Chapter 1 | Chapter 2 | Chapter 3 | Chapter 4 | Chapter 5 | Chapter 7
------------------------------------------------------------------------
*Y/n's POV* "What's a Hoedown?" You ask
"How have you not heard of a Hoedown, you've been here for how long?" Acacius makes fun of you
"She hasn't lived here long enough son," Her father clarifies, "Lamina, bring Y/n."
Lamina turns to you as she excitedly rushes up to her room. Before you follow after her, you take one last look at Acacius; giving you a death glare before making his leave.
You catch up to Lamina and see her trying to figure out a decent hairstyle.
*Lamina's POV* You look off to the side and see Y/n making her way towards you; a blush swiping across your face as she does.
"May I?" She asks
You let your hands fall to your sides as she reaches up and begins braiding your hair.
"How did you learn how to braid hair?" You ask
"Listen, when your mother teaches you how to braid and weave bread dough, you can pretty much braid anything," She explains, "I felt dumbfounded at the amount of things I've learned from my mother teaching me cooking, that I can apply them to daily life."
You could feel every brush from Y/n's fingers as they weave between the strands of your hair.
"Is there anything to tie off your hair?" She asks
You reach towards your little desk and grab a few hair ties and hold it over your shoulder. She takes it and begins tying your hair.
"Done," She says
You turn to look at Y/n; bringing her wrist up to your face. You begin to untie the headscarf she kept on her wrist and begin to wrap it around her neck.
"I'm still surprised you kept this thing," You say
"Well, it was the only thing that I had from you," She says, "There hadn't been a day where I didn't think of you."
Your lips drop slightly, but you attempt to hide your blushed cheeks with your hair.
"It was too bad that I didn't have anything to give you in return," She says
"Well, you're here permanently, are you?" You ask, looking up at her
You nod.
"So I got the physical form of you rather than the memory of you," You smile
You make the final knot and your eyes shift to the door, and then back up to her. In a quick motion you place a kiss onto her cheek.
"You ready?" You clear your throat
She nods, unable to form words.
You gently pat her on the shoulder, smiling as you brush past her, heading back downstairs, in which Y/n follows behind you.
+*+
The both of you head into the market square that had been turned into an open space. Many people from the district nearly crowd the entire space.
"Wow..." She sighs
"Never been to one of these kinds of shindigs?" You ask
"Nope," She says, "No one's ever had the kindness to invite me either."
"That's unfortunate," You sigh, "Come on!"
You take Y/n's hand and bring her into the crowd. As you allow the music to take your feet and dance, you watch as Y/n attempts to try to follow suit, but you could see her anxiety taking over.
"Hey, Y/n/n," You say
You take a step towards her. You cradle her cheek into your hand.
"Eyes on me, only me," You tell her, half-smiling, "Don't worry about everyone else."
Your hand moves to her shoulder as you continue to dance. However, dial it back so she can catch up to your speed.
Your eyes widen as she grabs your hand and lifts it over your head; spinning you. You could tell how her anxiety was continuing to leave little by little.
"You're getting the hang of it," You smile
The music began to quicken its pace. The both of you were beginning to sync to each other.
*Y/n's POV* Though you were able to see everything and what you were doing with Lamina, your body moved on its own.
*Lamina's POV* After many more spins and your hopeless romantic eyes staring at Y/n, you lightly gasp as she pulls you into her and leans forward as you lean back; holding you by your hips just as the band ends their song. You look up at her as the audience applauds the performing band. Y/n un-dips you, however, doesn't move her arms from your hips.
"You're not bad for a girl from the capitol," You smile
"And for a girl from the districts, you never cease to surprise me," She smiles back
The both of you dance for the longest time, losing track of time. However, the both of you hear yelling and angered voices throughout the space. Next thing you both knew was that there were people rushing past the both of you.
"Y/n!" You yell, trying to reach out for her
She tries to reach out for you as well. However, the more you attempted to reach for each other, the further you two got. You manage to push yourself out to one of the side exits, but you find yourself all alone, trying to find Y/n, and the way home. You gasp as Y/n grabs you by the hips and pulls you behind a wall, and into her, very closely; casually dressed peacekeepers patrolling the streets to catch any stragglers. You look at her, as she looks at you. She bring s finger to her lips. You nod.
