Per bere un Barbaresco buono non necessariamente si deve far fondo ai propri risparmi. Sapendo scegliere si ottengono comunque buoni risultati. Oggi vi parlo del Barbaresco della Cantina Vignaioli (Nervo) di Treiso del 2018, un prodotto che mi è molto piaciuto per la sua semplicità ma anche per rispettare a pieno i dettami di un così blasonato vino. È sempre e solo Nebbiolo ma con meno affinamento del Barolo: dodici mesi in botte (contro i nove del disciplinare) invece dei diciotto del Barolo. Il colore è il tipico bellissimo granato del Nebbiolo. Non bello come il rubino ma senz’altro più imponente. Nel bicchiere è trasparente e vivace. Così trasparente che quando si prende il bicchiere in mano si rimane meravigliati. Portandolo al naso il vino regala tantissimi odori, tutti molto distinti e consequenziali. Per primo arrivano i frutti rossi in confettura, poi ribes e more; poi arriva il sottobosco, quindi il cacao e le spezie come i chiodi di garofano, la cannella e il ginepro; poi le tostature, il pellame, il tabacco. Infine una lieve balsamicità. Sentori tutti ben definiti che ne fanno un vino più che complesso e più che fine. In bocca e fresco ma anche secco e sapido così come caldo tanto da fornire un senso di avvolgenza totale. Un vino che non è morbido ma nemmeno spigoloso. Certo ha una tanninicità pronunciata ma non aggressiva. Ha una persistenza lunga ma non fastidiosa (occhio però agli abbinamenti perché richiede piatti con adeguata persistenza). Un vino strutturato e bilanciato direi che necessità di una apertura almeno un’ora prima di essere bevuto. Nel corso delle feste si può puntare su nomi altisonanti oppure procedere con intelligenza. Così non è sempre necessario propendere per uno Champagne ma si può anche optare per qualcosa di diverso. Ecco che ho scelto un Cremant de Bourgogne ovvero un metodo classico che non si può chiamare Champagne perché non proveniente dalla omonima regione. Quello proposto è della azienda @veuveambal che produce un blend di Chardonnay, Pinot nero, Gamay e Aligotè. Il risultato è un bel perlage di colore giallo paglierino con riflessi dorati, quasi rosa. Nel bicchiere gli odori che si sprigionano sono agrumi, crosta di pane, piccola pasticceria, fiori bianchi. In bocca è fresco, sapido, persistente e dal perlage fine. Il sentore di agrumi, al quale si uniscono frutti tropicali, continua in bocca lasciando un retrogusto leggermente e piacevolmente mandorlato. Possiamo sostenere che si tratta di un vino strutturato, con chiusura di bocca precisa, che definirei ottimo e molto duttile sugli accostamenti: da un semplice aperitivo a piatti di pesce specialmente crudi.
