I made my delicious Lentil Shepherd’s Pie. It is one of my favorite comfort foods. I used to order it often it at restaurants, but it was always so salty, oily, and full of unhealthy ingredients. It’s pretty easy to enjoy this dish in a much healthier way when you make it yourself. Hooray for tasty plants and healthy cooking! Ingredients: • 1/2 large onion, diced  • 1/2 cup mushrooms, sliced • 3 garlic cloves, minced • 2 large carrots, chopped  • 1 celery stalk, chopped  • 1/2 bell pepper, chopped • 1.5 cups green beans, chopped  • 1.5 cups frozen corn • 1.5 cups frozen peas • 1 tsp rosemary  • 1 tsp garlic powder  • 1 bay leaf  • 1.5 cups uncooked brown (or green) lentils • 6 ounce can tomato paste • 8 medium potatoes • 1/2 cup plant-based milk Instructions: 1. Sauté onion, mushrooms, garlic, carrots, and celery, adding water as needed. 2. Stir in lentils, green beans, bell pepper, water, rosemary, garlic powder, tomato paste and a bay leaf. Bring to a boil, then simmer for 30 minutes. In the last 10 minutes, remove the bay leaf and add the frozen corn and frozen peas. 3. Meanwhile, cook the potatoes, add milk, and mash. 4. Pour the lentil-veggie mixture into a 9x13 dish. Top with the mashed potatoes. 5. Bake at 350 F (177 C) for 25 minutes. Let cool for 10 minutes, then serve with green onions, black pepper, and/or hot sauce. "No Tuna" Salad Sandwich This "No Tuna" Salad Sandwich tastes just like the real thing, but without the tuna. The filling is made with the following ingredients: 1-19 oz can of chickpeas, drained and rinsed 1/4 cup celery, diced 1/4 cup pickles, diced 1/4 cup carrots, shredded 3 tbsp tahini 1 tsp mustard 1 tsp maple syrup Salt and pepper to taste In a bowl mash the #chickpeas after which you will add the rest of the ingredients until well mixed. What - a cobbler that’s super easy and made with just fruit and oats?!? A dessert you could enjoy as a healthy breakfast?!? Yep, which is why I make this CHERRY-BERRY COBBLER often. It’s yummy cold, and even better hot with a ball of nice cream (frozen banana). #Recipe makes 8 servings. 2 pounds frozen cherries and berries (1 L) 2 cups rolled oats (#glutenfree if preferred) 2 ripe #bananas, mashed or puréed 1 Tbsp cinnamon 1/2 tsp cinnamon 1/4 tsp cardamom 1. Mix the oats, spices, and bananas to make the crust mix. 2. Place the fruit in a 9" baking dish, then spread the crust mix over the fruit. 3. Bake uncovered at 375 F (190 C) for 30-35 minutes. I have been experimenting with a variety of homemade oil-free salad dressings, and this one is a clear favorite: Roasted Garlic Balsamic Dressing. It has a yummy sweet and salty flavor, while also being savory from the roasted garlic. Simply blend the following ingredients to make 8-10 servings. It generally lasts about a week in the fridge. • 2 pitted dates, soaked in hot water for 15 minutes • 1/2 cup of the sweet water in which the dates soaked • 1/2 cup balsamic vinegar (8 Tbsp) • 1 Tbsp low-sodium soy sauce • 1 Tbsp Dijon mustard • 2 Tbsp nutritional yeast • 1 Tbsp onion powder • 2 garlic cloves, roasted I like to throw some garlic in my air fryer each week so that I have roasted oil-free garlic in the fridge whenever I need it - this is an excellent use of that garlic. Sometimes simple meals are best. I steamed yellow squash and green beans to enjoy with some easy peasy mushroomy rice pilaf. To make a quick and easy pilaf: 1. I don’t know what to call this other than “Mexi-Mushroom Chickpeas” On the weekends I enjoy experimenting with any leftovers from the week. Sometimes it doesn’t turn out great, but I really enjoyed this morning’s creation. I had some of my homemade healthy mushroom gravy leftover, along with some #chickpeas aka #garbanzobeans. I mashed up the chickpeas and cooked them with some salsa, then added in the mushroom gravy. I served it on a bed of spinach. It turned out delicious! Completely free of oil, sugar, salt, and flour. Hooray for #wholesome plant-based nutrition. Here is my recipe for the yummy and healthy mushroom gravy: Ingredients: • 2 cups mushrooms, sliced • 3 garlic cloves, chopped • 1/2 onion, chopped • 4 cups cauliflower, chopped • 3/4 cup plant-based milk • 2 Tbsp Balsamic vinegar • 2 tsp black pepper 1. Steam the cauliflower. (It is used in place of flour to thicken the gravy.) 