The both of you make your way through the dark as peacekeepers continue to patrol the streets.
When the both of you make it to the outskirts of the main square, you gently tug at her arm, prompting you to stop.
"That was... Something," You pant, catching your breath
"That was... Exhilarating," Y/n smiles
The both of you stifle into a laugh.
"You... Really are something Y/n/n," You smile, "I still love the way you're willing to protect me."
"You are too," She smiles back, "Doesn't matter what the circumstances are, I'll always protect you."
+*+
The both of you walk into the house and see Acacius helping your pa in the kitchen.
"Hey pa... Hi Acacius," You awkwardly wave, "What are you doing here?"
"Making up for lost time and helping you guys out in any way I can," He says, smiling, "Hungry?"
"No," You say, "I'm tired so I'm going to turn in."
You subtly grab Y/n's hand and make your way up the stairs.
+*+
You wake up with a scream. You clutch at your heart. You hear a handful of rushed footsteps. Y/n was the first to get to your doorframe before Acacius pushes her out of the doorframe.
"I'm here Lamina," Acacius kneels at your bedside
*Y/n's POV* You watch as Acacius basically take your job. He turns his head towards you; a smug smirk swipes across his face. You walk back to your room...
Throughout the night, you could hear Lamina let out short periods of screams... But Acacius' voice follows... However, even after Acacius manages to put her back to sleep, she'd always wake up a few hours later...
"Y/n..." Lamina's voice calls out for you, "Y/n!...."
You get up from your bed and make your way to Lamina's room.
"Let me do it..." You yawn
"No, I can handle it," Acacius says
"She has been waking up every few hours," You sigh, "And I'm the one she's been calling... So if you want Lamina to get a good night's sleep, let me be the one to comfort her..."
You could tell how much he wanted to argue with you... But, you could see the gritting of his teeth as he reluctantly gets out from Lamina's bed and cautiously watches you get into the bed. Lamina opening her eyes slightly and immediately clinging to you.
+*+
The same thing would continue every night..
By day, Acacius would stay; helping out Lamina's father, or Aster every single chance he got; barely giving you anything to do.
By night, he's the one attempting to comfort Lamina instead of you... It was like he was attempting to replace you entirely...
I don't even understand what his problem is with me...
You've been in 7 for a long while, and until that day in the market, he now just shows himself back into Lamina's life...
But, no matter how many nights pass, Acacius had never been able to get Lamina to fully fall asleep after her nightmares. You always brought your tired ass into Lamina's room, having to kick out Acacius.
"He's kind of apart of the family," Lamina explains to you, "If my pa hadn't told you, he was helping him out while I was away."
Her father took him to the market to sell stuff and watch Aster, finally giving you and Lamina some time together.
"I see," You sigh, looking off into the distance, "Yeah, he told me that before..."
Where would I fit into this?...
"But, there will be one thing that he'll never understand," Lamina says
"What's that?" You ask, looking at her
"He'll never understand the trauma I experienced in that arena," She says, placing her hand over yours, "You were doing everything you could do to make sure I have the least traumatizing experience and get me home. So, having you here... With me has made these nightmares bearable. You're the only one who understands what I went through."
"Albiet it was from the other side of the games," You sigh, "But, if I can tell you something... Promise not to laugh?"
"Always," She says
"When you mercy killed that boy from 2... Everyone in that room looked away in horror," You begin, "I can only imagine how tough that must have been for you... But, I was the only one who looked; watched everything happen. Not because it was 'entertaining'. It wasn't even that in the slightest. It was because I didn't want you to experience that alone. Even when it was so late at night; when everyone went home, or passed out, I never left my desk. Even though I wasn't necessarily with you in that arena, I wanted to make sure that you weren't alone. I didn't want to leave you alone. Even sending you food, I had wished it was my mothers cooking."
Lamina's hand never moves away from yours as she scoots herself closer; where your arms are brushing together. She leans her head onto your shoulder.
