I bought a chest freezer recently so I can finally indulge my grandma instincts of Make An Unreasonable Amount Of Food For Not Much Money And Eat Of It For Months
Today I bought two rotisserie chickens and made SIX large chicken pot pies (9" pie tins), used the leftover carcasses and have chicken stock going in the slow cooker, with enough leftover chicken meat and veg to make chicken rice soup tomorrow for DnD and probably have quite a bit to freeze as well.

I made roasted squash pasta after I reblogged that video of it like.. yesterday lol. Didn't follow the recipe exactly, just kinda did my own thing.
I chopped up an entire butternut squash and a yellow onion, and roasted them in the oven, along with a whole head of garlic. Threw it all in a pot (first pic), hand blended it, then added butter, cream, parmasean, thyme, oregano, and black pepper, and simmered it on the stove for a bit.
I also seasoned some chicken breasts with olive oil, Cajun seasoning, garlic powder, oregano, and honey, then air fried them. Made pasta, added a little of the pasta water to the squash sauce, tossed the pasta in the sauce, then topped it all with the chicken & parmasean.
10/10. Incredible. And I've got enough leftover squash pasta sauce to do this like 3 more times 👌

The canteen was serving garlic bread as a side today and they'd put super creamy garlic butter on halved baps and grilled it 🤤 So tasty!! Refreshing to eat garlic bread without a hard crust hurting my mouth & the thinness of the bap meant the butter soaked most of the way through. 🤭
I've really gotta get some of that butter they use in the canteen but I can't remember the brand. Might be lurpak...

Every single time Mom goes away for a couple weeks without me, my first, driving instinct is to make one big one-pot meal to live on while she’s gone, because Mom wants variety in her dinners and so we have to mix it up while she’s here, but I’ve eaten the exact same breakfast (egg and spinach on an everything bagel) almost every day, except for Saturdays, for almost ten years, and I don’t see why dinner should necessarily have any more variety to it.
Anyway, today’s is a bean soup from a mix that @whats-ursine sent me and ten cups of rice to pour it over and do other rice-using things with, so technically it’s a two-pot dinner, but the principle remains.
