Cheesy Black Bean Quesadilla
Chef’s Note: I made the mistake of no avocado. It just needs something added to it. Very simple, might argue too simple, but it has good ratios
Ingredients
15 ounces black beans, drained and rinsed
1/2 cup shredded Monterey jack or pepper jack cheese
1/4 cup + 1/4 cup salsa
4 medium (8-inch) whole wheat tortillas
2 tsp canola oil
1 avocado
Mexican crema or sour cream, for serving
Instructions
1. In a medium bowl, mix together black beans, cheese, and ¼ cup salsa.
2. Arrange tortillas on a work surface. Spread ~1/2 cup filling evenly on half of each tortilla.
3. Fold tortillas in half, gently pressing to flatten.
4. Heat 1 tsp oil in a large nonstick skillet over medium heat. Add 2 quesadillas and cook, turning once, until golden on both sides, about 4 minutes total. Transfer to a flat plate and cover with foil to keep warm.
5. Repeat with the remaining 1 teaspoon oil and quesadillas.
6. Serve the quesadillas with avocado, the remaining salsa, and Mexican crema/sour cream
