Ludwig Bemelmans' NY Oyster Bar Shellfish Pan Roast Recipe

I love Ludwig Bemelmans for many reasons that usually have more to do with writing and his challenging career arc than with food (more details here). But this post's about the food, and a specific favorite recipe.
In his collection of "slice-of-culinary-life" writings La Bonne Table,  Bemelmans passes on a bit of info that many New Yorkers, or visitors to the city, would be glad to have: the original recipe for one version of the famous shellfish pan roast served at Grand Central Terminal's venerable Oyster Bar and Restaurant (a venue much appreciated by the cats in the Feline Wizardry series, as well as by the series's author, who ate there as often as she could afford to while living and working in Manhattan).
So here's the image of the page in La Bonne Table where the recipe/method appears, and a transcription of the method. Bemelmans gives the version for the clam pan roast. For an oyster panroast like the one in the header image, I just substitute canned oysters and enough fish stock or consommé to equal the amount of clam broth Bemelmans quotes. All kinds of shellfish work brilliantly in this (and if you're actually in the Oyster Bar some time and feel inclined toward this dish, you might like to order the combination one, which has a little bit of everything). I've broken up the original block of his text for readability's sake: may his kindly shade forgive me.

We went to rake for cockles, which are like our clams, except for their globular structure, and they taste like Little Necks. I gave the hostess a recipe, which I found in Grand Central Station's sea-food bar, where a Greek chef who makes it wrote it down for me and showed me how it's made. It is one of the best things to eat, simple to make-- in fact, nobody can go wrong. It's a meal in itself, and it costs very little.
You need paprika, chili sauce, sherry wine; also celery salt, Worcestershire sauce, butter according to your taste, and clams. I use cherrystones, which are washed and brushed, and then placed in a deep pan with their own liquid. For each portion of eight, add one pat of butter, a tablespoon of chili sauce, 1/2 teaspoon of Worcestershire sauce, a few drops of lemon juice and 1/2 cup of clam broth. Add a dash of celery salt and paprika.
Stir all this over a low fire for three minutes. Then add four ounces of light cream or heavy cream, according to your taste, and one ounce of sherry wine, and keep stirring. When it comes to the boiling point, pour it over dry toast in individual bowls. Add a pat of butter and a dash of paprika and it is ready to serve.
If you have made too much of it, put the remainder in a container in your refrigerator. It will be as good, warmed up, a week or a month* later. It's called Clam Pan Roast, if you ever want to order it at Grand Central Station's Oyster Bar. I understand the recipe originally came from Maine.
*I love his enthusiasm here, but frankly I wouldn't leave this in the fridge for any month. A few days maybe. (Though it must be said, I couldn't leave it alone that long anyway. It's really good.)

this is a a toy hot air balloon. you can hang it from your ceiling. something about it is very calming. the antique shop in paddington 2 has these exact balloons hanging all over it (but they are not antiques. they are new.) a good gift for someone who likes the idea of hot air balloons but is too scared to go in one, or someone who loves paddinging 2 so much they will recognize this prop that was in one frame for 2 seconds. (you can get these at the march hare in the east village, a very magical and well priced childrens store.)

this is the ugliest candle ever but it smells sooooo good. they're made by a couple in greenport ny, way out on the north fork of long island. give to someone with bad visual taste but a good sense of smell ..or else blindfold them .

ive bought this book as a present for almost everyone i have ever known at some point and they have all thought it was a very personal and touching gift ..which makes me feel guilty about the amount of people I’ve given it to.. rare book gift that people seem to actually read. also appealing to basically anyone. (the book is about a guy who drives around the country and talks to random people and writes down what they say. so anyone with any type of curiosity about other people will enjoy it, so just dont give it to a sociopath. also there are pictures)

a fancy electric tea kettle. my brother bought me one and now i actually drink tea. my british friend told me tea in america is terrible because the boiling point of a stove is usually too high and americans dont have proper tea kettles. maybe thats true. but mostly i am just lazy so having an electric kettle is great . good gift for a lazy person or a british person in america. you can also use it to make ramen. personally this specific kettle is too expensive for me to buy for anyone but if youre rich you should do it.

