I like to think that Ebrietas is named after the medical condition, hyper hydration, otherwise known as water intoxication.
Water intoxication is, as the name suggests, the overabundance of water in one's blood, a risk of simply drinking far too much water for the body to process at once. The resultant depletion of sodium (hyponaetremia) leads to disorientation, hallucinations, nausea, and easily death.
In the Research Hall of the Hunter's Nightmare, "the cerebral patients imbibed water and listened for the howl of the sea." Through infusion of plain water directly into their blood, the test subjects' heads expanded, in some cases consuming their bodies as their cranium produced "Brain Fluid." This appearance seems to be a fantastical, horrific exaggeration of another medical condition, hydrocephalus, in which buildup of fluid expands an infant's brain, resulting in an oversized cranium.
Ebrietas's head is noticeably bulbous, much like the Research Hall patients'. The central mass is pocked with what appear to be developing eyes, occasionally spewing a murky fluid apart from the frenzied blood (an attack shared by Enlarged Heads). It's worth noting that when we find her at the Altar of Despair, she ignores us entirely, her head bowed in the knee-deep pool of water flooding the cavern. Perhaps she isn't so far removed from the wretched experiments of the Research Hall...?