"Every gift you sent me, I felt that you were there with me," She says, "I appreciate your effort on trying to keep me alive."
You felt her sighing into a smile.
"You also fighting for your life was one thing," You say, "I know it wasn't the most fun thing to do but it caught all of us in that room off guard. They all saw you as this 'crybaby' because you wouldn't stop crying the entire time. But,
"If I can also tell you something, promise not to laugh?" She asks
"Always," You say
"When I fought Coral and Mizzen, I wasn't even aware of what I was doing," She tells you, "It was like I blacked out, and yet I saw what I was doing... I didn't process what I was doing until the boy from 4 looked at me... In a way I'd never forget."
"How so?" You ask
"It was like his eyes were asking, 'How?' and 'I don't want to die here...'," She explains, "That's what my nightmares had been about..."
"That boy from 4 huh?..." You say
You felt her head nod...
"I'm sorry you had to go through all of that," You sigh, "But. I was surprised on how well you fought those two off. I was really scared for you for a second. But, it was like you had some kind of 'instant kill' switch in your brain."
"Just the basic survival instincts kicking in," She says, "Trust me, I was terrified."
"I'm sure you're going to be terrified for the rest of your life," You say, "I sure would be if I was in your shoes in that arena."
"Only you understand that," She says
+*+
You and Lamina walk back home however, panic sets into the both of you when you see two peacekeepers at the door.
"There they are, you two need to come with us," One of them says
The both of you pause... You instinctively push Lamina behind you.
"If you two didn't hear, the victor of the 11th games is here today, and specifically requested the victor of the 10th games, and her mentor, present," He explains
Not willing to put up a fight, the both of you walk between the peacekeepers as they walk you to wherever the meeting was going to be held. You recognize your surroundings...
The Reaping Square...
However, walk into the building.
"Mags Flanagan, Victor of the 11th Hunger Games," The peacekeeper announces
From the other side of the room, a girl with curly brown hair turns at the sound of her name. She wore a green jump suit, and above her right breast; fish hook-like badges and the District 4 insignia. You stop in your tracks, having Yn bump right into you. She looks at you, however, follows the direction of where your eyes were looking. She stops to look too.
"Lamina, Victor of the 10th Hunger Games," The peacekeeper announces once more before leaving the room
The both of you cautiously watch Mags approach the both of you... However, the look on her face wasn't a threat... More like... Observing.
"I was a little worried that the victor before me didn't exist," She says
"What do you mean?" Y/n asks
"I wanted to do some research of the games before mine: see how the victor before me won," She explains, "But, there was no footage at all. The only thing I knew was that there was a victor from 7."
*Y/n's POV* Did... Gaul get rid of the 10th games footage?....
"So, I'm glad I get to see her in the flesh," Mags slightly smiles, "As well as the mentor who had made her a victor."
Lamina nods as she sits down, staring into the blank space.
Does Mags know that Lamina is the one who killed both tributes from 4?....
You were worried that Mags would find out
"Tell me, how did you win?" Mags asks
Lamina says nothing...
"H-hello?" She calls out to Lamina, trying to make eye contact
"She won by staying up on the beam that was a result of rebel bombings," You pipe up, "Any tributes that came up to attack her, she fended them off."
Mags nods, leaning back into the chair she was sitting in. You look down at Lamina, from underneath the table, her hand was bunching parts of her pants. You place your hand on her shoulder; her tense body slowly faltering into a relaxed state.
*Lamina's POV* You and Y/n wave off Mags as she boards the train to head to District 8.
"That was... Something," Y/n sighs
The both of you begin to walk back home...
"I hope to never do that again," You say, "I was worried she would figure out the fact that I killed the tributes from 4."
"In your defense, you all were just trying to survive," She says
"Hey, jumping to a more lighter topic, there has been something I've been wanting to ask you," You stop, turning to face her
"Sure, what's up?" She asks
"In a few days... There's this... Okay, before I even go on, here we have this festival called the Paper Lantern Festival," You explain, "I would like you to accompany me to it."