ok so this one is an experience gift. if you are close enough to drive to robert moses state park you can park at field 5 and walk down a little path all the way on the left side of the lot to the fire island lighthouse. if you climb the lighthouse you get a certificate of accomplishment. after doing this i suggest going to chowder bar in bayshore. they shuck oysters in the parking lot and have the best long island clam chowder (half manhatten and half new england) as well as the best key lime pie i have ever had (and yes ive had it in the keys!) this gift is great for someone you love and if they dont enjoy this then you should probably break up with them

Aviel has had a colorful life. Growing up in Upstate New York, he came from a large family and was always the entertainer - the one making the jokes, keeping his family laughing. But he also worked hard. Odd summer jobs and saving his money for college.
He loved the creative side of things, but wanted to deep dive into it. Art history and Archaeology was the perfect niche for him, and he found himself going on expeditions to uncover and research. He's been all over. A rambling man, a traveler. A speaker at various international conferences. The man may not be a household name, but Aviel's face is well known within the circuit of gallery spaces and museums.
During this time he was seen and picked out for the information he could provide. A little name or location here or there. Something to assist the Brotherhood - when he could. It was never really about the money for Aviel. He liked a little chaos, loved seeing rich people squirm in their seats. And oh, was it fun to get back at the upturned noses at the various museums he frequented by dropping some of their precious private lives into the laps of someone who could blackmail them or hack into their systems.
After decades within the field, he decided to pursue a different passion - with grandkids and his own kids all grown up, empty nest and all that, he left his life of historian lectures and archaeology. Became a kindergarten teacher and never looked back.
However, Aviel sits on a wealth of information he never expected... because his students have rich parents. Affluent. Powerful. And boy, do they love to talk. Maybe he's thought of getting back into it - a little dropped factoid here or there.
Maybe for the right price, or the right connection. Who knows? He's a little bored, after all. Finger turkeys and kinetic sand only get you so far...

Need a reason to indulge in carbs? It’s National Pizza Month. Pizza deserves a celebration, being the most Instagrammed food worldwide, according to a study commissioned by Chef Alessio Mecozzi. You might have thought beautifully decorated cupcakes or sushi (#2) would have reigned supreme on Instagram. What is interesting is that six percent of the photos of pizza were posted by New York City pizza aficionados and only two percent were posted by Instagrammers in Italy.
Pizza is big business, having an international trade show, “Pizza Expo” and a trade magazine “Pizza Today.”  We have Gerry Durnell (1942-2011), the founder of the magazine and trade show, to thank for the month’s celebration. Why October? It was in October of 1984 when the magazine debuted. Then, in 1987 the U.S. Congress officially designated October as National Pizza Month. The current issue pays homage to National Pizza Month – where it says, “The Northeast has the highest concentration of pizzerias and Italian restaurants in the U.S.”

