FEEL BETTER CHICKEN SOUP
Today I woke up and felt a little ill. So I decided to make myself some good old feel-better chicken soup.
Being mixed, I've always grown up with two different versions of chicken noodle soup, so eventually when I grew up I just combined the two! Hispanic chicken soup usually uses tomatoes sazón, adobo, chicken thigh, lemon, and rice, but American chicken soup usually uses noodles, chicken breast, plain broth, salt, pepper, and celery.
So here's one way to twist the two together.
This recipe is pretty easy to make when you don't have a lot of energy because there is about an hour and a half of cooking where you can just sit down and relax while doing it.
3-4 Chicken Thighs or Legs (I prefer bone-in because it has more flavor and is more tender.)
3 tbsp Garlic honey (works well if fermented, it's fun and easy to make your own!) - Healing, Protection, Purification
One Goya Sazon Packet
1 Bay Leaf - Protection, Healing, Purification
1/2 Cup Baby Carrots (You could just chop up a regular carrot too lol)
1 yellow Onion
2 tsp grated Ginger - Cleansing, Energy, Healing
Half a bag of egg noodles (You could also use rice) - Longevity
4 cups chicken broth
2 green onions
Chicken Seasoning:
4 cloves garlic  - Protection, Healing
1/8 cup chopped parsley - Protection, Strength
1/2 tbsp olive oil
2 tbsp adobo seasoning
1 tbsp thyme - Healing, Abundance, Health, Prosperity
2 tsp basil flakes - Abundance, Prosperity 
1 tsp red pepper flakes
Salt and pepper - Banish Negative Energy
Juice of half a lemon - For Healing
Hot Scallion Oil:
2 tbsp oil
1 tbsp green onion
DIRECTIONS:
Blend the chicken seasonings listed above in a blender or in a mortar and pestle. Whichever you prefer. Rub on chicken and fry in a pot with oil until each side is browned. About 4 minutes on each side.
Add in yellow onion, ginger, and garlic honey, and cook until soft. Add in carrots and chicken stock. Add in Bay leaf and goya season packet. Cook for about an hour.
Add in green onions, and taste if the soup needs more seasoning. If it does, season to taste. Simmer for another 20 minutes.
When the chicken is tender enough to where it is falling off the bone, remove the chicken from the bone and discard the bones and bay leaf.
Add in egg noodles and cook for 7-9 minutes with the lid on, until the noodles are cooked.
Heat up 2 tbsp of oil until very hot. Add in green onion and cook for a little under a minute.
Laddel soup into a bowl and top with a spoonful of scallions and scallion oil.
Enjoy!

Chilindron de Chivo "Cuban Style Goat Stew"

The flavor of the meat is unique, unmistakable and at the same time, very delicious.  The smells that it produces as it cooks will give itself in as everyone will know that you are making “Chilindron” which is the Cuban term to describe a goat stew.  This stew was probably one of the most popular ones in my Cuban home town of Trinidad, Cuba back in the day, and there was this thing that if the goat was robbed (robao) it would taste better.  Every year I make this dish to celebrate my father’s birthday.
Just brown the 5 pounds of goat meat in olive oil and add the green peppers, onions, and garlic. Sprinkle with salt and ground black pepper, leaf oregano, Sazon Goya con cilantro y achiote spice, a few bay leaves, 1 cup of tomato sauce, 1 medium can of diced tomatoes, and a small jar of olive and pimento salad (drained) while stirring at high heat. Add one bottle red wine to almost cover the meat.  Merlot or Cabernet are both excellent, cover and simmer at medium low heat for 1 1/2 hours. At this time add 1 cup of water to cut down some of the acidity from the wine, then cover and cook for another hour.  You will know when the goat is cooked to perfection as the meat will be tender or comes off the bone with ease by using a fork. If the wine reduces too much, you may add as much as needed to maintain the sauce.
When cooked, the color of the stew is a deep dark brown almost black, but when you pull the meat apart, it will show a beautiful red color full of goodness, enjoy!

Col's Cookbook
Slow Cooker Pot Roast
1 large chuck roast ( about 5-6 pounds )
1 large jar pepperoncini peppers
Onion, Garlic, Thyme, Oregano, Goya Sazon ( optional) Salt and pepper ( to your liking )
Beef stock ( or about 3 bouillon cubes )
1 stick of butter
Cut your roast in half length wise, place in slow cooker side by side. Measure out your spices and pour over meat.
Plop you butter in on top.
Measure out 1 Cup of the pepper juice and pour over your meat/spices/butter.
De-stem your peppers if needed and cut if desired. ( BE CAREFUL! Pepper juice HURTS ) Put them into your slow cooker.
Pour in beef stock ( or bouillon ) you just need enough water or stock to cover the beef. Put the lid on and turn it on low for up 8 hours. If done on high it may be done in 4-5. ( It all depends on your slow cooker)
This can be served with whipped mashed potatoes, over egg noodles or veggie noodles or even boiled rice. *It also makes a fantastic sandwich on a fresh baked roll.
Notes:
Additionally if you'd like to do this in the oven you can. I've found a lovely conversion chart for slow cooker times compared to their traditional oven settings. It can be found here.
If you can't find Goya Sazon seasoning at your market you can make your own right in the spice aisle. Equal parts ( try teaspoons to start) of the following:
Ground Coriander
Ground Cumin
Ground Annatto Seed
Garlic Powder
Onion Powder
Dried Oregano
I also believe the Le Fe food company puts it's own blend out as well.
The Budget Friendlier Version
1 beef roast ( as above )
1 Hidden Valley Ranch seasoning / dip packet
1 McKormick Aus Jus packet
1 small jar of pepperoncini peppers ( destem if needed )
I stick of butter
3 boullion cubes and enough water to cover roast.
Follow all other instructions as above and you're done!

