You wouldn't know it but Rhett can FUCKING COOK! That man knows his way around a kitchen like no one's business
He makes the best jalapeno cheddar burgers, Royal tried one once during your family's Memorial Day barbecue and he instantly knew who was the rising grill master in the family
And those steaks? Forget it, Rhett is unmatched when it comes to steaks
Chicken? There's a little Jamaican place near your home and since the owner knew Rhett really well he shared his jerk spice recipe with him
Rhett even cuts and cures his own pepper slab bacon. You guys use it for grilled cheeses in the fall and for breakfast
He and Royal will often catch, cut and gut their own fish and when he throws it on the grill with a little bit of lemon, the herbs and spices, you guys are in absolute heaven
He knows that when autumn hits and you start baking, he can't stay out of the kitchen either
You will often make homemade cinnamon rolls and Rhett's always trying to sneak a bite
He'll help you make your famous cakey pumpkin cookies but always has to resist the urge to eat one when they come out of the oven
Fall is also when he makes Cecelia's pot roast. You two will come home after a long day, the air is all chilly, your faces beet red from the chill and the smell of the pot roast cooking all day in the crockpot filling the house
And when the holidays roll around, you and Rhett always have to decide what you guys are gonna do. When Christmas and New Year's rolled around, you and Rhett had a prime rib roast that could barely fit in the oven (lol), but oh did it turn out tasty
He's always sneaking little pieces of food to Amy, she's daddy's official little taste tester
And her Papa and Nana Cece, Royal doesn't have the heart to shoo her out of the kitchen since she's so damn cute
But one thing is definitely certain
It's that in your house, nobody ever goes hungry

It's all easy meals again (though not necessarily being prepared in the above order): 2 Sheet Pans, 2 Crock Pots, a Stove Toss, and an Oven Bake. A few components need to be made at the end as finishers, and they're a little more complex this time (the Mango Salsa, for instance), but it's all still pretty easy stuff altogether. And as a bonus, a lot of it's also either reusing stuff we're already buying for the week (Green Beans), or using up stuff I bought last week in a more interesting way (Kielbasa and Potatoes), or which I already had (Lavender Lemongrass Jelly).

7. what animal do you look forward to seeing when you visit an aquarium?
It has been a long time since I've been to an aquarium, but when I was I think 9 years old, I went to one in Ohio and they had otters. That's when I decided that otters were my favorite animal.
9. do you have a skincare routine (and how many steps is it)?
I use face wash and moisturizer both in the morning and before bed. I have a couple other serum/eye cream/etc type things, but I've gotten out of the habit of using them regularly. I used to have at least a 4-5 step skincare routine, but I tapered off when I first got Ruby. She was such a handful both at night and in the morning that I started rushing my routine. I never really got back in the habit.
18. your boba/tea order?
You're right that I don't love tea. I want to love tea! I love the idea of tea. I have an image of myself on a cool fall evening, all cozy under a blanket, reading a book and sipping tea with a fall scented candle burning. That's the dream! I'm always buying different types of tea bags believing that this will finally be the one that will make me like tea. And then I try it and...no. Because of this, I wouldn't ever order tea. As far as boba goes, I have tried it exactly once. I don't think there's anywhere to get boba where I live, but I went to law school in a bigger city and once my friend took me to a boba place because she loved it. I barely remember what I thought about it. I don't think I hated it, but it didn't make much of an impression on me. I have no idea what my order was. Of course, now when I think of boba, all I think of is TK and "delicious blobs of snot." If I had the opportunity, I would try it again. For TK.
26. how’s your spice tolerance?
I think it's pretty good, but I'm a white person who grew up very much eating stereotypical white person foods without much spice and I live in a fairly small town that doesn't have a huge variety of food options aside from pizza and burger restaurants, so I don't know that it's been properly tested. I do have the best spice tolerance of anyone in my family, though. My favorite place in the world, Mackinac Island, has a Jamaican restaurant that I love, and this past summer, I was the only one in the family who could handle the jerk chicken.
29. preferred pasta noodle?
If I'm in the mood for a long pasta noodle, I like linguini best. Otherwise, I think rotini is my favorite.

