Sort of like this but with a neon green color on the stem and a much brighter/more vibrant red center, almost flat on top
The one in the photo is russula, but I can't think of russula sp. with neon green stem (at least, such don't grow here).
The only mushroom with neon yellow/green stem and bright red cap that comes to mind, is hygrocybe conica (it looks like that sometimes, not always), but its shape is completely different from russula, so... 🤷

The woods were extra Autumnal™ yesterday, and I bring you a splendid and terrifying turkey vulture (I normally see them by the side of the road, you know… snacking on things, so seeing him perched on a tree in the forest was a bit more majestic). And Hygrocybe sp. scarlet waxcaps! I found so many.

about how many different types of mushrooms have you taken photos of?
Oh my, so many. If you mean species, then at least a hundred. If you mean types like categories, then I've taken photos of boletes (many different boletus, leccinum and suillus species), chanterelles, polypores, ascomycetes (sac fungi), puffbals and a neverending list of gilled mushrooms like dozens of russula sp., amanita, agaricus, lepiota, lactarius, armillaria, clitocybe, lepista, hygrocybe, tricholoma, hypholoma, mycena etc.
