Apricot Masala Chai Laddu
(Apricot Chai Fudge Balls)

2 cups dried apricot, chopped 1 cup roasted pistachios 1 cup roasted cashews 1/2 cup coconut flakes 1 tbsp masala chai spice blend 1 tbsp black tea leaves (the contents of two tea bags) 1/4 tsp sea salt
1/2 cup coconut butter, softened 1/2 cup apricot jam 2 tbsp butter flavoured coconut oil, melted  1 tsp pure vanilla extract
Powdered jaggery (or coconut sugar), for rolling
Place the; dried apricots, pistachios. cashews, coconut flakes, masala chai spice blend, tea leaves, and sea salt in a food processor. Process until crumbly.
Add the; softened coconut butter, apricot jam, melted coconut oil, and vanilla extract. Process again until you have a well-combined sticky mass. 
Transfer batter to a large glass mixing bowl and place in fridge to chill, for at least one hour.
With clean damp hands, form walnut-sized balls with the chilled batter. Roll balls in powdered jaggery. 
Store leftovers in fridge. (Freezes nicely too.)
Yields; about 42 laddu

4. Using desi ghee, fry the rolled-out bread on both sides on a hot tawa. Cook until both sides are browned. Remove and serve hot.
2. Til Gud Ke Ladoo

Made with white sesame seeds, jaggery, peanuts, and desiccated coconut, this laddu is nutritious, one of the healthier recipes, delectable, and nutty. A sweet treat made especially for the Makar Sankranti celebration that is vegan. These sesame seed ladoos are a tasty, comforting winter treat.
Step-by-Step Cooking Instructions:
1. Roast sesame seeds (til) over a low flame. Stir occasionally till the sesame seeds pop open and change color. This takes two to three minutes on low heat. Don't let them burn.
2. Add a teaspoon of cardamom powder and mix thoroughly. Place aside.
3. Take 12 heaping cups of grated or powdered jaggery and place it in the same pan or kadai.
4. Pour in 3 teaspoons of water. Cook until the jaggery solution reaches the soft-ball stage and keep stirring continuously.
5. Make small balls. Your Til-Gud Ladoo is now ready to eat.
3. Peanut Ladoo

Jaggery and roasted peanuts are the only two ingredients in this simple yet delicious recipe for ladoos. At room temperature, these peanut ladoos last approximately a week, and in the refrigerator, they keep for 15 to 20 days. These ladoos can be served simply or even as a sweet snack in a tiffin box and are considered healthy recipes for kids.
Step-by-Step Cooking Instructions:
Jaggery is simply melted and combined with roughly crushed peanuts in the peanut ladoo recipe. Later, it is formed into rounded balls that can be used as protein balls or ladoos.
4. Strawberry Jam

This is a simple and delicious recipe for strawberry jam that is made without preservatives. Instead of using sugar to sweeten the jam, jaggery is used. The jam keeps well in the refrigerator for around two months.
Step-by-Step Cooking Instructions:
1. First, place 750 g of strawberries and jaggery in a big kadai. If you don't care about your diet, you can add three cups (750 g) of sugar.
2. Stir thoroughly until the sugar dissolves while keeping the flame on medium.
3. Add 1 tablespoon of lemon juice now to prevent the sugar from crystallizing. Stir thoroughly, then boil for five minutes.
4. To protect the strawberries from burning, stir them occasionally. Boil the strawberry for a further              
                                                                           10 minutes, or until it becomes soft.
5. The strawberries should be well mashed to achieve a smooth consistency.
6. Cook the mixture over a medium flame until it thickens, and the foam totally vanishes.
7. Dip a cool metal spoon into the mixture to test the consistency; the mixture shouldn't fall off.
8. Put the jam in a glass jar and allow it to cool fully. Enjoy your homemade strawberry jam with jaggery.
5.Murmura Ladoo

