successes, it certainly helped the drink's visibility and popularity. Its appearance in Death & Co's Modern Classic Cocktails in 2014 further ensured the cocktail became a widespread success. So I thought I would go all out with my twist on a Pink Lady, who is dressed in her Friday night best.๐ŸŒธ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € It has often been stated that the drink must have been created during prohibition as grenedine was often used to temper the harsh flavours of bootleg bathtub gin. This, however, is not the case in this instance, as the earliest recipe is published before prohibition, in Jaques Straub's Manuel of Mixed Drinks in 1913.๐ŸŒธ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € It is therefore more likely that it was made between 1911-13 and named after Ivan Caryll's Broadway musical which opened in March 1911 and ran through until December, before returning for a brief stint the following year. Once it finished its Broadway run, the show then toured the midwest. As Straub was Wine and Spirits Manager at the Blackstone Hotel in Chicago, it may well be that the drink was first created in Chicago while the show was running in 1912 or 1913.๐ŸŒธ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € This pre-prohibition classic, like the Clover Club, had its detractors and came to be considered a "ladies drink" after prohibition, which unfortunately turned men off to its qualities. Well, I like to think that there's no such thing as a lady's drink anymore with male and female imbibers happy to enjoy a quality sour regardless of its colour. BREAKFAST MARTINI โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Another modern classic that I am sure will be found on menus decades from now is the Breakfast Martini. The Breakfast Martini was created by Salvatore Calabrese almost 25 years ago. Though more a sour than a martini (if a drink wasnt called a martini in London at the end of the last millennium, no soul would have ordered it), Calabrese's is a terrific pour to accompany any brunch.๐Ÿธ โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € A nod to the pick-me-up nature of the first cocktail's Calabrese built his drink around the bitter sweet tanginess of traditional style british marmalade (rather than orange jam/jellies which are overly sweet). According to Calabrese, one morning his wife insisted he take some food with his coffee, and convinced him to have toast topped with some marmalade. On his first taste of marmalade, Calabrese hijacked the jar and took it to work at the Library Bar. After experimentation Calabrese found the marmalade worked excellently with an original White Lady template, and with this the Breakfast Martini was born.๐Ÿ‡ฌ๐Ÿ‡ง โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Though I adore this drink made the way it was intended, I like to pay homage to Calabrese's country of birth and swap the triple sec for Italicus Rosolio di Bergamotto. I find that the citrussy Bergamot sits perfectly with the lemon juice and the tanginess of the orange marmalde as well as the herbal notes of the gin.๐Ÿ‡ฎ๐Ÿ‡น โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Bergamot Breakfast Martini: โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € ๐ŸŠ75 ml Brecon Botanicals Gin ๐ŸŠ30 ml Italicus ๐Ÿ‹25 ml Fresh Lemon ๐ŸŠ1.5 bsp thick cut marmalade โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ € Stir marmalade into first three ingredients and then shake over ice.
