~ Mini Apple Pies ~
Here is an easy pie recipe I love to make during autumn and winter time! It's very easy and quick and perfect to enjoy with some hot cocoa or tea or to gift to family and friends! It's a bit higher in calories, but they really fill you up. ♥
162 calories | 2g Protein | 7g Fats | 27g Carbs per serving (makes 6)
Time needed: 1 hour roughly
What you need
1 package puff pastry
3-4 tbsp cinnamon
3 tbsp brown sugar
2 packages vanilla sugar (optional)
2 tbsp butter
1 egg (optional)
1. Preheat oven to 180°C | 356°F. Wash apples well and cut them into cubes.
2. In a bowl, mix the apples with cinnamon and sugar. Make sure the apples are well covered.
3. Heat butter in a pot. Cook apples for about 5 minutes or until they are soft enough for you.
4. Take out the pastry and brush it over with the juice from the apples, then cut it into squares. With a spoon, fill one triangle of the square with the apples, then overlap it with the other triangle and use a fork to seal the ends and brush the top with the egg.
5. Bake for 20-25 minutes.
Tip: You can also add Christmas seasoning or fill it with pumpkin instead of apples! If you don't have puffy pastry at hand, you can make your own!

25 Dates of Christmas: Day One
Christmas was your favorite time of year. You loved everything about the holiday. You loved how bright the lights seemed to shine. How beautiful the snow looked when it fell from the sky. How euphoric the children looked as they saw Santa Claus. You loved it all, but there was one thing you loved the most about this time of year and you were finally able to share it with the one person you loved the most.
“Amajiki baby, are you ready?” You asked, not being able to hide the excitement from your voice.
“I’m coming.” He shouted back as you got everything ready on the counter.
You and Amajiki had been together for almost a year now and you fell in love with him more and more every day.
He walked into the room and your heart nearly leaped out of your chest. You couldn’t stop yourself from running over to him to give him a kiss.
“You look so cute!” You shouted as you looked down at his Grinch pajamas that matched your own. A shy blush appeared on his cheeks as he looked down at your smiling face. His shyness only seemed to appear when you complimented him or he was around other people.
“You.. you really think so?” He asked as his blush deepened.
“The cutest!” You answered as you grabbed his hand and pulled him into the kitchen.
You had the counter covered in baking supplies and ingredients for chocolate chip cookies, white chocolate peppermint bark, sugar cookies, puppy chow, and peanut butter Rice Krispy treats.
You had a hard time controlling your excitement as you jumped around the kitchen trying to decide what to make first.
“You’re really excited,” Amajiki said as he looked down at you with a smile.
“This is my favorite thing to do this time of year.” You said as you looked up at him with a smile of your own.
“So what’s first?” He asked as he turned his attention to all of the ingredients in front of him.
“How about the cookies? Since those are the only things that need to bake in the oven.” You answered with a smile as you handed Amajiki the measuring cups and told him what to measure each ingredient.
After everything was measured out and mixed together you divided the cookie dough into two bowls and added chocolate chips to one and left the other plain.
You looked over at your boyfriend and saw a smile on his face as he folded the chocolate chips into the dough. His shirt was covered in flour and he had somehow gotten it on his cheek as well. Your heart swelled at the sight.
You slowly walked the few steps over to him and wiped the flour off his cheek, giving him a small kiss before going back to roll your cookie dough into balls, but not before seeing his whole face turn red from your affection.
Once the cookies were put in the oven you started on the other treats. You worked on the puppy chow as Amajiki started on the peppermint bark. Once you finished your tasks you both got to work on the Rice Krispy treats. Amajiki grabbed the bowl from you when he saw you slowing down with the stirring, your arm tired from the constant movement.
“Let me help.” He said as he gave your forehead a kiss as he finished the mixing. Now it was your turn to blush.
As soon as you got the gooey mixture into the pan the timer went off for the cookies. You jumped up and squealed as you ran over to the oven to carefully pull the sheets out. Your mouth began to water as soon as the oven door opened. The aroma filling your apartment until all you could smell was cookies.
Amajiki stood beside you and watched to make sure you didn’t accidentally burn yourself from all the excitement, considering it wouldn’t be the first time it’s happened.
Setting the cookies down you turned around and immediately got started on the frosting.
“What color should we do babe?” You asked as you mixed the ingredients together until you got a perfect consistency.
“How about purple, blue, and yellow.” He answered as he got the color out for you.
You nodded enthusiastically as you gathered the frosting into three separate bowls as he poured the food coloring into each bowl, mixing it as he went. Soon you had three vibrant colored frostings and were ready to decorate the sugar cookies. As Amajiki placed the cookies on a plate you got the sprinkles out and ready.
Decorating the cookies was way more fun than baking them. The first cookie you frosted had purple and blue stripes with sugar sprinkles on top. You took a bite as soon as it was decorated not caring that you still had plenty more to do.
“Mmmm mmm mmm! Babe these are so good, here try a bite!” You squealed as you shoved the cookie towards his mouth. He took a bite and his face lit up.
“Wow, these are delicious!” He said as he took another bite from your cookie, giving you a smile as he chewed.
Your heart warmed at his approval and you couldn’t wait for the rest of the treats to get done.
When everything was decorated and put into containers, you made hot chocolate for the two of you, then sat on the couch. You cuddled comfortably into your boyfriend, and finished the day with a movie. Oh how much you loved this time of year.

Whipped Shortbread Cookies
*1lb (454 g) of butter
* 1 cup of icing sugar
* 1/2 cup of cornstarch
*3 cups of flour
*1 tsp of vanilla extract
Steps: (Recipe yields 50-60 cookies)
1. Preheat oven to 350 F.
2. Cream butter ( if butter isn’t softened/at room temperature, cut butter into cubes or strips, creaming a little bit at a time), with an electric mixer or hand held beaters.
3. Mix vanilla extract with butter.
4. In a separate bowl, sift together icing sugar, cornstarch and flour.
5. Add dry ingredients to butter, about 1 cup at a time. Mixing until dough has consistency of whipped cream.
6. Drop dough from a small spoon (e.x. small soup spoon, or coffee stirring spoon), onto cookie sheet. Decorate cookies with coloured sprinkles. I usually get 15-20 cookies on 1 cookie sheet.
7. Bake at 350 F for 15-17 minutes. Check after 15 minutes, cookies should be golden brown underneath.
8. Store cookies in a tin container to maintain freshness and crunch.