"As... Like... A date?" She asks
You pause...
"... Yeah, something like that," You throw up an awkward smile
She smiles, "I would love to, Lamina."
She steps forward and kisses your cheek. She gently grabs your hand and begins to tug you back to the neighborhood. You were following behind but try to process that Y/n finally gave you a kiss for once.

EPISODES 4-6
EPISODE 4
she was dressed in leggings and seokjin’s pink hoodie
jungkook had his yoongi’s ipad in her bag “sorry oppa, he told me he’d get me cookied if i let him hide it there”
seokjin had taken her backpack while they walked and let her sit on her carrier while he pulled her along
she was taking a nap with her legs on namjoon’s lap and upper body resting on seokjin while waiting for taehyung to arrive
for the transport to where they were staying she was grouped with namjoon and yoongi
she fell back with yoongi wo smiled at her “let’s leave the talking to namjoonie, shall we” “hyung, she’s the european though”
she was tucked into yoongi’s side while the two boys looked at maps on the express “i think ggukoo oppa and hobi oppa are gonna be funny”
they missed their stop, so they decided to walk
“watch us arrive last” she shook her head
her backpack was looped onto namjoon’s carrier, and yoongi kept a grip on her hand until they got to the hotel
“oppa why are we running?” “jungkookie and hoseokie are behind us” “but we still got here first either way???”
they walked in patiently “forget seokjin and jimin oppas. when’s tae oppa gonna arrive in stockholm?”
she stood between namjoon and yoongi while putting her hair into french braids in the bathroom mirror. yoongi helped her fix the front part and some of the loose strands
the montage of them walking mostly had her in between the two boys with her arms looped through theirs while nodding at their chatter
“i bought a pair of jeans and two shirts! yoongi oppa told me not to get a jacket anymore since i already have one in my carrier” “you can also just borrow from us”
“JIMINNIE OPPA!” cue yoonmi slipping out of yoongi’s grasp and running to give jimin a hug
“oppa you took too long” “i know, aegi” jimin playfully flipped her hood up then put an arm around her while they walked
“oppas do you think taetae oppa is doing well” “i bet he got lost”
she sat on jimin’s lap on the bus since it was full “tae oppa is lost for real?” “the staff said he hasn’t arrived at the hotel yet”
she looked at jimin’s phone when she heard taehyung’s voice “oppa, are you okay? did you get lost?” “i’m fine, aegi. i did get lost, but the scenery is beautiful” “please come back safe!” “of course”
at the grill, she was in between jungkook and yoongi talking about her day animatedly while yoongi fed her some rice or meat every now and then, but she went silent when namjoon started looking for his passport
“TAETAE OPPA! can i see the pictures?” “come here, i have a lot”
EPISODE 5
she walked out of the doors, and jungkook looked at her for a bit “did you wash my hoodie before using it?” “it isn’t dirty though, i can still smell your cologne”
“im worried about namjoon oppa and his passport” “he went to the embassy early this morning, don’t worry”
the cameras showed her on the bus making conversation with a toddler and her mom
“the nice lady is from newcastle, too!”