New Haven, CT has been my home for almost four decades, and one thing that has not changed is the question I am often asked by visitors…What is the best place for pizza in New Haven, Sally’s or Pepe’s. Both are legendary pizzerias, well-known throughout the U.S. and beyond. Of course, when I moved to New Haven it was a must to wait on the long lines to get a table at these famous establishments. Now, when I pass by their restaurants on historic Wooster Street in New Haven’s Little Italy, I say to myself they must be tourists or recently moved to the area. Over the years, I have come to find the pies at Modern and BAR just as good minus the long lines. Of course, that is only my opinion. Truth be told, as a native New Yorker, I still think pizza is best in “the city.”
I can bet in your area, there is the debate as to what pizza is the best around town. Please let me know, so when I next visit Greater Philadelphia, I’ll know where to go for the best pizza.
Of course, each of us have a favorite style…Neapolitan, Chicago, New York Style, Sicilian, Greek, California, Detroit, St. Louis, New Haven-style apizza (pronounced ah-beets by many locals)
Whatever the type of crust (thin or thick) or style of pizza, the sky is the limit as to the ingredients to make pizza. The artisan pies created today fit the bill for many, but if you are like me, I am a traditionalist when it comes to pizza. I will leave the sriracha sauce, apples and goat cheese, blue cheese and pumpkin to dishes other than pizza. I must admit though, the mashed potato and bacon pizza served at BAR in New Haven is an exception!
If you have joined or thinking about joining the home pizza making craze check out “Pizza: The Ultimate Cookbook,” by Barbara Caracciolo (2020 Cider Mill Press,$35) . From backyard wood-fired pizza ovens to electric portable pizza ovens for the kitchen to equipment to make crispy pies in your traditional oven, the book will become your go-to for recipes (there are more than 300!) that will capture your taste buds and provide inspiration. Before getting to the recipes, the author writes about the history of pizza and in-depth discussions about the various styles of pizza. I learned what the difference is between New Haven-style and New York-style pizza. She writes, “The biggest difference when compared to New York pizza is the omission of low-moisture mozzarella cheese. The best New Haven pizzas let the sauce shine, so much in fact they are often called tomato pie. In New Haven, mozzarella is considered a topping rather than a key component.”
The Perfect Pie chapter gives details about ingredients and equipment. The recipes for doughs (no-knead as well) for both pizza and focaccia are plentiful.  The photos bring the slices to life. Pizza with Eggs & Bacon
Yield: 1 Pizza / Active Time: 15 Minutes / Total Time: 45 Minutes
The headnote says, “Cold leftover pizza is always a great breakfast option, but this pie does it one better.”
Semolina flour, as needed
1 ball pizza dough
3 ½  ounces (100 grams) low-moisture mozzarella cheese, shredded
2.4 ounces. (70 grams) bacon, cooked and chopped
2 eggs
Salt and pepper, to taste
Olive oil, as needed
Preheat the oven to the maximum temperature and place a baking stone or steel on the middle rack as it warms. Dust a work surface with the semolina flour, place the dough on the surface, and gently stretch it into a round. For more detailed instructions on properly stretching a ball of pizza dough see page 73 in the book. Cover the dough with the mozzarella and top with the bacon. Crack the eggs open onto the center of the pizza, season with salt and pepper, and drizzle olive oil over the top.
Using a peel or a flat baking sheet, transfer the pizza to the heated baking implement in the oven. Bake for about 15 minutes, until the crust is golden brown and starting to char. Remove and let cool slightly before slicing and serving.

Avocado, Tomato & Feta Pizza
Yield: 1 Pizza / Active Time: 15 Minutes / Total Time: 45 Minutes
Semolina flour, as needed
1 ball pizza dough
1.4 ounces (40 grams) low-moisture mozzarella cheese, shredded
Olive oil, to taste
Flesh of ½ avocado, mashed
½ tomato, diced
1 ¾ ounces (50 grams) feta cheese, crumbled
Salt and pepper, to taste
Preheat the oven to the maximum temperature and place a baking stone or steel on the middle rack as it warms. Dust a work surface with the semolina flour, place the dough on the surface, and gently stretch it into a round. Cover the dough with the mozzarella and drizzle olive oil over the pizza.
Using a peel or a flat baking sheet, transfer the pizza to the heated baking implement in the oven. Bake for about 15 minutes, until the crust is golden brown and starting to char. Remove and let cool slightly before topping with the avocado, tomato, and feta and seasoning with salt, pepper, and a drizzle of olive oil.

