Estos son unos estupendos ravioli de apio con trufa, tonburi (el caviar vegano a base de semillas procesadas de una extraña planta) y esta vez sí, un estupendo ajoblanco. Los aliños son potentes y el sabor pleno porque la filosofía de la casa debe querer combatir la extendida creencia de la insipidez de las verduras. Fascinado con los aperitivos de @encanto_joseavillez, el estupendo restaurante vegetariano de @joseavillez, un crack! Una cena más y me paso al lado verde del vegetarianismo (que ahora resulta que es más incluyente que el veganismo, cuando antes eran lo mismo). La culpa es de @joseavillez y su ya estrellado @encanto_joseavillez, sí, un restaurante vegetariano. Ya saben que no voy a ellos porque no me gustan las limitaciones y, aunque ne encantan las verduras, me gusta todo lo demás. Así que, ¿para qué ponerme límites? Pero tratándose del genio de Avillez, no podía resistirme porque todo lo que toca lo convierte en oro gastronómico (y del otro). Y fíjense la audacia de lanzarse solo a lo vegetariano en un país como Portugal, mucho menos aficionado a las verduras que nosotros o los italianos, por ejemplo. Y siendo solo verde porque @alain_passard o @rodrigo_de_la_calle, aún incluyen algo animal por poco que sea. Pues lo dicho, me hago vegetariano. Si me cocina él, claro. Ya desde los aperitivos despunta la alta cocina, todo lo que el chef dos estrellas, que ya merece tres, ha aprendido en tantos años de esfuerzo, creatividad y zarandeo de la cocina portuguesa: un cacahuete mimético que es una explosión de salsa satay, crujientes de escabeche de setas o alubias y aguacate con leche de tigre, empanadilla de berenjenas y pimentón (que me gustaría que supiera más a berenjena) y un sorprendente huevo de oro relleno de humus líquido.