A quick and simple recipe for puffed rice ladoo that is crunchy, crisp, light, delectable, and ready in a few minutes. You can substitute puffed poha (flattened rice that has been puffed) for the puffed rice in this recipe. They are also called "puri unde" or "murmura ladoo." This is one of the healthy recipes to lose weight.
Step-by-Step Cooking Instructions:
1. Dry roast 3 cups of murmura in a pan over a low flame until crispy. Set it apart.
2. Add 1 cup of jaggery and 1 tsp of ghee to the pan now. Stir continuously over a medium flame until the jaggery dissolves completely. Jaggery syrup should be boiled on a low flame until glossy and thick.
3. Drop some syrup into a bowl of water to test the consistency; it should form a hard ball.
4. Turn off the gas and add the roasted murmura to the jaggery syrup. Make sure the jaggery syrup is thoroughly coated; mix carefully. Roll the ladoos right away, using slightly wet palms. Be prompt to prevent the mixture from cooling off and making ladoo               rolling difficult.
5. Once it comes to room temperature, you can store it in an airtight container. Enjoy this winter delicacy made with simple home ingredients.

Diwali is the festival of lights, it lasts for several days. During this festival, one thing among many that’s done is to make or share sweets. While there are many others that are shared, Pista (Pistachio) Barfi and Badam (Almond) Laddu are the two I made this year.

PISTA BARFI
Pista barfi is a sweet made up of ground almonds and pistachios, cardamom, some kind of milk and syrup. The dry ingredients are added to the syrup and then cooked until boiling, the mixture is then allowed to set in a tray until it's solid, and then cut into pieces to eat.
It has all three meal sizes (8 servings, 4 servings and single serving)
Optional icemunmun pistachio, almond , soya flour and cardamom and SCCO any sugar (can be cooked without)
Vegetarian-Safe (With lactose free version)
BADAM LADDU
Badam laddu is a popular Indian sweet, prepared into circle shapes, this sweet is made by mixing ground almond, coconut and cardamom mixed with clarified butter (ghee) or clarified vegetable oil (vegetable ghee) and dried fruit and nuts until it's a firm dough that can be shaped into the laddu.
It has all three meal sizes (8 servings, 4 servings and single serving)

1 cup cashews 1 cup pistachios 1 cup coconut flakes 1 cup dates, pitted and chopped 1/2 cup white sesame seeds 1 tbsp fenugreek powder 1 tsp ginger 1 tsp fennel seed powder 1 tsp cardamom 1 tsp cinnamon 1/4 tsp sea salt
1/2 cup cashew (or almond) butter 1/2 cup pure maple syrup 1 tbsp butter-flavored coconut oil, melted 1 tsp pure vanilla extract 1 tsp pistachio extract (optional)
Black sesame seeds for rolling
Place the; cashews, pistachios, coconut flakes, dates, sesame seeds, fenugreek powder, ginger, fennel seed powder, cardamom, cinnamon, and sea salt in a food processor. Process until crumbly.
Add the; cashew butter, maple syrup, melted coconut oil, vanilla extract, and pistachio extract. Process again until you have a well-combined sticky mass.
Transfer batter to a large glass mixing bowl and place in fridge to chill, for at least one hour.
Remove from fridge and, with clean damp hands, form golfball-sized balls with batter. Roll balls in black sesame seeds. 
Serve.
Store in fridge. (Can also be frozen.)

Zhyan penned down the last of his comments on the three artists he had managed to see when running from stage to stage. He wiped away the sweat from his forehead. At least he was still in good shape. Content with his findings, he sat down on the floor, getting some of the food he hadn’t gotten to eat earlier from his bag, and nibbled on the vegan baklava while looking up the festival program again. No matter how hard he tried he couldn’t put it to memory. 
He sniffed the air when a familiar scent hit him, and jumped to his feet - more like scrambled with his bang hanging over one shoulder, his phone in one hand, and baklava in the other - and walked up to a stranger holding a food that reminded him of home. “Sorry, can I ask where you got that?” He asked. “It is laddu right?”
