way better than annies, way better than daiya, and some new people introduced me to a brand “goodles” that is apparently amazing so ill have to try that!
this is way better than any recipe ive made or tried on my own. and damn it i just wanted to try it!

So I keep thinking about this one time
That a friend posted a thing on Facebook saying why everyone should be vegan. 
And my argument against veganism for all, is that it’s too expensive for our poorest citizens. I said “A single mother of three who works 2-3 jobs does not have the time or resources to flip to veganism. There’s so much research and planning and money involved, and vegan products can be more expensive than non-vegan products.” 
And they told me I was wrong. They said “A package of vegan cheese costs the same as a package of non-vegan cheese.” 
And I said “A pack of vegan cheese is around $4-$6. A single mother of three who is struggling to pay rent isn’t buying the equivalent of that in real, full-fat cheese, they’re buying a pack of Kraft singles from Walmart for $2-$3 a pack. You can’t act like everyone’s budgetary needs are the same. There are loads and loads of people who cannot afford this. Before we start talking about veganism for all, we need to talk about fair wages and stable and safe living situations for all. Fix those first, and then circle back to veganism when the people who cannot possibly choose that lifestyle can feel comfortable enough to make that choice.” 
And I went on to talk about health needs (I can’t eat beans or nuts due to my stomach issues, so getting real protein on a vegan diet would likely be tough for me. I’m already down to just poultry and fish as it is because red meat and pork really hurt) and cultural traditions (people who eat meat as part of religious ritual or cultural identity are not going to change because some well-off American Christian-raised woman told them they should and that it’s better for the environment.)
But I don’t think any of it got through. 
Anyways. I think you should choose the diet that works best for your beliefs and your health. Food is so personal, and by trying to tell someone what they should and shouldn’t eat, you’re telling them they’re feeding themselves - and their loved ones - wrong. And saying that to a stranger is...not a good look. Especially when you don’t know anything about their situation.
For instance, when I left school, I worked two jobs, and was painfully poor. Here’s how that conversation would have gone: 
Friend: “You’re killing he environment if you don’t eat vegan!” 
Me: “I have $24 in my bank account, and all I could really afford to buy for dinners were .75 cent frozen burritos. The rest has to go towards gas for my car, a couple cans of cat food, and whatever’s left after that is going towards PBJ fixings and a pack of granola bars if I can swing it. And then whatever else is left is going towards emergencies.” 
Pretending that everyone, no matter what their situation, is in a place where they can feasibly flip to a vegan diet is blind to all of the other problems we have been going through as a society. Fix those first, and then people can make that choice for themselves.

that’s totally fair that u hate kraft mac and cheese i never had it much as a kid bc my mom only buys annie’s as well (annie’s vegan mac and cheese for my dumb lactose intolerant body) but bc i’m housesitting i have the option of shitty kraft mac and by god am i gonna take it.
oh that is SO valid. i have a very vivid memory of one of the only times i’ve had kraft and it was the most scuffed meal i’ve ever eaten, it was at like. 8pm, after a pretty intense theatre rehearsal and we had all gotten changed/dressed up to go see an exclusive production of legally blonde at a local uni but we were waiting to leave and me and my friend hadn’t packed dinner so we just. kraft mac and cheese and a cinnamon roll from our school’s vending machine, stuck em both in the microwave boom dinner. it was so bad i don’t think we cooked the kraft right at all