PLANT-BASED BURGER-BUILDING GUIDE

BUILDING YOUR BURGERS:
1. Pick your bean base (you will need 2 cups COOKED):
Black beans
White beans
Kidney beans
Chickpeas
Lentils (any color)
Split peas
(Really any kind of bean you find would probably work here – use your imagination!).
2. Pick your starch (you will need 1 cup):
Brown rice, cooked - this is our 'go-to' starch but you can also use:
Dry whole wheat bread crumbs or whole grain gluten free bread crumbs
Uncooked rolled or old fashioned oats
Quinoa, cooked
Millet, cooked
Amaranth, cooked
Buckwheat, cooked
3. Pick your vegetable (or a few vegetables) and saute them for a few minutes:
Finely dice them! If you pick two vegetables, you’ll want to decrease the amount you use by about half. For example, if you use carrots AND celery, use 1 rib of celery and 1 carrot stick.  For three vegetables, you’ll want to use about ⅓, etc., etc. 
Celery, about 2 ribs
Carrot, about 2 sticks
Onion, about 1 small onion
Mushrooms, about 1 cup
Jalapeño, 1 or 2 fresh depending on how spicy you like your food
Once diced, heat a skillet and cook vegetables for a few minutes to soften up. Add a splash of veggie broth or water to keep from sticking.
4. Choose your spices
Our general rule is to evenly coat whatever we are making with spices or herbs, or if using dried herbs/spices, start with ¼ teaspoon and go from there. Taste as you go to get a combination that works for you. This list is not even close to comprehensive, but remember – get creative! Italian burgers? Mexican burgers? Jamaican-jerk burgers? Whatever you can dream up!
Garlic
Basil
Oregano
Cayenne
Thyme
Cumin
Rosemary
Nutritional yeast (which will give your burgers are more cheese-like flavor)
Black pepper
Curry powder (works well with chickpea burgers)
Turmeric (a little goes a long way – a few dashes will do, and also works well with chickpea burgers)
5. Choose your liquid (1/4 to 1/2 cup to start, adding 1/4 cup as needed:
PLANTSTRONG vegetable broth - Our Mushroom broth makes GREAT burgers! Liquid from cooked beans Unsweetened plant milk
Or, combine 2 tablespoons of ground flaxseed meal with 3 tablespoons warm water. Set aside for a few minutes until it gets an egg white-like consistency. Use this as your liquid and add splash of broth as needed.
DIRECTIONS:
1. Preheat the grill, or your oven to 350 degrees. If baking, line a cookie sheet with parchment paper or another nonstick surface. 
2. Add cooked beans to a mixing bowl, then use a fork, potato masher or your fingers to mash them well. Add your starch – you’ll want to mix the starch and mashed beans very well. Your hands will probably work best. Add your vegetables. Mix in spices and liquid, and finally, the flax mixture.
3. Form patties and assemble onto a plate or the lined cookie sheet. Place in the fridge for 15 minutes, or until you are ready to bake or grill. Transfer to grill and cook 5 minutes before flipping. Then cook another 5 minutes until crispy.
To bake, place sheet in the oven for 15-20 minutes, or until they look slightly crispy on top. You will likely want to flip them at the halfway point.
4. Do a happy dance around your house while you are waiting for the plant-strong burgers to cook. This step is absolutely necessary. Take out your finished burgers and bask in your greatness for a moment.
5. Serve your burgers on a whole grain bun with all of your favorite burger accessories, including but not limited to grilled onions, grilled mushrooms, tomato, hummus, ketchup, mustard, BBQ sauce, hot sauce – whatever you’d like! You can also serve your burgers over a bed of leafy greens. Baked sweet potato fries are a great side choice as well.
6. Once grilled, you make freeze any leftovers and then reheat in a dry skillet or in a toaster oven.
Tips: Too crumbly? Add more liquid. Too watery? Add more starch.
Servings: 4 to 5 decent-sized burgers or 8 to 10 smaller burgers.