when they got to gamla, she went with seokjin jimin and hoseok
“oppas, can we get ice cream?” “sounds good”
she was happily eating her cookie dough ice cream when hoseok and seokjin started doing little dances which made her laugh
they had a picture in the placed where they had shoots before (jimin took a bunch of solo photos of her just because)
she watched amused as the three older boys talked to the strangers before pitching in
“what he means to say is you can find us on youtube by searching our team name bts and our song name fire. so just try bts fire” “oh, are you from around here?” “i’m from newcastle, actually”
by the water, walked along the wooden path. she slipped and fell on her bum and was laughing while seokjin was panicking. jimin ran over to pick her up while hoseok calmed seokjin
“you could have fallen into the water!” “but i didn’t”
she settled next to jimin on the wooden path until the others came. seokjin made sure to not let go of her hand at all while they walked to the restaurant
jungkook was piling food on her plate which she was quietly transferring to seokjin’s plate when she couldn’t eat anymore
she gave namjoon a quick hug when he got to where they were
she was skipping to the cruise so excitedly that the members almost lost her again
they decided she was gonna sleep next to yoongi instead of the upper bunk just bc she’s tiny
she stood by the railings and watched the boys mess around
the staff handed her a carton of plain milk while they gave everyone else beer
she ran away when they started playing bts songs, but jimin ran after her and they ended up playing a game of chase
she was sleepily resting on jungkook’s feet for their meeting, head resting on his knees
“namjoonie oppa really has to go back?” “i do, but it’ll be fine”
EPISODE 6
“it’s warmer here so i'm in a skirt and this shirt i bought in stockholm”
she was pouting while saying bye to namjoon. he pushed her cheeks up to make her smile “don’t pout, makdungie, we’ll see each other pretty soon”
jungkook was asking her questions about the english guide video they watched
translator yoonmi mode on
she passed out little candies she had stored in her backpack
she had to sit on seokjin and jimin for the ride. she mostly just took a nap on seokjin because she felt a little dizzy
highkey she was still out of it when they got their allowance so jungkook carried her in a piggyback ride until they got to the burger place
she was tucked under yoongi’s arm in silence just helping translate stuff the whole time they were in the grocery
yoongi snuck her some milk and some toys to make sandcastles with his credit card, and she was asleep while the boys set up everything
“princess, wake up, time to eat”
yoonmi sat up when she heard yoongi’s voice. jimin came in and kissed her forehead before bringing her over outside to eat. jungkook immediately handed her a sausage
“feeling better, mimi?” “a little, yeah. thanks, ggukkoo oppa” “no problem. i made ramen, too”
she nodded with a smile and accepted the milk hoseok handed her for their toast
she ate quickly and washed up quickly before curling up on jungkook’s other side to sleep. she was out like a light
yoongi hopped up for a bit to check her forehead just in case then went back to his bed
seokjin waited for yoonmi at the base of her bed where he caught her while she was going down. he brushed her hair and braided it for her, but she was still half asleep
she was wrapped up in jungkook’s white hoodie and excitedly building a little sandcastle towards the side
she was overly excited while dancing save me to the point where she accidentally knocked over her sandcastle then just stared at it in shock
“oppas! my castle fell over!” “it’s okay, princess, we can make a new one before we leave” “you’re the best, yoongi oppa”
she helped yoongi and jungkook on trash duty
she was waving at jimin through the window while they slightly drove away but she gave him a hug when he got on
for the ride, she tucked herself away into the bunk yoongi slept in to work on some details for her solo album again (bv was filmed before her solo debut)
but maknae line got in with her, and they all ended up asleep

Challah
This is my bullshit kitchen. I make recipes that I have been procrastinating and I get mad at them for not legitimate reason cause I have a lot of unresolved issues.
I’m using this recipe for challah that I found @foodffs.
INGREDIENTS
4-1/4 cups all-purpose flour, spooned into measuring cup and leveled-off, plus more for dusting
1 tablespoon instant/rapid-rise yeast (see Note)
2 teaspoons salt
3/4 cup lukewarm water
6 tablespoons vegetable oil
6 tablespoons honey
3 eggs, at room temperature
1 egg yolk, at room temperature
In a stand mixer fitted with the dough hook, combine the flour, yeast, and salt. Mix on low speed for 30 seconds to combine. In a separate bowl, combine the lukewarm water, oil, honey, 2 of the eggs, and the egg yolk. Add to the dry ingredients and knead on medium-low speed until you have a sticky dough that clings to the bottom of the bowl, 5 to 7 minutes. The dough may seem too wet but have faith—it’s supposed to be.
Dust your hands generously with flour, then scrape the sticky, elastic dough out onto a lightly floured work surface. Dust the top of the dough lightly with flour and knead briefly into a soft, smooth ball. Lightly grease a large bowl with oil or nonstick cooking spray. Place the dough in the bowl, flip it over once so the top is lightly oiled, and then cover the bowl with plastic wrap. Allow the dough to rise in a warm, draft-free spot until it's puffy and doubled in size, 2 to 3 hours.