Happy weekend!
On friday I tried moderntable vegan macaroni and it’s SO GOOD! I’ve now tried their classic cheddar and white cheddar flavors and white cheddar is best. Better than Kraft non-vegan macaroni, waaaaay better than daiya and other vegan brands. Then Ken and I got some very much non-vegan sushi for dinner!
Yesterday we ran errands together for the first time in ages. We went to REI to return some hiking shoes he got that didn’t fit right and I ended up buying a cute hat, then we got flu shots and picked up some cans of beer from our favorite local brewery.
I also painted and stamped this Halloween manicure and Theo was very interested in helping me, ha! The pics are from before I cleaned up the edges so they’re not the best pics but I really love it!
Today Ken had a long gravel ride (in rainy cold weather!) so I had the house to myself. I spent it doing some chores and watching Schitt’s Creek and it was lovely. I haaaated the show at first, mostly because Roland is just so gross I can’t stand him, but now I’m so attached to all the characters it makes it easier to get through the episodes where he makes a big appearance. Currently binging to try to get through it so I can search for cute gifsets here without accidentally spoiling it for myself.

Just gotta vent. Ignore this/I just need to scream into the void and feel a little bit heard for a second.
I have food issues. I have issues with food. Food is gross. I don't like it. I almost never get hungry. I can and will forget to eat for a whole day. Me wanting specific food is very rare.
I am a very picky eater. I am a vegetarian (not vegan). I am lactose intolerant (I can get around this with Lactaid pills, but its a pain).
Food has to look, smell, taste, and feel right for me to eat it. If it looks or smells funny, it's not happening.
I have 3 breakfast options, plus 2 "fancy" ones for when I go out.
I have 6 lunch options, plus 2 for when I go out.
I have 12 dinner options, 6 of which are the same as my lunch options, plus the 2 options from lunch for when I go out.
I have 6 otions for snacks/desserts.
I used to have more options, but cut them for one reason or another.
I get on kicks where I'll eat the same few things for days, weeks, or months all the time. Example: I ate crackers with peanut butter for breakfast, a peanut butter sandwich for lunch, and mac and cheese for dinner for YEARS. I rarely deviated from it. Then, I totally switched. I couldn't stand the sight of those foods and rotayed through seversl more phases, but they were shorter than that one.
If a food I usually eat tastes funny, there's a very good chance I'm getting sick. In 1st grade my mom sent me to school with a peanut butter sandwich and chocolate milk for lunch (my fav meal at the time). It tasted horrible, so I went to the nurse, explained, and had her take my temperature, etc. No temp., nothing clearly wrong with me, but I insisted. She called my mom.
Come to find out, lunch tasted gross because she changed brands of peanut butter, bread, and milk. She hadn't told me. She apologized for not telling me and switched back the brands. Life went on. She would tell me if the store was out of my brand and she had to substitute another gmfor a coupke of days.
Fast forward 20 years... I can't cook like my mom because she doesn't follow the directions on boxes, so I can't cook any of the foods I like (that require cooking). I still live with my parents for a bunch of reasons, one of which being my food issues/forgetting to eat.
I'm back to my crackers/sandwich/mac and cheese routine for the most part. I drink my instant meal shake when it's too hot for hot food, but other than that, I'm back to basics.
I eat Kraft original/classic mac and cheese with "a bit" of extra milk and 3 slices of Velveeta cheese melted and the poured over the top and mixed in. I was actually hungry for dinner! So my mom made my food a bit early because the hungry feeling will pass and not come back. I thanked her when I got it from the pot, like always. It looked a little pale and smelled a little different, but I didn't say anything because is wasn't repulsive, I hadn't seen it out in the light, and I hadn't tasted it. She gets upset when I reject food that she makes, so I decided to try it.