2. Sauté the onions, then continue sautéing the mushrooms and garlic with a bit of water. 3. Blend half of the onions/mushrooms/garlic along with all other ingredients in a blender. 3. My roasted jalapeño dip is too good not to share. It’s super flavorful - not too hot but has a nice kick! Yummy to dip veggies in or to spread on toast. Simply blend the following ingredients, and enjoy! 1 cup cashews (raw & unsalted), soaked for 1 hour 4 jalapeño peppers, seeded, chopped, & roasted 3 garlic cloves, roasted 3 teaspoons lemon juice 1/3 cup nutritional yeast 1/3 cup water Dash of salt and pepper I used my #airfryer to roast the jalapeños and garlic at 380 F for 8 minutes. The hardest part was waiting an hour for the cashews to soak. I have made a few healthy Vegan cheese sauce alternatives, but I kept reading from others than High Carb Hannah’s version is the best. Confirmed! No, it doesn’t taste exactly like real cheese (or as Dr McDougall likes to call it, “puss and hormones”), but this sauce has a savory cheesy flavor that totally meets my need for great flavor - without oil or dairy. Ingredients · 3 small potatoes, chopped · 1/4 yellow or red onion, chopped · 2 cloves garlic · 1 medium carrot, chopped · 2 tbsp miso · juice 1/2 lemon · 1/4 tsp salt · 1/4 tsp smoked paprika · 1/4 tsp cayenne (optional) · 1 tsp paprika · 1 tsp garlic powder · 1 tsp onion powder · 1/2 cup nutritional yeast · 1 cup water Her instructions include boiling the veggies, but I batch cook my potatoes each week (and refrigerate them to increase their resistance starch to minimize glucose impact). I sautéed the onion in a bit of water, then addd garlic and carrots until they’re soft. Add the water, cooked veggies, then all other ingredients to the blender and blend for 1 minute. SWEET POTATO PIE was first created in west Africa, and introduced to the United States via slaves. It has since been a staple of Thanksgiving and Christmas feasts in many African-American and Southern U.S. homes, while pumpkin pie has been more typical in the northern U.S. I think both are delicious and perfectly acceptable traditional pies to serve on holidays. Both pies are typically made using almost identical ingredients like eggs, sugar, cream or condensed milk, cinnamon, and nutmeg. My healthier version of #sweetpotatopie is delicious, but free of dairy, saturated fat, and refined sugar. #HealthisWealth The following recipe makes 6-8 servings. Filling: · 2 cups cooked sweet potato (about 1 ½ sweet potatoes) · ¼ cup aquafaba (the liquid from a can of chickpeas) · ¼ cup maple syrup · 2 tsp cinnamon · 1 tsp nutmeg · 1/2 tsp cloves · 1 tsp vanilla extract · 1/2 cup plant-based milk · 2 Tbsp cornstarch   Crust: Note: I make a super simple 2-ingredient crust. It's not a typical pie crust, but it works well to hold the pie filling, it doesn't stick to the pan, and it's yummy. Feel free to use any pie crust you prefer. · 2 cups oats ( #glutenfree if needed ) · 2 ripe bananas, mashed   Whipped Cream Topping (optional): · 3/4 cup aquafaba (the remaining chickpea liquid) · 3 Tbsp maple syrup · 1 Tbsp vanilla extract · ¼ tsp cream of tartar (or lemon juice)   1. Using a blender, blend filling ingredients, except cornstarch, until smooth and creamy. Add the cornstarch and blend a bit more. 2. Combine crust ingredients, then mash the crust mixture into a baking pan. Place the filling on top of the crust. 3. Bake at 375 F (190 C) for 45 minutes. Once cooked, refrigerate for at least an hour. 4. Optionally, blend the aquafaba and cream of tartar in a high-speed blender for 5 minutes. Add the maple syrup and vanilla extract. Continue blending until stiff peaks with tips form.