how to make goop
depression meal with instructions depending on severity of dysfunction
ingwedients:
microwave rice (I like jasmine)
microwavable or canned chicken (or any alternative protein really)
canned beans (I use black beans. I don't like the texture but everything else covers that up)
sauce of your choice
extras can include cheese, sliced avocado, and greens
start by either microwaving your chicken and beans in a microwave safe container or alternatively, heat in a skillet. using the skillet and seasoning well can really get rid of the can taste some canned chicken can have. seasonings I use include salt(I usually use adobo instead of salt), chili powder, cumin, pepper, and sazon Goya. go crazy with it
STEP 2 after heating up instant rice divide into your bowl. typically makes 2 servings so you can eat half now and put the other half in a Tupperware. top with your protein n beans
STEP 3 add sauce- this is what makes it goop. I usually use taco sauce and salsa Verde but hot sauce works too if you're in the mood! if you are doing extras add that in this step; I like to slice and avocado and smash it in the bowl
STEP 4: ENJOY YOUR GOOP! I always mix it up bc I don't like the texture of beans or avocado and doing that hides the texture.

Mini Lights: This is my good design example. There is a strong use of a grid so that the most important information is quickly visible. There is also an image of the light, so that you know exactly what you are buying.
Sazon Goya Seasoning: This is my bad design example. Although it is colorful and eye catching, the information hierarchy is not entirely clear, since it is a composition of shapes, text, and images without any particular grid. If I had never tried this seasoning before, I would not be particularly attracted to it. The "best by" date is also right in the middle of the package.

I remember going to C-town in the Lower East Side with mi Madre. We would always be in the Goya section buying red kidney beans, instant flan mix, rice, sazon seasoning, and malta drinks. All the sales girls were Latina and couldn’t understand why I was calling mi Madre, Ma. But her face looks Chinita they would say to each other in Spanish. I liked it. For Monday’s dinner this week, I decided to make delicious loaded steak nachos. These nachos are one of the easiest and most delicious dinners to make. They are my comfort nachos. I made the steak by simply frying with salt and pepper then cutting them into bite size pieces after they had rested. I then marinading the cooked pieces using a marinade of garlic, sazon goya con cilantro y anchiote seasoning mix, lots of lime juice, and extra chili powder. I also made homemade spicy queso. To make the queso, you make a rue of butter and flour, then add chicken broth, Colby jack cheese, and spicy salsa. I also added regular salsa, homemade guacamole, tomatoes, onions, pickled jalapenos, and sour cream. Just writing about these nachos are making me crave them!!!!

Fricase de Pollo "Chicken Fricassee"

Chicken fricassee is one of those dishes that if not cooked right, could be a disappointment to your palate. The three things you don't want are hard chewy chicken, a watery sauce, and for the finished recipe to be pale in color, but rather a deep lively and shiny red orange with a sauce that has a thick consistency. Some prefer boneless, but the bone itself enhances the flavor of this popular chicken dish.
Quarter a whole chicken or use boneless thighs. Brown the chicken pieces in olive oil, add the fresh sliced green bell peppers, diced onions, and fresh crushed garlic. Sautee for two additional minutes at medium heat, then sprinkle with salt, ground black pepper, Spanish paprika, and some cumin powder, add one cup of tomato sauce for every pound of chicken, two bay leafs, some seedless green olives, some Spanish capers, and some Spanish golden cooking dry wine known as (Vino Seco) and stir to mix all ingredients with the chicken. If you have some type of red powdered spice like (Sazon Goya with Saffron,) it will enhance the taste even more, that's what I do, and don’t forget to top with diced Spanish pimentos.
At this time add one can of whole new potatoes (drained,) you must cover and simmer at very low heat for at least 45 minutes stirring lightly every 15 minutes to prevent the chicken from burning and sticking to pot. You may add tomato sauce and cooking wine following your culinary instinct to create the consistency and color of the sauce as the chicken cooks rendering its natural juices.
The meat will fall off the bone and the taste is out of this world. The sauce that this recipe renders is often eaten alone over white rice by some as I have witnessed in the past at home, while I sit back with enjoyment sipping my favorite Pinot Noir.