Invert the dough onto a lightly floured work surface and dust with flour. It will deflate. Cut the dough into four even 9-oz pieces, and then stretch and roll each piece into a rope about 20-inches long. Lay the ropes parallel to one another (vertically). Pinch them tightly together at the top, and then fan them out. If the ropes shrink a bit, just work them back into their original length.
Begin by taking the strand farthest to the right and weave it toward the left through the other strands using this pattern: over, under, over. Take the strand furthest to the right and repeat the weaving pattern again: over, under, over. Repeat this pattern, always starting with the strand farthest to the right, until the whole loaf is braided. Tuck the ends under to give the loaf a finished look.
Carefully transfer the braided loaf to a parchment-lined 13 x 18-inch baking sheet. Cover the loaf loosely with plastic wrap and let it rise in a warm, draft-free spot until about 1.5 times the size, 1 to 2 hours. Toward the end of the rising time, preheat the oven to 350°F and set an oven rack in the middle position. (Note that the loaf will continue to rise significantly in the oven.)
In a small bowl, beat the remaining egg and brush the beaten egg generously over the risen dough. (Note: If you like, sprinkle poppy or sesame seeds onto the challah before putting it in the oven.) Place the baking sheet atop another baking sheet; this will prevent the bottom crust from browning too much. Bake for 25 to 35 minutes, until the crust is a rich brown color and the internal temperature is between 190°F and 200°F on an instant-read thermometer. Remove the bread from the oven and place it on a rack to cool. Challah is best enjoyed fresh, but leftovers will keep for a few days in a sealed plastic bag.
Conclusions:
I hate separating egg whites and yolks, 2/10
I used the antique stand mixer until I fucked the dough up, so that was fun 8/10
Braiding the dough was super fun 11/10
Making homemade bread specifically makes me feel like a peasant women; the equivalent of holding a laundry basket against your hip 15/10
I can’t read and forgot about the honey for the liquid ingredients and someone had to dump the rest of the honey over my hands while I mixed the dough, 4/10 I didn’t like it :(
I had to leave the house to buy parchment paper and then I couldn’t find any in town so, 1/10
Room temperature egg just sounds weird, 2/10
Total: 43/70
I do recommend this recipe though
It did take a while, I started at 3:30 and didn’t cut the bread until about 9
It could have been a little sweeter but I don’t know how much honey I used so that could be on me
My cat ate a bit of raw dough off the floor, he seemed to enjoy it even before it was cooked.
I ate, four pieces of bread and I am full.
Also it looks great so you can take a lot of pictures of you baking braided bread

Shabbat Challah Bread
An easy fool-proof challah recipe for your Jewish Sabbath– passed down to share from my Bubbe, Ema Ljuba.
Ema Ljuba, my Bubbe on my dad’s side, is the matriarch of the Jewish half of my family. She lives on Martha’s Vineyard but fortunately she comes to visit us every couple years and we get to see her when we head to the East Coast.
Recently Ema Ljuba was in town for no more than 48 hours and my boys have been asking for her almost every single day since. She has that sort of lasting impact on children, and adults! Effervescent, charismatic, joyful and always smiling from ear to ear, Ema Ljuba is the most magical grand mother in the world.
After weeks and weeks of having to tell Asher that Ema Ljuba wasn’t here, I was finally able to say “Ema Ljuba’s kids are here!” when two of her seven children paid us a visit from Berkeley, California. Aunt Sabrina (on the far left next to my mom and Aunt Patsy), aka “Sabi D”, was more than able to fill in some of the void Ema Ljuba had left behind.
Of course, in our family, that always means cooking together. Sabrina’s visit happened to take place over a Friday night so we ended up spending the day together preparing an incredible Shabbat dinner.
Lucky for me, Sabrina was finally able to teach me how to make my Ema Ljuba’s famous challah bread. I have some of the earliest and most wonderful memories celebrating the Sabbath with them as a kid during our frequent visits to Berkeley.
After blessing the bread, Papa Leo, my grandfather, would rip off pieces of the homemade challah bread and literally throw in across the table to all of the kids in the room. To this day, we do not believe in slicing challah. We tear it and throw it, just like Papa Leo did.
