Cilantro Creamed Cucumbers (Vegetarian)
There's nothing, I feel, like making a dish with ingredients you've grown yourself. The taste and fragrance of home-grown herbs, for instance, is incomparable. I have yet to try my green thumbs at cucumbers, but with a lovely specimen bought at the market and a bunch of garden herbs, these refreshing Cilantro Creamed Cucumbers make a light and flavourful Summer-y lunch. Ingredients (serves 2):
1 large cucumber
1 1/2 teaspoons coarse sea salt
1 Green Onion
a small bunch fresh Garden Cilantro
2 heaped tablespoon crème fraîche or sour cream
¾ teaspoon freshly ground black pepper
1 1/2 tablespoon red wine vinegar
1 tablespoon olive oil
Rise cucumber, and cut it into slices. Place cucumbers slices in a colander. Sprinkle generously with coarse sea salt, toss to combine, and place colander over a large bowl. Set aside, half an hour, to let the water come out of the cucumber slices.
Thinly slice Green Onion.
Finely chop Garden Cilantro, and add Cilantro and Green Onion, saving a little of its green part, to serving bowl. Add crème fraîche, black pepper, red wine vinegar and olive oil, and give a good stir until well-combined. Set aside.
Discard cucumber water, and stir cucumbers slices into the cream and herb sauce to coat them generously. Chill in the refrigerator, at least a couple of hours.
Serve Cilantro Creamed Cucumbers well-chilled, sprinkled with reserved green part of the Green Onion.

Yesterday at the nearby Amish store, I bought turnips not knowing what I would do with them. I just wanted them. Here in the kitchen, I had two pint-jars of dried beans, navy and lentils, plus a cup or so of dried chick peas. Decided I had to use them up finally. Set them to soak overnight. What better way than a soup! With turnips! Took my half-inspiration to Bad Manners Food: Fast As Fuck, page 79, All-purpose Veggie Soup for guidance.
I've got WAY more beans than the recipe calls for, but that's okay. I like beans. Everything went into the Instant Pot. I unveganized it by using chicken broth. Putting it in the Instant Pot, I used a lot less broth.
Pretty damn tasty!
Yes, Bad Manners is vegan food cook books and recipes, but you can de-vegan it if you want.

Mushroom, Tomato and Olive Rice Salad (Vegan)
The temperature has reached double digits at midday for the past couple of days, and I seem to have swapped my steaming bowl of soup for hearty salads at lunch-time. On today’s menu, this simple yet tasty Mushroom, Tomato and Olive Rice Salad, with herbs from the garden! Happy Wednesday!
Ingredients (serves 2):
3 large button mushrooms
a pinch of salt and freshly cracked black pepper
3 tablespoons olive oil
2 tablespoons red wine vinegar
2 ripe Roma tomatoes
a dozen black olives
a small bunch Garden Chives
2 sprigs Garden Chervil
2 cups cold, leftover rice
Dust mushrooms and cut them into thick enough slices. Add mushroom slices to a salad bowl. Season, to taste with salt and black pepper. Drizzle generously with olive oil and red wine vinegar, and toss gently to coat in dressing.
Dice Roma tomatoes, and add to the salad bowl, along with black olives. Toss, once more.
Finely chop Chives and Chervil, and stir into the tomatoes and mushrooms, to combine.
Finally, stir in cold rice, tossing well once again, to mix.
Serve Mushroom, Tomato and Olive Rice Salad immediately, or chill in the refrigerator until serving time.