So I go sit down and take a bite. It has a weird flavor, and the weird smell is still there. And there are little tiny things in it that kind of look like pepper. I took another bite, thinking maybe it was just a little bit that got accidentally sprinkled in when she was making her and my dad's food.
Nope. The weird taste and smell are still there. So I go best out of 5. Still weird. But now she's in the middle of making their dinner, and I feel bad marching into the kitchen and rejecting food that she makes for me, especially if she is busy with something else.
At this point, I've eaten about a quarter of the bowl and decide that just this once, I can deal, its just a little pepper or seasoning. So I ate kind of fast and didn't really chew, and decide that if my mom didn't spill something in it (by accident), then I'm cutting mac and cheese out of my diet again.
As I'm taking my last bites, my parents join me with their dinners. I (gently, I don't bite the hand that feeds me, and she's a bit sensitive about having her cooking criticized) tell her I think she might've accidentally spilled a little pepper or something in my food. She looks confused, so I showed her a noodle with the stuff on it.
She gets this guilty look on her face and I'm instantly back in first grade, telling a nurse that I must be sick and her insisting that there's nothing wrong with me.
Turns out that she cooked the noodles and got up to the part where she melts the cheese and realized we are out of velveeta. She substituted some shredded 5 cheese blend that we had. She confessed and said that she would have told me if I had come back in and told her.
She insisted I must have liked it because I ate it all. The one time I try to "grow up" and suffer through a meal so my mom doesn't get her feelings hurt, it turns out that she was trying to pull something. I tried to explain that I ate fast because I was trying not to taste it, but neither she nor my dad believe me. They think I'm overreacting now only because I know for sure.
I reminded her of the incident in first grade and she said she remembers it. I doubt she remembers how freaked out I was because if she did, she wouldn't have pulled this sh*t.
She said she didn't want to waste the food, so she didn't tell me. Well, its wasted now! When I smelled and saw it in the pot I took half my usual amount in case I couldn't stomach it. 3/4 of a box of Kraft is now trash.
God forbid I try to spare someone's feelings and not return food like a Karen at a restaurant.
My dad piped up as I was leaving the table that we do have velveeta, it just wasn't in the right spot because the drawer was full.
Yeah, I left 2 min after they sat down, I'm not sitting there to be guilted and b*tched at because someone else tried to pull something. They both know about my food issues and how bad they are, and she should have told me.
And on top of all this, I had a reaction to the dairy. Velveeta is sooo not real cheese, maybe like 5% real, but the cheese that was in the food I ate was real. For my regular mac and cheese, I need 1 pill. Throw more dairy in, I need more pills. I thought I was having my nice regular fake cheese and took 1 pill. But alas, it was weird looking, weird smelling, pale, real cheese with little bits of who knows what in it.
Let's throw some more on shall we? Tomorrow is my birthday. It's been hot so I've been having my drink instead of hot food. I was looking forward to mac and cheese for dinner tomorrow too. WAS.
Now I don't want to look at mac and cheese.
Now I don't want to be in the same room as them.
Now I'm locked away (hiding) during what is usually my wind down time. Usually I read for a few hours before bed.
Now I'm too angry and hurt to have the patience.
Now I'm crying and sniffly.
Now I'm dreading my birthday, when I'm supposed to be all happy and sh*t tomorrow.
I realize how insignificant this is to the rest of the world. But its significant to me, in my little corner of the world. The person I trust to make my food screwed with it, lied to me (by omission), and then tried to put it all back on me because I didn't return it.
"Sorry" in the tone she used doesn't cut it. If I could eat like a normal person, I would. Don't lie to me about my gd food. I have enough issues with it already.

