How did the ancient greeks celebrate new year?

That's not well documented. The Athenian new year was on the 1st of Hekatombaion, so roughly around late June or July, typically after the summer solstice. We owe the 1st of January as our current New Year to Julius Caesar who decreed it in 45 BC. Before that point the Romans had it in March. And because every Greek city state has their own calendars, there was no universal date for the New Year.

Anyway, Mikalson in "The Sacred and Civil Calendar of the Athenian Year" doesn't note any known particular festivities for the 1st of Hekatombaion aside from the Noumenia for the 5th century BC. And I haven't found anything in either in other calendar-related works that I have access to, aside from the last chapter of the 1994 French article by Camps-Gaset Montserrat (L'année des Grecs : la fête et le mythe).

In this chapter, the author explores various seasonal celebrations as potential New Year markers in Athens. His argument being that the 1st of Hekatombaion marked the political new year, but that other cycles (especial agricultural ones) were "new years" in their own right. His conclusion is essentially that, while there might have been other perceived New Year moments, aligning them with the official Athenian calendar becomes an unsolvable puzzle due to the vast interpretations allowed by historical records.

aka we don't really know. There was certainly some kind of religious observance linked to the inauguration of the new archon (since Hekatombaion 1st would be when they would be appointed) but I'm not sure if we know the details of such a ceremony.

Honestly, when it comes to celebrating our modern New Year, I'd either go steal borrow ideas from post-45 BC Rome and take inspiration from the Roman god Janus to create a custom celebration/festival for Hermes and Hekate under their triform and gateway associations.