If you’ve never baked homemade bread before, I urge you to give this fool-proof recipe a shot. Believe me, if I’m baking bread (with yeast!), I can assure you anyone can do it.
One HUGE baking tip: admittedly, I don’t love the giant mess that baking bread can create in the kitchen. Turns out, neither does my Aunt Sabrina! The solution? All of the kneading can be done in a stand mixer with a dough hook! We all use and love the classic KitchenAid stand mixer so if you don’t have one, you should certainly think about adding it to your holiday wish list.
After our evening with Sabrina, my sisters and I have vowed to celebrate Shabbat dinners as a family more frequently. We will cook together, drink wine, light the candles and throw pieces of homemade challah bread.
Even though we could purchase challah bread at a local bakery, Sabrina made a good point I won’t soon forget: nothing beats a house that smells like freshly baked bread.
No forks required.
Shabbat Challah Bread
An easy fool-proof recipe for your Jewish Sabbath, this recipe was passed down to share from my Bubbe, Ema Ljuba.
Course: Baked Goods
Cuisine: jewish
Keyword: bread, challah, shabbat
Servings: 2 loaves
Calories: 167 kcal
Author: Liz DellaCroce
Ingredients
1 1/2 cups to 2 cups warm water
3 tablespoons dry activated yeast
1/2 cup plus 1 tablespoon sugar
6 cups plus 1 cup all purpose flour
1 tablespoon salt
4 large eggs beaten
1/2 cup oil or melted butter
poppy seeds or sesame seeds for topping
1 beaten egg
Instructions
In a small bowl, dissolve yeast with 1 tablespoon sugar in warm water; set aside.
In a separate large bowl, whisk together 6 cups flour, 1/2 cup sugar and salt.
Add beaten eggs and the water with dissolved yeast and sugar to the large bowl of flour.
Stir in oil or melted butter and mix well with a wooden spoon. Once the entire mass sticks together turn out onto a floured surface and knead for about 5 minutes, adding in that last cup of flour as needed to form a smooth, pliable glossy mass. Alternatively, this can be done in a stand mixer with a dough hook. Note: If dough isn't coming together, add more flour, one tablespoon at a time, until it pulls away from the bowl. You want the dough to be sticky though.
Oil a large bowl then place dough into bowl flipping it over to make sure it is covered with the oil. Cover with a towel and let dough rise until doubled in bulk.
Punch down, knead one or two times and then divide dough in half.
Divide each half into either 3 strands (or 4 or 6 depending on how intricate your loaf braid will be.) Here is a guide on How to Braid Challah.
Place each braided loaf on a greased large baking sheet (cook spray works well), cover with a dry towel and let rise a second time until loaves are double in size.
Pre-heat oven to 350 degrees. Brush each loaf with a beaten egg, sprinkle poppy seeds or sesame seeds if you wish.
Bake for about 30 minutes or until bread is golden brown on the surface.
Recipe Notes
The sugar aids in the proofing of the yeast.

Chocolate-Marbled Challah Bread (& Traditional Challah bread)
Tumblr media
So right now, I have a new-found determination to embrace this time of year. Don’t get me wrong, there are a few obvious positives; warm, cosy & preferably fluffy slippers, hot chocolate with whipped cream, the changing colours - an excuse to slow down and stay in! - but above all, the bread cravings well and truly take hold…and in particular, a comforting longing to embrace my Jewish roots with Challah;  the mildly decadent and seriously delicious sweet bread. It’s almost like I have an automatic switch into comfort mode - and I’m happy to admit defeat. Baking and ‘breaking’ this bread with others holds especially dear memories for me as a child and precious time spent with my grandfather. He used to compare this bread to the fluffiest and most ethereal clouds in the sky; ‘with every bite a kind of magic takes hold, transporting you into a dream-like world’. I think it was his way of saying that Challah was heavenly comfort food for him - I never disagreed.