41. Comfort Food
There's a number of items Wade thinks Nate might call 'comfort foods'. 
He never gets into sweets like Wade expects him to. A lifetime without refined sugar, and now that he could swim in it he's too good for it. For shame. Wade finds out that he likes Payday bars and mocks him mercilessly for it even as he's filing the information away Just Because, but a Payday is barely candy and it's definitely not a comfort food. 
Fruit however, fruit's a possibility. Peaches, apples, berries of every kind -- shit Wade would say belongs in a pie, Nate likes those fresh. He likes mangoes and melon and mandarins. He puts strawberries in salad and limes in beer and he actually eats one of those fussy messy gore-fruit things in a single sitting while they're sitting around watching Golden Girls. 
Basically if it grows out of dirt and plant bank of it being eaten as part of a super fucked up breeding procedure, Nate likes it. Fruit's not a typical comfort food, but it works in a pinch. It's comfort enough for Nate; he always seems to brighten up when Wade brings him a bag of whatever's in season. 
Wade's comfort foods are distinctly low brow and super predictable. Poutine.  Strawberry Toaster Strudel. A bean and rice burrito smothered in hot sauce and cheese, preferably from a truck that all but advertises being a destination to pick up botulism. Violently orange Kraft Dinner.
Nathan was from the Future of Horrible Food, but he was still too gourmet for any of that, but macaroni and cheese was probably one of the more universally accepted 'comfort foods'. Wade definitely couldn't make it from scratch -- cheese was a dangerous substance for an inattentive chef, and Wade was definitely that -- but there were plenty of restaurants or catering places that made good macaroni. The first time Wade brought Nate a little cup of that Nate's eyes had gone all big at the taste and he'd almost immediately scarfed it in that enthusiastic 'eat if before someone steals it' fervor he got to whenever he really liked something. 
It figured, really. Pasta was a carb and Nate very clearly enjoyed carbs, and he was white and the spawn of Scott 'Soup Should Be a Major Food Group' Summers, which meant he was going to be a basic bitch when it came to cheese as well. Macaroni and cheese was a match made in heaven for people like Nate, honestly.
Then again, though, Nate doesn't eat a lot of meat but when he does there's a certain sense of nostalgia to his appreciation of the meal. Wade doesn't ask directly, but when Nate starts getting comfortable around him there's no shutting him up, so he finds out anyway, how meat was such a special treat when he came from. Obligate veganism by way of most people only having access to soy-based nutritional supplements is a little too Asmovian for Wade's taste in futurism, but it was passable world building if you wanted to push the 'fight climate change, budding eco-terrorist Nate' concept from the movie. 
There's not a lot of bad reactions to food. On the rare occasion that Nate makes something or is given something that he really doesn't like, he dutifully finishes it -- no wasting food when there are starving children in the future, etc etc -- and makes note to avoid it in the future. Wade figures out that Nate's actually appreciating his efforts to teach him about good food when Nate starts telling him flat out that he doesn't like a thing. It doesn't happen often, but the contents of that list are funny at the very least. 
When he wrinkles up his face and tells Wade he really doesn't like Brussels sprouts, Wade very nearly chokes to death at the table laughing. It's such an incongruously childish proclamation, spoken in that flat growl, coming out of that scarred and haggard face. Fuckin' delightful, that.
It's hard to pick a single thing that Nate would pick as his 'comfort food'. Everything Wade brings him and nearly everything he gets to watch him cook for himself is eaten with pleasure. Nate just seems to like food, which is kind of nice. Of all the modern vices he could get hooked into, a genuine appreciation for the availability and variety of food was definitely a best case scenario. 
And it's nice, in Wade's opinion at least, to see someone who often comes off as dead set on not enjoying himself just enjoy a thing. That's why Wade keeps trying, keeps looking for that thing that Nate will look at him and say 'this is my favourite', 'this makes me happy'.