Mixed Berry Pizza
Yield: 1 Pizza / Active Time: 15 Minutes / Total Time: 45 Minutes
The headnote says, “This is not a dessert pizza. The strawberry puree stands in for tomato sauce, pairing surprisingly well with the cheese and making for a sweet, sour, and savory flavor experience.”
1 ¾  ounces (50 grams) strawberries
Semolina flour, as needed
1 ball pizza dough
2.1 ounces (60 grams) low-moisture mozzarella cheese, shredded
1 ounce (30 grams) raspberries
1 ounce (30 grams) blackberries
1 ounce (30 grams) blueberries
Fresh basil leaves, for garnish
Preheat the oven to the maximum temperature and place a baking stone or steel on the middle rack as it warms. Place the strawberries in a blender and blitz until smooth. Strain the puree to remove the seeds and set aside.
Dust a work surface with the semolina flour, place the dough on the surface, and gently stretch it into a round. Cover the dough with the strawberry puree and top with the mozzarella, raspberries, blackberries, and blueberries.
Using a peel or a flat baking sheet, transfer the pizza to the heated baking implement in the oven. Bake for about 15 minutes, until the crust is golden brown and starting to char. Remove and let cool slightly before garnishing with the basil, slicing, and serving.
Quick Pizza Dough
3 1/3 teaspoons 9.6 grams) active dry yeast OR 2 ½ teaspoons (8 grams) instant yeast
15 ½ ounces (440 grams) water
23.2 ounces (660 grams) bread flour OR “00” flour, plus more as needed
1 tablespoon (17 grams) table salt
Olive oil, as needed
If using active dry yeast, warm 3 ½ tablespoons (1 ¾ ounces/ 50 grams) of the water until it is about 105 degrees. Add the water and yeast to a bowl and gently stir. Let sit for 5 to 10 minutes. Instant yeast does not need to be proofed.
In a large bowl, combine the flour, yeast, and water and work the mixture until it just holds together.
If kneading by hand, transfer dough to a flour dusted surface. Work it until it is smooth and elastic. (The book gives instructions on kneading and mixing on page 71).
Add salt and knead until dough is developed, elastic, and extensible, about 5 minutes. Form dough into a ball and place in a lightly greased airtight container that is at least three times bigger. Let rest in a naturally warm spot (in the oven with light on is a good option) until it has doubled in size, about 1 hour.
Transfer dough to a floured work surface, divide it into four pieces, and shape into balls. Place the rounds in a greased baking dish with high edges, leaving enough space between rounds so that they won’t touch when fully risen. Cover with greased plastic wrap and let rest for 40 minutes to an hour before using to make pizza.   Makes 4 balls of dough.

Even though they took beautiful pictures w/the two Rolls Royce's in front of the house, this $8,698,000 mansion in Mill Neck, New York has been on the market for over 260 days. Could it be the owner’s taste? Take a look and see what you think.

The entrance hall is nice, it’s interesting how so many people choose that same Caesar’s bust for the entrance. The home, built in 1966, was inspired by French design, but the current owners re-imagined it, and it is now known as Villa La Colline.

Idk if you know anything about this, if not, I apologize.
I somehow convinced my sister that I want to go on a vacation (from canada) to New York to see the trains/subways. I've looked around the internet for some tours, and found some really interesting ones!
Though, do you know of any special places to visit? Either museums or locations that'd be interesting? Apart from the pokemon center shop of course lol
(A few years ago we went to NY and the tour guide told us to stay on the train past the last station -where it would turn around- to see an abandoned station. I spotted the entrance but that's it. Are there any other cool locations in your opinion?
Of course, only if you don't mind! Trains are just so interesting! Like, how the NY subway runs on metal wheels, compared to my city's subway tires (like a car, so rubber tires), and how the NY subway somehow chose to have the interior of the cabs have AC but all the heat is thrown out into the platforms? It's hilarious to me! And apparently they started including the Japanese point and call technique?? I love trains and subways!)
OH MY GOD, THAT WAS CITY HALL! That's my favorite subway station in NYC! It's the oldest, built when the NYC Subway opened in 1904, and it's gorgeous, with Guastavino tile on the ceilings. Here's what it looks like when it's lit up:

City Hall has been closed since the 1940s because the trains got longer and couldn't fit alongside the platform anymore, which is a shame because in my opinion it's the prettiest subway station in NYC. Right now, unless you go in via a New York Transit Museum tour, it might not be the safest to try to do the ride-through, because there's currently an initiative that forces everyone off at the end of lines (they're trying to "combat homelessness," but I suspect that isn't going to use the solution I would, which would be to house everyone so they had stability, give them access to mental health treatment and drug rehab programs, and help them find employment when they were settled).
If you're into trains, I highly recommend these places specifically:
Grand Central. You HAVE to see Grand Central in person to truly appreciate that ceiling. Check out the whispering gallery down by the oyster bar - if you stand diagonally across from someone and talk into the wall, they can hear you all the way on their side of the room! There's a library there that has the carpet from the 20th Century Limited (it's above the Apple store, which is currently trying to unionize), but I haven't even managed to get in there yet - it's by appointment and I've been busy.
If you want to cry, Penn Station. If you can find the brass rails from the original building, touch them and be sad with me. Moynihan Train Hall is an improvement, but it's not the original Penn Station and it never will be. Nothing will be.
The High Line! The High Line is a park that used to be a freight railroad. The New York Central used to own said railroad, and it used to go straight down 10th Avenue at street level to get to St. John's Depot. This did not go very well and a lot of people managed to get hit by trains, to the point that they started calling it Death Avenue. They actually hired men on horseback to precede the trains and warn the public they were coming - these men became known as the West Side Cowboys. Eventually, they figured out that they could elevate the line, which they did, building a new freight terminal (St. John's Terminal). The line was eventually abandoned, and it was rehabilitated into a park. It's a nice, relaxing walk with a lot of cool plants and art, and you get to pass through and near some old factories and drop-off points.
The New York Transit Museum. They're out in Brooklyn, so it can be a bit of a hike if you're mostly centering your trip in Manhattan, but if you like trains it is ABSOLUTELY worth it to go visit. Their collection of vintage equipment is amazing, and the station itself that the museum is housed in was a filming site for The Taking of Pelham One-Two-Three. You have to register for visiting times in advance right now, so if you're planning on including them in your trip in a few months book it now! They also have a secondary gift shop in Grand Central.
Hoboken Terminal. It's just a PATH ride away from Manhattan, and the ceiling of the waiting room has Tiffany glass skylights. Absolutely stunning, and you can then take the Hudson-Bergen Light Rail to...
Communipaw Terminal, in Jersey City, which I talked a bit about in this post. Both Hoboken Terminal and Communipaw Terminal have Bush train sheds, which were considered a revolutionary design at the time and are now historically significant.
Now, if you're looking for non-train stuff...
Nintendo NYC. I’m there frequently because, y’know, video game merch. If they do a Splatoon 3 release event I’m going to try to go to it, actually. If you’re looking for Pokemon plush, go to the second floor!
American Museum of Natural History. My favorite place in the entire world and where I wanted to work as a child (I wanted to be a paleontologist). I did my archival internship and practicum there when I was in grad school, fulfilling my childhood ambitions in a way. If you like dinosaurs, this is the museum for you! (Also has a great subway stop with cool art - 81st Street!)
Metropolitan Museum of Art. If you’re more into arms and armor, ancient Egypt, or historical art in general, this is the museum for you.
MoMA (Museum of Modern Art). MoMA has free admission on Friday nights, and it has some classics, like Andy Warhol’s soup cans and Van Gogh’s Starry Night!
Take a walk in Central Park. If you want to avoid the tourists, get up to the northern part of the park.
If you like Seinfeld, you can eat at Tom’s Restaurant. I was actually there just a few days ago. It’s a good place to get the real NYC diner experience.
Get a hot dog or pretzel from the street vendors. Trust me, just do it.
The real-life Casteliacone can be obtained from a Mister Softee truck, if you happen to see one!
If you want to go to the Statue of Liberty, that has to be booked months in advance, so be warned and plan ahead.
If you’re interested in LGBTQIA+ history, visit the Stonewall Inn. There’s a cool augmented reality history project associated with it called Stonewall Forever that I recommend as an archivist.
If you’re more punk, St. Mark’s Place used to be the center of punk activity in NYC. It’s toned down now, but there’s a rather NSFW (...interesting art within) izakaya called Kenka (lit. “brawl”) that’s the best place to get a meal for under $20 in NYC. You have to get there around 4:30, get your name on the waiting list, and then be there when it opens for the night around 5 pm to get in at a reasonable time without waiting too long. The waitlist WILL get long. Kenka actually appeared in the Love Live movie, and New Yorkers who saw the movie recognized it instantly and were extremely happy.