Tumblr media
Challah is characterised by its aforementioned cloud-like shape - and luxurious soft texture - which in turn is created by the amount of eggs used compared to other breads. Instead of butter, it has oil added, making this a great dairy-free friendly bread. To bake it at home is to have your kitchen swallowed whole by the ridiculously good sweet aromas.  I don’t know if it is the eggs, oil or extra sugar in there, but it puts all other fresh bread-baking smells before it to shame - the kind of glorious scent you only wish could be bottled forever. If only!
The recipe below makes two loaves. I show you how to make both a traditional 6-plait plain loaf with poppy seeds, and a next-level delicious variation with marbled chocolate as above.  It freezes well so I definitely recommend you reap the full rewards with both, but the recipe can easily be halved if you would prefer to make just one or the other.
Tumblr media
The challah is the queen of beauty pageant breads. This is partly due its pretty traditional 6-plait exterior which may seem a little daunting at first to recreate, but I’d definitely recommend giving it a go. I actually find the process very calming and once you get the gist of it, you’ll be away. You Tube videos can prove very useful here! (I found this to be the best one for me 6-plait method) If all else fails, you can always simplify the process with a 3-plait bread, or just stick to a basic oval loaf if that feels the most comfortable. One of my favourite things about the irresistible  of Challah though is its golden, shiny crust which is simply created by a two-egg wash method. The secret’s officially out!

Chocolate-Marbled Challah Bread and Traditional Challah Bread with poppy seeds
Traditional Challah is often studded with raisins and served at New Year. If this addition tickles your fancy, you can easily add raisins or sultanas instead of the chocolate chunks. Straight loaves of braided challah are eaten throughout the year and round challahs typically takes its place on the Sabbath.
Total time about 1 hour, plus 2 ½ hours rising
Makes 2 loaves
3 ¾ tsp active dry yeast (about 1 ½ packages or 11 grams)
1 tbsp caster sugar
350ml lukewarm water
125ml olive or vegetable oil, plus more for greasing the bowl
5 large eggs
100g caster or granulated sugar
1 tbsp sea salt
1.1kg plain flour
75g dark chocolate, roughly chopped into chunks  (amount for one challah)
Poppy seeds and sesame seeds, for sprinkling
1. In a large bowl, dissolve yeast and 1 tbsp sugar in water; set aside for 5 minutes until a bit foamy.
2. Whisk oil into the yeast, then beat in 4 eggs, one at a time, with remaining 100g sugar and salt. Gradually add flour. When dough holds together, it is ready for kneading. (You can also use a mixer with a dough hook for both mixing and kneading)
3. Turn dough onto a floured surface and knead until smooth. Clean out bowl and grease it, then return dough to bowl. Cover with plastic wrap, and let rise in a warm place for 1 hour, until almost doubled in size. Dough may also rise in an oven that has been warmed to 150C, fan 130C then turned off. Punch down the dough (a warning; this part is unbelievably satisfying!), cover and let rise again in a warm place for another half-hour.
4. At this point, you can knead the chocolate chunks into one or both of the challah - if you’re using them - before forming the loaves. To make a 6-braid challah, either straight or circular, take half the dough and form it into 6 balls. With your hands, roll each ball into a strand about 12 inches long and 1 ½ inches wide. Place the 6 in a row, parallel to one another. Pinch the tops of the strands together. Take the outer left strand and move it to the right over two, under one, then over two, then leave it positioned as the new last strand.  Continue this process until all strands are braided. For a straight loaf, tuck ends underneath. For a circular loaf, twist into a circle, pinching ends together. Make a second loaf the same way. Place the loaves onto two separate greased caking sheets.
5. Beat remaining egg and brush it on loaves. At this stage, you can either freeze the breads or let them rise for another hour.
6. If you are baking them immediately, preheat oven to 190C, fan 170C and brush loaves again with egg wash. Sprinkle the top of the bread with seeds. (I like to use poppy seeds for the traditional plain-style loaf and sesame for the chocolate) If freezing, remove from freezer 5 hours before baking.
7. Bake in the oven for 30 to 40 minutes, or until golden. Cool loaves on two wire racks. Freezes well. (I sometimes freeze cut slices for ease)