Keeping Up With the Trends: Food Edition
Consumer habits are in constant flux and industries with high consumer bargaining power like food and retail are especially reliant on trend sensitivity to maintain long term success. The Food Technology Magazine highlights their top 10 food trends in a 2019 article. Highlighting a few of these trends gives us insight into how brands adapt to stay relevant.
The Ease to Please
Consumer opinion that convenience is a significant part of food purchases jumped 5% in 2018 to 54%. College students, businessmen, and parents are all examples of submarkets in need of quick meal alternatives in the midst of busy schedules. Retail fresh prepared food sales surpassed $12.4 Billion in 2018 and nine out of the ten top-selling frozen food categories grew in dollars. 
There is an ever-present need for healthy, fast, and cheap meals.

Two primary brands dominating the frozen sector are Lean Cuisine and Stouffer’s. Their fame as weight loss brands puts them at the top of the average consumer’s frozen meal shopping list. These brands offer everything from mac and cheese to grilled chicken, showing that you can still enjoy your favorite foods in moderation. It’s crucial to highlight both the ingredients and meal-prep efficiency. The wider the range of options and price range, the higher the chance of purchase. 
Natural Imaging
Consumers are more and more concerned with what’s in their food. Transparency about processing and ingredients is a major driver of consumer purchasing habits. In 2018, 54% looked for all-natural options while 38% sought out organic products. Whole Foods was the first grocery chain to release official labels with ingredient lists and organic labels and has only strengthened after Amazon’s acquisition and the advent of grocery e-commerce. While producing healthier food and drinks costs more, it can be difficult to sell at a premium. Consumers not only want to eat healthy but pay less. The brands offering more affordable options will end up with the greatest following. Botanical infusions like ginger, honey, and cinnamon in juices, sparkling water, and kombucha are all the rave for beverage producers.

One primary visible example of this shift is Kraft mac and cheese. A household name, Kraft has become known for its deliciously unhealthy options. Whether a last-minute dinner or afternoon treat, eating Kraft mac and cheese isn’t really the healthiest choice around. That was until now. 
Annie’s is a well known organic brand featuring all kinds of gluten free, vegan, and organic options. In the above edited side by side comparison, you can see how Kraft attempts to mimic the more organic marketing appeal of Annie’s. Releasing new product options with a certified organic label, has allowed Kraft to more effectively compete, adapting to changing consumer trends. Will Kraft become a healthy meal alternative? Not any time soon.  
Nix the Alternatives
We all love to treat ourselves to a burger, ice cream, fried chicken, or what have you from time to time. What if you could enjoy the signature taste without the negative health effects? This new trend emphasizes the importance of marketing plant-based foods on their own merit rather than on the basis of comparison. Surprisingly, half of consumers reported that taste is the top reason for eating plant-based. Only 13% are motivated by environmental concern. Most people pursuing plant-based options aren’t vegetarian or vegan, but instead are seeking to minimize their consumption of traditionally unhealthy foods. Meatless burgers, oat milk, oil-based butter, and almond ice cream are all examples of healthy plant-based products. Nuts and leafy greens are great sources of protein without the unhealthy fat and heaviness of meat.

The best example of this in recent news is the invention of the “impossible burger”. Synthesized from plant protein, the burger is a low-fat meatless option that tastes remarkably like meat. It even “bleeds’ due to the addition of beat juice. Fast food chains and restaurants have partnered with the creators to offer this remarkable product to the masses. The impossible burger can also be bought in bulk at select grocery stores. While one might call it the king of veggie burgers, it’s a far cry from completely sustainable eating.

The bottom line? Food purchasing behaviors in America have shifted dramatically, going from primarily brand focused to an emphasis on product benefits. These benefits need to be successfully marketed to and realized in the eyes of consumers in order to brands to stay competitive.

🌱anikah’s list of vegetarian/vegan plant-based recipes🌱
soups & stews:
vegetarian taco soup - (I mess around with this one sometimes. omit any ingredients you don’t like, add extra spice or even some rice to add a little more weight to it. also incredibly good as a filler for lettuce tacos. top with fritos. trust me.)
super simple potato curry - (if you like curry, this is your new favourite recipe. if you’ve never had curry, please try this one, it is INCREDIBLE. I like to put this atop basmati rice and eat with warm naan bread. I’m salivating right now.)
pasta and rice:
vegan avocado pasta - (this one I mostly only make for large groups as the leftovers tend to turn brown-ish as the sauce is made from avocados, but nonetheless, incredible. always add extra garlic.)
vegan pad thai - (to be completely honest, I don’t usually follow a recipe so I included a random, pretty straight-forward one. I prefer buying the sauce pre-made, i use this one.)
mexican rice - (again, I don’t typically use a recipe and alterations can be made based on preference. I like to add beans & lots of jalapeños. makes a great base for tacos, burrito bowls, or my personal fave, on top of a baked sweet potato!)
vegan poke bowl - (if you like sushi, this is a good one for you. super easy and delicious with endless opportunities. my fav toppings are tempura vegetables, avocado, cucumber, sliced peanuts, and spicy mayo.)
vegetarian chili mac - (omit or substitute cheese to make vegan. solid, warm, hearty meal for cold days.)
vegetarian mushroom stroganoff - (personally, I prefer to just use campbell’s soup for mine, as my mom has done my whole life.)
veggies n’ stuff:
oven (or grill) vegetable foil packets - (this is one my mom taught me for camping, so if you enjoy that kind of stuff, this is a great fire-top recipe as well. you can really play with the possibilities here. my personal faves are mini potatoes, cubed sweet potatoes, broccoli, cauliflower, asparagus, green beans, and this vegan sausage, seriously if you can find this stuff, TRY IT.)
vegetarian ratatouille - (omit cheese to make vegan)
vegetarian taco salad - (omit/sub cheese to make vegan. again, you can play around with toppings. sometimes I’ll add rice for more substance.)
junk food & snacks:
vegetarian pigs in a blanket - (classic, reminds me of my childhood)
loaded tater tots - (go wild with this one, mix it up to your discretion. as long as the base is the tots, it’ll be delicious. I like melted cheese, spicy mayo or ranch, and buffalo sauce.)
baked sweet potato fries - (if you know me, you know. you can also just buy them frozen from the store. 13/10 snack.)
avocado toast w/ egg - (obv eggs aren’t vegan. I know you probably don’t need a recipe for this, but I included one for photo purposes)
vegan cauliflower buffalo wings - (a favourite of mine)
pillsbury pizza rolls - (this recipe includes meat so omit, but you don’t really need a recipe anyway. throw some pizza sauce, cheese, and toppings of your choice inside the rolls and cook for 10-12 minutes)
baking:
vegan banana bread - (add chocolate, or vegan chocolate chips for good fortune)
banana mug brownie - (my favourite easy, low-cal dessert)
favourite meat substitutes & how I use them:
field roast italian sausages - (I crumble & use these in place of any recipe that calls for ground beef. I’ve done sloppy joes, meatball subs, spaghetti, taco meat, you name it! also good sliced and baked aside sweet potatoes in the oven, used in pastas that call for sausage, or just on a bun.)
field roast frankfurters hot dogs - (these are the bomb. batter them like a corn dog, slice and use in kraft dinner, or grill and eat in a bun, the opportunities are really endless here.)
beyond meat burger patties - (these are great if you’re looking for a true-to-flavour beef patty substitute.)
gardein black bean burger patties - (personally, I prefer these over the beyond ones as I’m obsessed with beans in any form. I use these as burgers topped with avocado, or chopped up in burritos/rice bowls. tons of flavour.)

Omg the responses to your one post about veganism. I mean, a lot of people are just un/misinformed but these "I don't give a shit about animals or our whole world or simply something/one that's not me" people are just scary.
Hey anonHahaha that post is hilarious! It has pissed off SO many carnists tbh…It’s true though most people are just uninformed and uneducated about the topic of veganism. I definitely agree though. If you are someone who says “I don’t care, I don’t give a shit.” about everything in your life than honestly stay the hell away from me. You’re not cool, you’re not edgy…. you are selfish and lazy tbh if you don’t care about how your actions effect other people, animals and the planet. I have known a lot of people like this in my life and I cut them off the second I could because these types of people are just self centered and more often than not they blame the world for their problems without looking within.

Vegetarian and celiac doesn’t limit your options at all! If you feel it does, contact a dietitian or find some other people who are gluten free! I myself am vegan and gluten free and I think I have more options and eat more better than everyone in my house! I mean who wants to eat Kraft dinner and hot dogs every night? 😂
